PROMALT X

INTRODUCTION :

PROMALT X is Biocon’s mixed enzyme formulation developed especially for mashing


where under modified malt or barley adjunct is used.

PROMALT X is a blend of several enzymes containing Amylase, Beta Glucanase and


Protease activities which have been optimised carefully to give best results in a brew
where barley or undermodified malt is used.

BENEFITS.

PROMALT X provides following advantages when used during mashing.

1. Use of high degree of raw barley and other adjuncts (upto a level of 80%) is possible
in the girst, without affecting the yield of the wort.

2. Significant improvement in alpha amino nitrogen and peptide levels of the wort i.e
Protease present in PROMALT X increases the level of soluble protein thereby
improving nutritional value and fermentability of the wort.

3. A marked improvement in lauterability brought about by the breakdown of beta


glucans and other polysaccharides of malt and barley thus improving run-off and
eliminating bed choking.

4. Improvement in filterability of beer due to wort beta glucan breakdown.

5. Overall increase in extract recovery because of efficient breakdown of starch,


proteins, beta glucans etc. and releae of ‘trapped’ extract from cellular matrices.

6. Significant reduction in evaporation time in malt extract manufacture due to


breakdown of beta glucans.

7. Reduction in the frequency of evaporator column cleaning due to the minimization of


polysaccharide deposition on the evaporator calendria.

EFFECT OF pH :
PROMALT X is active in the pH range of 4.0 to 7.0 but the optimal activity lies between
pH 5.5 to 6.5

EFFECT OF TEMPERATURE :

PROMALT X has an overall optimal temperature range of 5.5 deg.C to 65 deg.C under
the mash tun conditions. The amylolytic fractions of PROMALT X is much more
theromstable and has an optimal of about 70 deg.C.

DOSE RATE :

PROMALT X should be used @ 0.2 to 0.5% based on the weight of adjunct. For the all
malt system, PROMALT X should be used @ 0.03 to 0.05% of the malt weight.

STORAGE :

Being a powder formulation, PROMALT X is very stable for more than six months and
retains more than 95% of its activity when stored for a year below 20 deg. C and under
dry conditions.

PACKING :

PROMALT X is available in standard packing of 25 kg polythene linded fibre board


drums.
