Assessment Information

 You must achieve a satisfactory outcome for each of the required criteria of this assessment to
be deemed satisfactory for this assessment. You must achieve a satisfactory result for the
assessments for this unit of competency to achieve a competent result for the unit. If one or more
of the assessment results are not satisfactory, you will be Not Yet Competent for this unit.

 You may follow the Assessment Appeals process in the Student Handbook
(www.academia21.com) if you are not satisfied with:
o the assessment result; or
o the way an assessment was carried out by your trainer; or
o the conditions or structure of the assessment
The student handbook has the steps for reassessment if you receive a Not Yet Competent mark and
do not want to appeal.

Reasonable adjustment for assessment

Where students have highlighted Language, Literacy and Numeracy issues reasonable adjustment to
the assessment can be made. Should you receive a ‘Not Yet Competent’ or ‘Resubmit’ result for the
assessment you will be given the opportunity to re-submit your assessment work with any
amendments requested by your trainer.
The adjustment may include actions such as:
• Student demonstrating knowledge through verbal discussion to identify correct answers
• Student demonstrating knowledge through applied skills
• Allowing additional time relating to disability
• Through consultation amending assessment timeframes
• Assistance in the form of the training location to allow easier access
• Accessing relevant equipment or aids to assist the student
• Adjustments to the assessment methods to cater for any special needs (without effecting the
integrity of the outcome)

If a student requests or is identified as requiring reasonable adjustment to the training and


assessment process a detailed training and assessment plan including timetables, notes regarding
the required adjustments, and any related communications regarding the adjustments must be
maintained in the students file.
The RTO Manager must review and authorise any request for ‘reasonable adjustment’ to ensure that
any adjustments and resulting outcomes are not affecting the integrity of the training and assessment
process.

Location of and completion timeframes for assessment

The location of the assessment will depend upon the nature of the assessment. Direct observation of
student’s skills will be assessed in the commercial kitchens / simulated restaurant at Academia, the
timeframes for these assessments will be related to the scheduled times of the practical classes.
Other assessments such as; role plays, in class activities, presentations and written tests will be
conducting in the classroom. The timeframes and due dates for these assessments, as well as any
reports, projects or research assignments, are documented in the stage outlines. Stage outlines are
handed out at the beginning of each term.

Assessment 1 – Assignment 1
To provide the student with the opportunity to demonstrate knowledge and problem-solving skills in
relation to the content of the unit. Student will be able to follow predetermined health, safety and
security procedures and to participate in organisational work health and safety management
practices.
Please read the following scenario that took place in Academia Kitchen 9.01 and
answer/ complete your assignment accordingly

Scenario:

Academia Kitchen 9.01, Thursday 16 September 2.15 pm.

Chef trainer was out to the toilet.

It was towards then end of the class, as many students do, they start relaxing a little, removing their
hats, aprons, chatting amongst themselves.

John (student) was in the process of cleaning the deep-fryer. He prepared all equipment to complete
the task. The deep fryer was just finished being used. Therefore, the fat was still quite hot.

John did not have any dry tea towels. He took 2 damp tea towels close to the sink next to the
dishwasher. He then lifted and removed the oil compartment. Suddenly he could not handle the heat.
The oil compartment was too hot for him to handle. John dropped and spilled the hot fat, which ended
on his chef jacket and trousers, resulting in severe burns on his left arm and both of his shins.

As the Chef trainer was still not back from the toilet, Sarah (student) immediately removed his
trousers and applied cloths soaked in cold water and rang an ambulance, which arrived 10 minutes
later and took John to Hospital. It is anticipated that he will need to stay there for the next 2 days.

Your Task

Use the information provided in the scenario then create and complete an incident/ accident
report for Academia. A sample incident report has been provided for your information.

Your task: Read the following case study and answer the questions for the provisions of health,
safety and security procedures below.

Paul recently had completed a pre-vocational course in hospitality, kitchen operations. As he is keen
to become a chef, his teacher had recommended that he should look for an establishment for the
purpose of a two-week work experience to gain true insights into what this profession means in
industry. He had successfully contacted the local hotel which took him on immediately. Now, having
completed his work experience last week, Paul is a little confused, as the knowledge he had gained
when studying “Follow health, safety and security procedures” at his RTO didn’t seem to be in that
workplace during the last fortnight.

When Paul started with the establishment there was no induction and it seemed that all staff in the
kitchen created their own standards. On the second day the head chef asked Paul to slice the leg
ham. Paul noticed that there was no safety guard for the slicer, which would make it a breach to use
this piece of equipment. When he pointed this out to the chef, he was told that these mechanisms
slow things down and are professionals didn’t really need them.

On the third day Paul was asked to clean the grill and the oven at the end of the night, however there
were no provisions for Personal Protective Equipment (PPE) in place. The head chef told Paul that all
staff normally would wrap a damp serviette around their nose and wear their sunglasses “that always
does the job”.

The following day a waitress slipped on the wet floor near the pass and fell over backwards. She
complained that there should have been a warning sign; however, the head chef replied to her that
she should come to work sober and use her eyes on the job.

During the last week Paul saw that the outside garbage area was engulfed in smoke. He ran into the
kitchen and reported this immediately as he had never dealt with such an emergency before. The
chefs on duty told him to grab a bucket of water and extinguish the hazard, as they were busy
preparing for lunch. Paul was unsure and asked the manager to get some assistance. Being upset he
asked the manager whether he could participate in the next WHS meeting to suggest some aspects
for safety and procedural issues. The manager told him that he only needed to do what he is told, as
the owners did not pay staff to engage in social meetings which only caused trouble anyway. He
stated that: “Procedures and rules are best left to those people in an organisation who have the
experience and the brains”.

1. What is the purpose of an induction program? Why would an induction program improve the
health, safety and security practices of Paul’s new workplace?

Purpose of an induction program


The purpose of induction program is to make aware the staff about the safety and regulations.
The way of doing job and how the job operate, things to be know before starting the job , the safety
procedures and the standards of the job
