Banoffee cake
We've taken a popular banana cake and given it a banoffee pie make-over. Our
cake is packed with bananas, covered in creamy caramel buttercream and topped
with caramelised bananas for extra indulgence

Ingredients Method

1. unsalted butter 300g, softened,


plus extra for the tins  STEP 1
2. soft light brown sugar 300g Heat the oven to 180C/fan

160C/gas 4. Butter and line 2 x
20cm deep springform cake tins
4. plain flour 300g, sifted with baking paper.
 STEP 2
5. baking powder 2 tbsp
Beat the butter and sugar in a
6. bicarbonate of soda 1 tbsp large bowl until light and fluffy.
Crack in the eggs, one by one,
7. vanilla extract 2 tsp
and mix between each addition
8. bananas 4 ripe, mashed until combined. Mix in the flour
followed by the baking powder
and bicarbonate of soda. Stir in
CARAMEL BUTTERCREAM the vanilla extract and mashed
bananas until just combined.
 unsalted butter 150g, softened  STEP 3
 icing sugar 500g
 soft cheese 200g Divide the batter equally
 Carnation caramel 100g between the lined cake tins and
bake for 35 minutes or until a
skewer inserted into the middles
TOPPING
comes out clean. Cool in the
tins for at least 10 minutes, then
i. Carnation caramel 150g
transfer to a wire rack to cool
ii. unsalted butter 25g completely.
 STEP 4
iii. bananas 2 ripe, sliced at an angle
Put the cake on a serving plate
iv. sea salt flakes a generous pinch, or stand. Pile the chopped
(optional) bananas on top, then drizzle
with the remaining caramel and
sprinkle with a little sea salt, if
you like.
