Fungal Beta Glucanase for Beer

Description
BIOGLUCANASE is a thermostable fungal beta glucanase enzyme that has both
beta 1 - 3 and beta 1 - 4 endoglucanase activities.
BIOGLUCANASE digests high molecular weight beta glucans in cereals like barley
and can be used in the treatment of barley / malt either during malting or during
mashing in the Brew house.
Purpose
The barley endosperm cell walls contain about 70% beta glucan that undergoes
several modifications during malting. Addition of BIOGLUCANASE during
malting offers solution to many problems associated with beta glucans.
Benefits
3. Reduced mash viscosity by 0.15 - 0.25 cps, thereby increasing the speed of
lautering.
4. Preventing survival of beta glucans in finished beer which otherwise give rise to
filtration and haze problems.
Application Information
1. Spray on the malt along with Giberillic acid at the beginning of the germination
process.
Effect of pH:
Effect of Temperature:
BIOGLUCANASE can be used upto 80 deg.C but above this temperature the
enzyme is rapidly inactivated. The optimum temperature for this enzyme is 60 to 70
deg. C.
Stability:
BIOGLUCANASE powder should be store in a cool dry place (< 25 deg C). The
declared enzyme activity will be maintained for one year under these conditions.

3. HAZARDS IDENTIFICATION
Exposure to any kind of dust is potentially harmful. Avoid inhalation and contact
with eyes and skin.

9. TOXICOLOGICAL INFORMATION
Repeated inhalation of dust may cause sensitisation and will cause allergic type
reactions in sensitised individuals. Prolonged skin contact may cause irritation.
