Vegan Pie

Filling:

● 4 Potatoes
● 2-3 Carrots
● 1 Onions
● 3 Garlic clove
● Pinch of fresh ginger
● 2 Tomatoes
● Handful Green
peas/beans
● Optional vegan
sausage or soy chunks
● 1 tsp + 1Tbs Salt
● 3 Tbs. Oil

Preparation:

1. Cut Potatoes with skin in cubes and cook adding 1 tsp. salt
2. Cut carrots, onions, green peas in cubes
3. Grade tomatoes and garlic and ginger and put in a pot to cook till they are
fully cooked
4. Add carrots and green peas/beans
5. In couple of minutes add onion salt and oil
6. Add potatoes (Optional: may first mash potatoes with beans, then add)
7. Optional: Soy Chunks (little water and salt 3 Tbs. oil, let them boil and stir
till no water is left)

Pie Crust (Also used to make Pizza Dough)

● 1 cup White flour/ oat flour


● 1 cup WW flour
● 1/3-1/4 cup Oil (the more oil the softer the pie)
● OR Healthy choice: 1 Tbs. oil, 3 Tbs. Coconut powder/flakes
● 3/4-1 tsp. Salt
● 1 cup ice cold water

Preparation:
1. Use rubbing method - rub and knead flour and oil and salt
2. Add water and mix
3. Knead the dough, roll out flat like for pizza, about 1/2cm thick
4. Use a lid of any sort to press out round shapes.
5. For big pies use about 13 cm diameter lids
6. Role each separate dough to about 15cm wide and 25cm long

Making a pie:
1. Mix water and WW flour to glue the pie sides
2. Imagine the center line horizontally, in the lover half put filling.
3. Close the pie
4. Can use small circles to do the pie sides and also press them in to make it
compact if necessary.
