INFORMATION SHEET 1.2 OPERATION OF AN ELECTRIC RICE COOKER

A rice cooker is a kitchen appliance dedicated to cooking rice. Rice is cooked by heating
in boiling water and steam, or a combination (boiling until water evaporates, and then continuing in
steam generated by continued heating). It absorbs a great deal of water in the process, expanding
its volume and using up the cooking water. For the modern home rice cookers, the smallest single-
person model cooks 1 rice cup (180 ml) whereas the largest cooks 10 rice cups (1.8 liter). The
typical lower price models use electric heaters to heat the inner cooking bowl controlled by
thermostat assembly or built-in electronic control, whereas the high-end models feature various
ideas of improved and better cooking methods. Electric rice cookers automate the process by
mechanically or electronically controlling heat and timing. Although the rice cooker does not
necessarily speed up the cooking process, with an electric rice cooker the cook's involvement in
cooking rice is reduced to simply measuring the rice, preparing the rice properly and using the
correct amount of water. Once the rice cooker is set to cook, the rice will be cooked with no further
attention.

Principle of operation (basic electric rice cooker models)

The bowl in the rice cooker is usually removable, to which rice and water are in place. A
heater and thermostat are beneath the bowl. A spring pushes the thermostat
against the bottom of the bowl for good thermal contact. During
cooking, the rice/water mixture is heated at full power. The
water reaches a temperature of 100 °C (212 °F); it cannot get
hotter than its boiling point.
By the end of cooking there will be no free water left;
most will have been absorbed by the rice, and some
boiled off. As heating continues, the temperature can now
rise above boiling point; this makes the thermostat trip.
Some cookers switch to low-power or "warming" mode,
keeping the rice at a safe temperature of
approximately 65 °C (150 °F); other models simply switch
off.
IV: Evaluation:: IDENTIFICATION: Directions: Identify the specific principle of operation of an
electric rice cooker based on the question below. Write your answer/s on space provided.

LO 1.2 Prepare unit, tools, equipment and workplace for maintenance/repair

CODE: TLE_IAES10MR-1a-j-1
I. Objectives:
1. Identify the basic parts of the Electric Rice Cooker.
2. Describe the uses and function of the parts of Electric Rice Cooker.
3. Draw the schematic diagram of simple Electric Rice Cooker.

II - Basic Parts of Electric Rice Cooker

It is best to acquire Service Manual and Diagrams specific for different models, design
might vary from one manufacturer and/or model to another.

In simple models, a mechanical thermostat is used

to turn off the cooker when the rice is ready. Since 1980s, higher-end electric rice cookers
have used electronic components such microprocessors to control the cooking process,
often incorporating a memory and electronic timer that can be used to set the desired "ready
time". Some models can be used as steamers to cook food.

Figure 2: Sample Schematic Diagram of Electric Rice Cooker

The different parts and function of an electric rice cooker:
1. Lid assembly – this composed of Lid and Lid handle used to cover the aluminum pan.
2. Aluminum pan – a container where rice and water are placed for the purpose of
cooking.
3. Thermostat assembly – Once the rice has absorbed all the water, the temperature will
begin to rise past 212 degrees (the boiling point of water). When the thermal sensor
senses this, the system turns off the heat and switches to the “keep warm” cycle.
4. Cast heater assembly - are normally custom made. Quite often it is a formed tubular
heater or coil casted into aluminum or bronze.
5. Body & handle – it is the external metal & plastic coating of the electric rice cooker.
6. Mica heater - thermistor. This type of heater is covered by some sort of paper (mica)
that function at the time of warming. This heater also serves as a thermistor, the greater
the resistance when the heat increases.
7. Wiring terminal assembly - The electric rice cooker heating plate wire connection
mechanism comprises a wire connection male terminal and a wire connection female
terminal used for being connected with a power supply line.
8. Power cord – connects the unit to the power (AC) source.
9. Switch assembly - This happens when all the water inside the pot has evaporated, now
heating the inside of the pot and the rice, further increasing temperatures above 100° C.
When this happens, the magnet releases the switch and turns the rice cooker into a
warming state or shuts off entirely.
10. Thermal Fuse - is a safety device that cuts off the appliance from source when there is
an excessive heat which is beyond the operation limit of the appliance. In short, it is a
protection to every appliance. It melts itself just to be sure the appliance will not be
damaged by the uncontrolled heat.

III - Practice Exercises IIA: IDENTIFICATION: Directions: Give at least three (3) examples
of the following assembly in the table below.

4. mechanism comprises a wire connection ____________________________and a wire
connection (5) ___________________________.

IV – Evaluation: MATCHING TYPE: Match the parts of the Electric Rice Cooker in
Column A, to the description in Column B. Write the letter of your answer to the space
provide before the number.

A B

_______1. Thermal fuse A. the switch and turns the rice cooker into a
