HISTORY

– The earliest inhabitants are the Agta, or Atta, food gatherers who roam the
forest without fixed abodes
– In the 19th century the prosperity found in tobacco cultivation caused many
Ilokano to settle here. Tobacco is still a major factor in the economy of Cagayan,
though a special economic zone and freeport has been created to strengthen
and diversify the provincial economy.

– Region 2 is abundant in agricultural


products such as:
– Rice Livestock product
– Corn – Cattle
– Peanut – Hogs
– Beans – Carabaos
– Fruits – poultry
BATANES

– The three largest islands of batanes are:


– Itbayat
– Sabtang
– Butuan
– CAPITAL
– Basco
– Authentic Ivatan dishes are–from freshly caught mahi-mahi, flying fish, and
lobsters, to grass-fed cows, organic pork, root crops, and vegetables!
– Ivatan-style cooking can be described as bland, using only salt, soy sauce, and
vinegar as condiments. It’s not hard to see that local Ivatans like to maintain a
very healthy lifestyle.
TATUS

– These crabs are known for their sweet meat and aligue. The
best part is the aligue, which tastes like a mixture of crab fat
mixed in coconut milk, bursting with creamy and sweet
goodness that’s best paired with rice (P1000/kilo).
– These crabs, called tatus, are already on the endangered list
and are only allowed to be consumed locally.
KAMOTE AND GABI

– Kamoteng kahoy and gabi- a kind of nilupak


version. That is usually dipped in a creamy
coconut sauce.
Uved

– Usually in meatball form, this dish is made of


banana heart or banana stalks, mixed with
ground meat.
Kamote donuts and ube halaya

– Since root crop is staple in Batanes, they also


have a type of donut which s made of kamote
or sweet potato. Sometimes they combine
ube halaya and kamote donuts as a snack.
CAGAYAN

– The second largest province in the region

WOODCRAFT FURNITURE made of hardwood, rattan, bamboo, and other
indigenous materials are also available in the province.
Pancit batil patong

– Pancit Batil Patong or Pancit Tuguegarao is made


out of pansit miki Tuguegarao, minced carabao
meat (water buffalo), bean sprouts and other
vegetables topped with egg and chicharon. Batil
Patong if directly translated means “beat the
egg” for Batil and “placed on top” for Patong
and that explains the egg on top.


PAWA

– Pawa is basiclly steamed buns made of ground


sticky rice and filled with ground and sweetened
peanuts
ISABELA - ILAGAN
PANCIT CABAGAN

– Pancit Cabagan is a pansit version from the town of


Cabagan in Isabela, Philippines. It can be considered as
one of the most popular food in the province. This pansit
version makes use of miki noodles, Lechon Carajay, and
eggs similar to that of Pancit Batil Patung. However, the
eggs are boiled and not poached. Quail eggs are
commonly used to make this dish.
BINALAY

– a native suman delicacy of the province made of sticky rice


flour and wrapped in banana leaves. Binallay is cooked in
boiling water until done then serve with latik sauce.
