Bioglucanase L
Glucan Gobbler Enzyme

Product Information
Description

Bioglucanase L is a thermo stable fungal beta glucanase enzyme, derived from


a strain of Trichoderma reesei, that has both beta 1 - 3 and beta 1 - 4
endoglucanase activities. It digests high molecular weight beta glucans in cereals
like barley and can be used in the treatment of barley / malt either during malting
or during mashing in the Brew house. Bioglucanase L complies with the JECFA
and FCC recommended specifications for food grade enzymes

Purpose

The barley endosperm cell wall contains about 70% beta glucan that undergoes
several modifications during malting. Addition of Bioglucanase L during malting
offers solution to many problems associated with beta glucans.

Use of Bioglucanase L during mashing results in hydrolysis of beta glucans


resulting in elimination of several associated problems.

Benefits

Bioglucanase L when used during malting and brewing gives following


advantages:

1. Increased degree and rate of modification of beta glucans during malting.


2. Increased brewery extract by 2 to 5%
3. Reduced mash viscosity by 0.15 - 0.25 cp, thereby increasing the speed of
lautering.
4. Preventing survival of beta glucans in finished beer which otherwise give rise
to filtration and haze problems.

Application Information

Recomendations

Bioglucanase L may be applied in the following way during malting or mashing :

1. Spray on the malt along with Giberillic acid at the beginning of the
germination process.
2. Add as a fine spray the day before kilning.
3. Add as a fine spray as the malt is leaving the kiln.
4. Add as slurry in the mash tun.

Dosage

The recommended dose rate of Bioglucanase L is 0.03 - 0.06% (w/w on malt) in


brewhouse and 0.01 – 0.03% (w/w on barley) in malthouse. However, it is
recommended to optimize the enzyme dosage based on plant conditions.

Effect of pH

The pH of Bioglucanase L is approximately 3.5 – 6.5, with an optimum


performance at pH 5.5.

Effect of Temperature

The effective temperature range of Bioglucanase L is 40 deg. C to 75 deg. C


with an optimum performance at 65 deg. C.

Stability

Bioglucanase L should be store in a cool dry place ( < 25 deg C) and sheltered
against direct sunlight. The declared enzyme activity will be maintained for one
year under these conditions.

Packaging

Bioglucanase L is available in standard 25 kg HDPE drums or may be custom


packed on request.

3. HAZARDS IDENTIFICATION
Repeated inhalation of enzyme aerosol may cause sensitisation and will
cause allergic type responses in sensitised individuals.Prolonged skin contact
mau cause skin irritation.

4. FIRST AID MEASURES


Inhalation – remove from exposure. If irritation persists or allergic response
develops consult a doctor.
Skin contact – wash skin with plenty of water.
Contact with eyes – irrigate eyes with cold water for 20-min atleast. Obtain
medical advice if irritation occurs.
Ingestion – rinse mouth thoroughly with water and drink plenty of water
afterwards. Consult a doctor.

Drums should be kept closed and in a dry and cool place. Use local exhaust
ventilation and/or personal protective equipment as necessary to minimise
exposure.

7. EXPOSURE CONTROLS / PERSONAL PROTECTION


Handle in well ventilated conditions in accordance with good industrial
hygiene and safety practices.
 Wear suitable overalls.
 Wear suitable gloves and eye protection.
 No eating, drinking or smoking in the work place.
 Practice good personal hygiene.
 Avoid inhalation of dust.

Wear suitable respiratory protective equipment if working in confined places


with inadequate ventilation or whenever there is any risk of the exposure
limits being exceeded.
