Purpose 职责: Responsible for the management and achievement of
profit for all food and beverage operations in the hotel
including restaurants, bars, kitchen operations,
catering and banquet operations. Within the limits of
established Carlson Hotels Group Policies and
Procedures, overseeing and directing all aspects of the
Food and Beverage operation.

全面负责餐饮部各部门的日常运作和食品酒水的品质保
证,并达到利润和预算,在卡尔森集团的法规、政策、
制度下,监督管理餐饮部的所有运作情况。

AREAS OF RESPONSIBILITY
职责范围:
 Managing the day-to-day operation of the Food and Beverage sections
and informs the Director of Food & Beverage or designate, of any major
decision taken which did not require his/her action and any other relevant
information

 Controls and analyzes, on an on-going basis, the following:

 Actively Drives Business by utilizing Guest Data Base information,
personal relation and contacts in cooperation with F&B Sales Team

 Manages planning and organizing successful Food and Beverage


activities in the hotel and Outside catering.
计划和组织酒店内外的成功的餐饮活动
 Conducts daily briefings, Food and Beverage Meetings and other
meetings as needed to obtain optimal results

 Attends and participates to other meetings as required by the
administrative calendar

 Manages keeping an up-dated Hotel Policies and Procedures file and up-
dated files on all Food and Beverage matters

 Manages setting Food and Beverage goals and developing strategies,
procedures and policies
设置餐饮部的目标和发展策略、规章制度
 Manages determining the minimum and maximum stocks of all food,
beverage, material and equipment
决定所有食物、酒水、材料和设备的最大和最小库存量
 Manages settings standards of all food, Beverage and equipment
purchases in accordance with hotel’s guidelines
根据酒店的指导方针,设置所有食物、酒水和设备的购买标准
 Participates in the preparation of the hotel's revenue plan and marketing
programs

 Monitors local competitors and compare their operation with the hotel
Food and Beverage operation

 Maintains knowledge of trends, systems, practices and equipment in food
and beverage through trade literature, hotel show and site visits

 Performs related duties and special projects as assigned

Develops and implements strategies to achieve revenue and profit goals:

Maintains safe working conditions within department and hotel

 Demonstrate Awareness of OH&S policies and procedures and ensure all
procedures are conducted safely and within OH&S guidelines and ensure
your direct reports do the same

 Be aware of duty of care and adhere to occupational, health and safety
