Highlights:

1. Fewer counts of Coliform and TPC were noticed on FTM & grind wheat (from B1 roller) versus
Raw Wheat results. Thus, the effect of increasing chlorine dosage is apparent based on given
data.
2. Micro results on KHWF SG Flour (04/08/21) are within EK’s micro limit (CC = 50 max & TPC =
10,000).
3. For SG Flour with and without DF (filtered flour from dust collector and extracted flour from
Bran Finisher), results show that DF adds more microbes on SG Flour, possibly due to its high ash
content.
4. Results of flour before and after the recycling process confirm that hot air from blown lines
reduces the microbial counts.
5. Swabbing of equipment specific to SG flour line (F1) and sampling spouts ensued to 0 or
negative results. Thus, microbial counts in flour do not originate from equipment.

For the following schedule of regular KHWF milling, suggest to:

1. Follow the 7 liters adding of chlorine (like KHWF milling for EK) for wheat tempering.
2. During milling, recommend removing to SG flour the streams with high ash content or those
filtered flour from dust collectors and extracted from bran finishers. Will also checked other
flour qualities in QA.
3. Have an empty bin for the storage of said milled KHWF-SG.
4. Recycle the flour (same bin process) for the additional heat treatment due to hot air from blow
lines.
5. Then, we’ll get five (5) bags x 25g samples in SG as pre-shipment preparation for EK and five (5) x
50grams samples of recycled flour to study further.
