BIOTEMPASE L

INTRODUCTION :

BIOTEMPASE L is an extracellular heat-stable alpha amylase derived from a selected


strain of Bacillus licheniformis. BIOTEMPASE L is an endo-amylase that hydrolysis
randomly the alpha-1, 4-glucosidic bonds in amylose and amylopectin. It is a liquid
enzyme preparation for the enzymatic liquefaction of starch to dextrins.

SPECIFICATIONS :

BIOTEMPASE L is standardized to a minimum alpha-amylase activity of 100,000 BAA


units/gm.

BIOTEMPASE L is a brown coloured liquid with a specific gravity of 1.18 and is


completely miscible with water.

BIOTEMPASE L complies with FAO/WHO, GRAS, and FCC recommended


specifications for Food Grade enzymes.

APPLICATIONS :

1. STARCH/GLUCOSE/DEXTROSE SYRUP :

BIOTEMPASE L finds wide application in this industry for the liquefaction and
dextrinization of gelatinized starch prior to hydrolysis by saccharification by BIOCON’S
enzyme like AMYLO 300 L. The benefit derived from BIOTEMPASE L is that
liquefaction can be carried out in the temperature range of 85 deg.C to 110 deg.C

2. DISTILLING

BIOTEMPASE L can be used to produce dextrins from a number of raw materials like
starch, milled whole grain or grits.

3. BREWING :

BIOTEMPASE L can be used in applications where an adjunct is used along with the
malt. It helps in reducing the viscosity as well as aids in the dextrinization of the mash
when adjuncts like raw barely, maize, rice etc. are used.
RECOMMENDED

BIOTEMPASE L can be used in the starch DOSE RATE industry in a single dose for the
liquefaction of 30% - 40% DS starch at a pH of 5.5 – 6.5 at a dose rate of 0.3 to 0.5
ltr/ton DS. Cooking can be done either at the temperature of 100 – 110 deg.C for 1-5
minutes or at 85 – 95 deg C for 50 to 120 minutes. A DE of
8 – 12 achievable by the above methods.

In Grain Spirit product BIOTEMPASE L can be added in the cooker at a dose rate of 0.2
to 0.5 ltr/ton of grist, at a temperature of 80 – 95 deg.C for a cooking cycle of 1 hour.
Later the liquefied starch can be either pressure cooked or cooled to saccharification,
depending on whether a High Temperature or a Low Temperature Enzyme process is
being followed. BIOCON has information and the requisite enzymes available for both
these processes.

In Brewing, BIOTEMPASE L can be dosed at a rate of 0.2 – 0.5 ltr/ton of unmalted


cereal adjunct, in the cereal cooker when such adjuncts are used along with malt.

EFFECT OF TEMPERATURE:

BIOTEMPASE L is a heat-stable alpha-amylase which has a good heat stability above


100 deg.C. It works well within a temperature range of 85 – 110 deg.C.

EFFECT OF pH :

BIOTEMPASE L has optimal activity in the pH range of 5.5 – 6.5.

PACKING :

BIOTEMPASE L is available in standard 35 Kg. HDPE Drums.

STORAGE :

BIOTEMPASE L should be stored in a cool, dry place. It retains its declared activity for
atleast a period of 18 months when stored at 4 deg.C and for atleast 6 months at 25 deg.C
