1.0 INTRODUCTION

These instructions are published for the use of personnel to whom the marine electrical range unit serie is issued. Each
unit will have his own copy in English language, if requested and at extra cost, handbooks can be supplied in different
languages.

2.0 GENERAL WARNINGS

2.1 Please read very carefully the content of this book because is giving very important indications for
the safety installation, use and maintenance of unit.
Keep this book in a safe and easy accessible place, for quick reference by all operators.
Any packing material (plastic bags, polystyrene foam, nails etc.) as a potential source of danger, should be kept away
from children's reach.

2.2 After removed the packing, check unit conditions, in case of doubt, do not operate the unit and
consult an expert.
This unit will be used only for the purpose has been specifically designed for any other use will be considered, as
improper, therefore potentially dangerous.
Installation to be done by qualified personnel in accordance to the manufacturer's instructions.
The unit must be used by trained staff only (this unit is suited to be used from one operator only).

2.3 Before connecting unit, make sure the data on the machine's plate (located on the casing)
correspond to the available electric power.
The electric power connection system located as per installation diagram.
When connecting unit to power line, provide an onnipolar switch with contact opening gaps, equals or superior of 3 mm.
Power cord insulation will respond to the regulations in force. Do not keep it in pulled position. Use of multiple plugs
and/or extensions, is prohibited.

2.4 Electric safety of this unit is conditioned to the connection of an effective earth system, as
indicated from security regulation in force (unit must be incorporated in a unipotential system whose effectiveness must
be verified according to regulations in force).
It is essential to meet this safety requirement, in case of doubt, ask an expert to perform an accurate test on the system.
The manufactured shall not be held responsible for any damages caused by failure to correctly earth the system.

2.5 Before starting unit, clean inside and outside as indicated in the instructions.
Avoid tampering safety devices (which must be periodically tested by qualified personnel).
In case of breakdown and/or malfunction, switch unit of; for any repair call a service centre authorised by the
manufacturer, asking the use of original spare parts only.
If above instructions will not be followed unit security can be at risk.

2.6 Before starting and cleaning or for maintenance operation, disconnect unit from main electric
power, and be sure no one, can on it by any chance.
To prevent oxidation and chemical aggression in general, keep stainless steel surfaces clean at all
times. At end of the day or work cycle, clean the machine as indicated in the instruction and switch of the unit.
Avoid the use of corrosive products, acids, steel wool or brushes when cleaning. Do not use direct or high pressure
water jets.
Should unit remain unused for a long period of time, apply Vaseline oil to the stainless steel surfaces and on the plates

3.0 INSTALLATION

3.1 The ventilation openings of the machine are make on the behind plate. In case of installation near bulkheads
please make attention, the machine need some centimeters from bulkhead or at side for ventilation.

3.2 The bolts of antirolling support bars fix also the top to the structure. When the support bars are remove, the top
will be fix with bolts M8x15

3.3 Installation must be done according to manufacturer instructions and by qualified personnel.
The unit must be used by trained staff only. Use of unit, suited for one operator only.

3.4 Remove packing with care to avoid any damaging to external unit panel.

3.5 Deck unit feet fixing, prearrange AISI 304 stainless steel deck fixing boxed bases of requested size,
welded to deck with a light projection against floor level. For the position see drawing pag. 5, 6 7,8,9,10,11 and
12.

3.6 ELECTRIC CONNECTION The electric wires from switch board or local switch board, will be
adequate and for the specific use.
Make sure of unit connection and that the available electric power correspond to the requested one see
identification plate fixed on the machine.

3.7 The packing material (plastic bags, polystyrene foam, nails etc.) as a potential source of danger,
should be kept away from children’s reach.
After removed the packing, check unit conditions, in case of doubt, do not operate the unit and consult an expert.
Present unit will be used only for the purpose it has been specifically designed for, any other use will be
considered as improper therefore, potentially dangerous.

3.8 When connecting unit to the power line provide an onnipolar switch with contact opening gaps,
equals or superior of 3 mm.
Power cord insulation will respond to the regulations in force. Do not keep it in a pulled position.
Use of multiple plugs and/or extensions is prohibited.
Electric safety of present unit is conditioned to the connection of an effective earth system as indicated from

3.9 Before starting unit, clean inside and outside as indicated in the instructions.
Avoid tempering safety devices (which must be periodically tested by qualified personnel).
In case of breakdown and/or malfunction, switch off the unit for any repair, call a service centre authorised by the
manufacturer asking them the use of original spare parts only.
If above instructions will not be followed unit security can be at risk.
To prevent any chemical aggression in general keep all stainless steel surfaces clean at all times. (At the end of
the day or work cycle, clean the machine as indicated in the instruction and switch off the unit).

3.91 Before starting cleaning or maintenance jobs, disconnect machine from main switch.
For the cleaning of machine do not use any abrasives or acid products. Do not wash machine with high pressure
water jet.
In case of long time machine inactivity, grease all Stainless Steal surfaces and not plates with vaseline oil.

ATTENTION: During cleaning operation do not use direct water jet on machine or below the base: this will cause bad
damages to the electric system.

4.0 FUNCTIONING RULES

4.1 Hot plate connection is obtained by operating the change over switches located in the switch board panel
(drawing pag. 5, 6,7,8,9,10,11 and 12).

4.2 Each connected plate is signalled by a (red) pilot-lamp, located in the switch board panel.

4.3 Oven connection is obtained by operating the respective dissection switches for oven ceiling/grill
and oven base, located in the switch-board panel.

4.4 Connection of oven ceiling heating element is obtained by Y /∆ switch: Y = heating only, ∆ = both heating and
grill.

4.5 Heating of upper or lower part of oven is indicated by (red) pilot lamps, located in the switch-board panel.

4.6 Thermic oven heating control obtained by operating the thermostat, located at the oven side (see installation
drawing) prior switch connection in the switch board panel (see drawing pag. 5).

4.7 Avoid plates and oven connection without using them.

4.8 Using the range for the first time let plates and ovens connected at the minimum temperature for few
ours, this allow remaining umidity, especially for the electric heating elements to dry up. It’s possible
that , on first connection, the earth insulation can be relatively inadequate, but is normal, after a
running period proportional to the range inactivity, the insulation level will be normally re-established
according to CEI 18-6 part 307 regulations.

4.9 Don’t keep plates on for long periods without being used.

5.0 ELECTRIC MARINE RANGE MAINTENANCE

5.1 Disconnect power and make sure no one can connect power during maintenance or repair time.

5.2 To avoid any problem make sure that all the different connections and heating elements will have well
fastened junction blocks. An accurate tightening of electric wires in the junction blocks is essential for a good
and durable machine functioning.

5.3 To replace damaged hot plate, please proceed as follows:

5.3.1 Unfasten screws and remove front panel.

5.3.2 Unfasten screws and remove hot plate.

5.3.3 Reconnect wire to mains as per wiring diagram pag. 19,20,21,22.


5.3.4 Replace hot plate

5.3.5 Fix plate to the top

5.3.6 Reassemble front panel

5.4 For the substitution of damaged oven heating elements, proceed as:

5.4.1 Open oven door

5.4.2 Remove oven

5.4.3 Disconnect wire from heating element terminals.

5.4.4 Remove damaged heating elements and replace new ones.

5.4.5 Connect wire to heating element as per wiring pag. 19,20,21,22.

5.4.6 Replace oven

5.5 Oven door springs must be periodically greased for a good and lasting working time, furthermore
they must be controlled to avoid wear and tear.
Access to springs from the two sides oven door panels.
Maximum care is required in case of oven door spring substitution, this operation should be
done from expert personnel only.

5.6 Tightening of electric junction blocks must be periodically checked. Good tightenings avoid damages to the
electric system.

10.0 USEFUL ADVICES FOR STAINLESS STEEL CARE

- Stainless steel is called such because its corrosion resistance is due to a thin coat of protective oxide formed on its
surface by the exposition to the air of the steel sheet.
- Stainless steel is easy to clean and maintain. However, stainless does not mean non staining. Rather, it means that it
will stain less.
- Stainless steel is not destruction-proof, stainless equipment has been designed to give years of service.
- By continually exposing it to a variety of materials they slowly eat it away, drastically reducing its life. Some materials
will do that in many ways. Some will corrode stainless, others will cause it to rust and discolour.
- To help you untangle these problems we give you some useful advises that if you will follow them you will get years of
good service from your stainless steel equipment.
- Our appliance are made of stainless steel of the following two types:
- Stainless steel AISI 304 (type 18/10) for external panels - tops, sinks - cooking and washing vessels.
- Stainless steel AISI 430 generally for all internal panels of equipment.

10.1 CLEANING AND MAINTENANCE OF STAINLESS STEEL EQUIPMENTS

- Before using any detergent to clean stainless steel surfaces and floors under and around equipment, always enquire
your detergents supplier or retailer about the best products to be used for a particular cleaning.
- Remember that if the steel rusts up it is not because of it but because it was not treated with proper care, and you
abused by using too strong bleaches and detergent.
- For cleaning and maintenance of stainless steel parts follow these rules:
- Clean carefully and frequently all stainless steel parts with wet rags; soap and water or common detergents without
abrasive slurry can be used. Rinse with pure water and dry carefully.
- Cleaning is important because with a clean surface the steel will make up a protective oxide that will prevent
corrosion.
- When cleaning the equipment never splash water on because you can damage internal parts or components, and this
can be very dangerous for your safety in case of electrically - heated or operated equipment.
- Food spots, hardened stains. To remove it use hot sudsy water for a few minutes, then rub with a cloth, soft brush or
stainless steel pad. After brushing, rinse with hot water and dry with a soft cloth.
- Hard water mineral deposits. To remove it, swab or cover the area with a water solution containing vinegar or
phosphoric acid. Follow this with cleansing powder, then wash and rinse.
- Scratches on surface. For a high polish, apply a middy abrasive cleaner and rub in the direction of the polish lines to
prevent scratches and preserve the original finish. Be careful not to rub in dirt that is on the metal surface.
- To clean stainless steel never use chlorine products, like sodium hypochlorite, muriatic acids or similar ones.
- These products attack soon and fast the stainless steel and produce a corrosion that can not be removed.
- To clean floors under and around equipment never use the product above listed because vapours or eventual drips on
the steel can cause corrosion problems as above explained.
- Never use iron wool to clean stainless steel appliance because small particles left on its surface can get it rusted; use
stainless steel wool and rub in the direction of the polish lines.
- Avoid surface contact with iron materials to prevent corrosion.
- Water pipes of outlet water system which feed pans, sinks, ranges, etc. produce rust, especially opening cocks after a
rest period, or for newly-installed plants. It is necessary to prevent these oxides or iron deposit from being in contact
with stainless steel parts. It is advisable that pipes be carefully galvanised and to let water flow until it is perfect clean.
- Prevent salt solution from evaporating or drying on the surface of steel. For pans do not use kitchen salt in gross grains
which, depositing on the bottom and being too heavy, could not circulate and dissolve completely; this salt not dissolved
or dissolved in a long period, may cause corrosion in contact points. It is advisable therefore to use kitchen salt in small
grains and put it into the pan after ebullition has begun, if it is not possible, dissolve the salt in other container.
- When pans are not used, they must be kept with lid opened to maintain and activate the film protecting steel from
atmospheric oxidation.
- Discoloration of stainless steel surface caused by burnt-on grease, food stains, or burns. To soften an especially
heavy layer of burnt-on grease, cover it with ammonia- soaked cloth for 10 to 15 minutes. Then wash, rinse and dry. To
polish burns apply a soft stainless steel wool or synthetic abrasive pad and rub in the direction of the polish lines to
prevent scratches.

- Rust stains caused by inappropriate care and bad maintenance.
Use correct products, enquire detergents manufactures ( Ex. Soilax - Diversey - Henkel - Level - Oakite - Benckiser,
etc.). Rely upon recommendations of your fabricator. A good agent that has given satisfactory result for eliminating rust
stains is the Oakite 31/A, after its use rinse plentifully with water.

WARNING:

After cleaning, well-dried stainless steel parts must be protected with anti-corrosion products, which can be easily found
in commerce.
These, beside removing halos, restore brightness to the stainless steel, prevent penetration of humidity and dirt that
cause.
