Executive Summary
This report is based on an American restaurant chain “Pizza hut”.
Since industrialization began, many companies have seen ups and downs. There has
been a history of many products entering the home of consumers through markets and
fading overtime with the invention of new technology or extinction for other reasons.
The food industry and the restaurant industry also saw this upheaval in the last
century. In recent decades, however, this business has seen a tremendous rise, with
many world - famous brand restaurants mushrooming the world's big and small cities.
The Pizza Hut is an international franchise, founded by Dan and Frank Carney in
1958. Pizza hut began 55 years ago in Wichita, Kansas, and is currently the world 's
largest pizza franchise and home to pan pizza.
And Pizza Hut is also the world's largest pizza restaurant chain and a subsidiary of
Yum! Brands, Inc., whose restaurants total approximately 34,000 restaurants.
Pizza hut parent companies are PepsiCo (1977-1997), Yum! Brands (1997-present)
Pizza hut international presence includes more than 80 countries.
And it has more than 13,728 locations worldwide (excluding locations in China and
India, operated by Yum!) in 2015 and more than 160,000 employees. Their main
products are Italian–American cuisine, pizza, pasta, Buffalo wings.

Introduction

Operations Management (OM) is the business function responsible for managing the
process of creating goods and services. It involves planning, organizing, coordinating
and controlling all the resources needed to produce the goods and services of a
company. Because operations management is a management function, it involves
managing people, equipment, technology, information, and all the other resources
needed in the production of goods and services. Operations management is the central
core function of every company. This is true regardless of the size of the company, the
industry it is in, whether it is manufacturing or service, or is for-profit or not-for-

As Pizza Hut is one of the most successful company in the world their methodologies
in operational management is considered here for the report. As they are prevailing in
the food industry they must mainly focus on the Quality. Quality is one of the main
factor in their operations.

Q1- Explain how your organization enhance quality in operations.

This is the key factor for a food chain such as Pizza Hut. All employees are at the
back of the house, i.e. the kitchen assistants are trained for this reason. They receive
additional lessons to meet the quality standards set by Pizza Hut worldwide. This
strategy is essential to satisfy CHAMPS (Cleanliness, Hospitality, Accuracy,
Maintenance, Product and Speed). This strategy is severely implemented in Pizza Hut
to meet quality standards. There is also a different quality management team at Pizza
Hut.
The shift managers are responsible for monitoring whether the quality standards are
met while there is a total quality management department at the headquarters in
Karachi. This department has a duty to implement quality standards and to know
whether they are achieved.
Methods Used by Pizza Hut to enhance the quality in the operations:
Cost and benefit Inventory Control
The main raw material used in Pizza Hut is pizza and cheese. Proper planning and
handling are required to achieve the right output quality. The total inventory (material
cost) of pizza is between 70-80 percent, i.e. the sales ratio is between 70-80 percent.
Therefore, inventory control is the most important part for the efficient running of the
organization.
Supply Chain Drivers of Pizza Hut
“Supply chain management is the factor that differentiates the winners and the losers
in this business,” drivers play an important role in terms of the responsiveness and
efficiency. We must examine the cross-functional and logistical drivers of supply
chain performance: transport, procurement, pizza and logistics.
Transportation
To deliver the base from the commissioners to different outlets, use the refrigerated
trucks in which the base is kept and the temperature is controlled according to the
distance between the commissioner and the outlets. There are 70 trucks to supply the
base across Pakistan. There is also a vacant space in which an additional base is kept
to meet the demand of a particular store. The company will not incur any additional

transport costs as long as the counters are along the highway or truck route. In this
way, they use their transport and maintain their efficiency.
Sourcing:
As we have seen above, Pepporine mozzarella cheese is imported from Australia and
Spain respectively, so it takes time and costs are increased also so that they have to
manage, but on the other hand to compensate for the increased costs they maintain the
local supply chain to reduce costs such as vegetables, wheat, tomatoes are imported
from Pakistan so that they provide the world class facility and taste.
Pizza and Logistics:
It is wrong to conclude that running a pizza chain is easy by looking at its front-end
operations. Compared to the complexities involved in managing a supply chain, the
pizza delivery promises within 30 minutes or the free offer is a child's play for pizza

Pizza Corner imports all its potato requirements from Canada. The other major
imports for Pizza Corner are cheese and olive oil. Pizza Corner imported potatoes
land at ports in Karachi or the Karachi airport. The consignment is then transported to
other parts of the country while cheese is imported from New Zealand and chicken or
bread is sourced locally.
Inputs from various locations are supplied to commissaries in reef / cooled trucks for
processing and production of basic material. The pizza dough and other items
prepared in commissioners are then returned to the retail outlets in reefs. "Based on
the distance between retail outlets and commissaries, the temperature inside the trucks
is fixed so that the dough reaches the required level when it reaches the outlets.
According to Peshawar Outlet Manager, retail outlets must exhaust the processed
dough within three days of delivery. However, for some reason, if they fail to do so,
the entire quantity is discarded. The existing commissioners and reefers will be put to
optimal use, as Domino's Karachi is now opening counters in the petrol stations of the
Pakistan State Oil Corporation. The company will not incur any additional transport
costs as long as the counters are the highway or the truck route.

As we have seen, pizza huts open their outlet in bulk in a particular city so that they
are sufficiently responsive and deliver within 30 minutes or offer it free, it also
increases their responsiveness. It is difficult to maintain such responsiveness because
there will be an extra margin and the profit margin will decrease, which is the main
reason why they open their outlet in bulk and if a particular customer orders a pizza
where there is no pizza store that store immediately calls the nearest pizza corner to
deliver that particular order And if a particular product is not available, they use it to
transfer and transfer the product from a different outlet.

To analyses the internal and external environment SWOT analysis can be used.
SWOT is a strategic analytical tool for assessing the strengths and weaknesses of a
business, analyzing business opportunities and threats. SWOT analysis can be used at
the organizational and personal level. As illustrated below, strengths and weaknesses
are internal, i.e. companies can influence and manipulate their strengths and
weaknesses. Opportunities and threats are external, on the other hand. It means that

customer satisfaction and a reduction in customers and market credibility, which can
lead to customers converting to major competitors, such as domino pizza.

Hut can eventually buy goods from abroad or buy cheaper brands.

meal called pizza: McPizza.
Pizza hut will therefore have to improve or maintain the quality of pizzas in order to

Q3-5-Conclusion

Here Identified the company Pizza Hut and as the initial step gave a brief introduction
on the company. Later done an analysis on the current product portfolio and identified
the products of the company.
To do an analysis of the internal and external environments here I have conducted a
SWOT analysis. The next phase of the report is based on the new product/Service
development process of Pizza Hut.
Quality Management is the key factor for a food chain such as Pizza Hut. For this
reason, all the employees are trained at the back of the house. They receive additional
lessons to meet the quality standards set by Pizza Hut worldwide.

Q1: Explain the concept of “Green Supply Chain Management”.

Green Supply Chain Management (GrSCM) aims at integrating environmental


thinking into supply chain management. This includes product design, material
sourcing and selection, manufacturing processes, delivery of the final product to
consumers and end - of - life product management. According to Vishal Gupta and his
colleagues from the Jaypee Business School in Noida, India, organizations in today's
business environment know that supply chain capabilities and capacity are key
components to successfully compete in the global market economy.
Concepts Associate with Green Supply Chain Management:
1. Green purchasing and procurement involving the selection and acquisition of
products and services to minimize any negative impact on product life cycles
associated with manufacturing, transportation, use and recycling. In many
countries, governments, industries and civil society organizations work
together to purchase environmentally friendly products.
2. Green manufacturing, which uses production processes that have relatively
low environmental impacts, is highly efficient and generates little waste or
pollution. Green manufacturing can lead to lower raw material costs, increased
production efficiency, reduced environmental and occupational safety costs
and an improved corporate image.
3. Green distribution relating to packaging and logistics.Packaging
characteristics (such as size, shape and materials used) have an impact on
distribution and transport. Better packaging — together with rearranged

 Facilities
Facilities are the actual physical locations in the supply chain network where the
product is stored, assembled and manufactured. The two main types of facilities are
production sites and storage sites. As we have seen the ingredients are produced from
different locations around the world, they have made four commissioners in Noida
Mumbai, Kolkata, Bangalore to maintain the same taste in India. Here it is very clear
that they provide the same basis, which is then customized and appears to be a
different product, so that there is a certain demand pattern and, on the other hand, they
also provide a variety, so that there is a clear line between the push and pull strategy.

 Inventory

It includes all raw materials, work in progress and finished goods in the supply chain.

transferred to the store, there is no problem in the event of a item demand.

There was no proper coordination between suppliers and outlet managers, as the flow
of information was sometimes misinterpreted and not correlated, because no customer
database was maintained, and the outlet manager could not recall the customer's
needs.

SAP ERP plays a crucial role in helping to manage internal operations and maintain
the extended supply chain.
The five SAP servers connected to SAN, and this is how increased capacity has
helped pizza hut increase its oracle database space. This is how pizza hut managed its
database and continues to invent ways to maintain an ever - increasing database.

As we know, supply chain management is a discipline that manages and controls the
flow of information across the various departments to meet customer requirements.
The supply chain starts from the extreme beginning of the manufacturing process by
acquiring the raw materials from the suppliers or, in other words, by choosing the
suppliers and ends at the extreme end of the production process for the customers.
Members or parties of the supply chain are informed below;

we can say that suppliers have a great impact on the price of the product and the
ability of the company to meet customer demand on time.

Manufacturers / Productors: These are the members who convert raw materials /
semi - finished goods into finished goods. The production process is important as the
company assesses the quality and attributes of the process in this phase; hence,
manufacturers also influence the quality of the product.

Distributors: These are people who are responsible to make the product reach to the
market. The distributors can also be called marketing intermediaries. There are
various aspects related to the marketing of a product and the choice of the right
distributors. The distributor's reach will always be directly proportional to the
availability of the product on the market.

Retailers: These are people at the end of the supply chain.


In other words, these are the people who sell the product to customers.
They are one of the important members of the supply chain, as they are in direct
contact with the customers. They represent the product to the customers on behalf of
the manufacturer.

Customers: they are the end users of the products. Customers were not considered
part of the supply chain, but contemporary methods and studies have added customers
to the supply chain.

Supply chain management plays an important role in the management of resources


and efficient customer service, regardless of industry. The fast food industry is
customer - driven, and the service level plays an important role in creating customer
expectations.
The fast food industry (specifically Pizza hut) will be extensively studied in the
context of the supply chain and the research results will be framed.
So in this Chapter Identified the different supply chain strategies of the pizza hut and
the different parties involve in the supply chain of the pizza hut.
