1. Gueridon/Trolly + Moelleton+ TableCloth 1 pcs

E. PROCEDURE
1. Check all ingredient and equipments.

2. Heat the pan (small burn).

3. Put inside the pan 15 gram of granulated sugar. Make caramel until it golden

brown.

4. Add butter

5. Squeeze 2halves of orange fruit and 1 half lime fruit. Add orange juice if

necassary

6. Take out the fruit seed from by fork and spoon

7. Stir the sauce by fork with half of lime

8. Reduce the sauce until it thick.

9. Put inside the pan 15 pcs of longan fruit one by one using spoon and fork.

10. Simmer until the longan are well heated

11. Flamee with Myer’s rum

12. Turn off the stove

13. Arrange longan flambe into the kidney plate, cover with sauce and serve with

vanilla ice cream & pocky strawberry
