ABSTRACT SUMMARY
The next job is the development of a maintenance manual that allows refrigeration
technicians to prepare a good job for their customers who request them The manual
seeks to give the theoretical and practical tools to technologists, technicians and
operators of refrigeration systems and air conditioners through training, awareness of
the regulations and requirements of the customer at the time of installation of these
equipment , which would reflect a considerable reduction in operating and repair costs
in the event of breakdowns. More accurately, this project has within its specific
objectives:
• Develop an industrial refrigeration manual that covers the most 10 relevant aspects of
industrial refrigeration from its concepts, cooling systems, equipment and automation
elements, to cover the theoretical and normative aspects, intended for the training of
personnel handling and providing maintenance and repair service to the industrial
cooling systems that make up the cold chain , whose purpose is to promote the
improvement of competitiveness in technical personnel, assist them in their certification
of work skills and start a quality program in the maintenance service, which would
contribute to the development of the guild in the coun

INTRODUCTION
The work talks about the Analysis of Prevention and Solution for Leak Control or other
common damage where we will describe what it may be like if leaks are detected on
time, if they cannot cause a much more serious problem resulting: food losses, total
destruction of equipment, excessive costs of recovering equipment.
At the time that, during freezing, termination and maintenance operations, where the
pressure between the formation exceeds the hydrostatic pressure of the control gas can
give rise to an outbreak, these can be classified into intentional and not intentional
shoots.
To carry out the operations, production data are required, they can give and record that
they must run if they also run in the freezer in order to determine the possible causes
that give rise to the problem to establish a prior intervention programme.
Gas leaks generated by some problem of 0 constant maintenance is a delicate issue to
deal with representing an immediate problem.

CHAPTER I. GENERAL COMPANY DATA.
This project aims to design and implement a preventive maintenance plan for the
refrigeration area of the company, supporting us with an information system that
achieves maintenance management, is carried out and organized, thus managing to
increase the reliability and availability of the equipment allowing the quality of training of
the apprentices to be the best.
The development of the project began by conducting an audit for the effectiveness of
maintenance in the specific area, obtaining the identification of the aspects that present
falseness and thus being able to route the improvements and also an inventory and
coding that intervene with the technical training of the apprentices of the respective area
of study, in addition to performing a criticality analysis of all the machinery belonging to
that area to identify the critical equipment in the process.
Finally, a master plan was made in the development of a manual with the preventive
maintenance activities necessary for this methodology, all the above is the fundamental
basis in the implementation of the system for the administration of maintenance
This company, whose business is located in a busy area, so its location is a key point
for companies, this is located in Col. Lic. Benito Juárez, 25th street between 13th and
15th street, the company is from the food sector which its operation is the refrigeration
of food such as red meat , sausages, dairy, fruits and vegetables of a large scale so it is
a very profitable business for larger companies such as supermarket chains and
restaurants that to reduce the loss of their products so they resort to renting these
services the companies that rent these services are very recognized nationally but not
only that also has another branch in Col. Porfirio Diaz in Gustavo A. Madrazo street
between 34 and 36 it rents small and medium-sized enterprises (SMEs), clear
companies such as pastry shops, butchers among others who request them and can
pay the costs. This company has been growing thanks to customers approving the
efficiency it gives, so they recommend it to other companies; the company at the
moment has two sites one for larger companies such as the large restaurant and
supermarket chains of the Mexican republic and the other for small and medium-sized
enterprises (SMEs) the first largest has 12 industrial chambers and the second with 5
industrial chambers all well organized for the separation of food to preserve the original
smell and taste of themselves and have no problems with customers and to be able to
get a good impression of the company that's why our slogan "well-kept foods, satisfied

2.1.1. In order to fully define its design and construction, the materials must be taken into
account:

• The panels must be made of synthetic polymers, which have a low coefficient for heat
transfer, this is achieved by their low thermal conductivity of each of their materials,
since it is possible to minimize the loss of conduction and convection between each side
of the chamber, in addition, the thickness will depend on the heat transfer , so the larger
the panel in its width, the greater the heat difference between outside and inside.
• To determine the height and type of ceiling or floor to be used to install cooling
chambers, account should be taken of the type of operation that will give, since, for
small chambers that do not have a high temperature absorption, it is possible to use the
panels used on the walls of the same, which can be given special finishes. For larger
cameras, the panels must be hung to the structure that will contain the camera, this is
achieved by means of anchors or elements that are special, such as metal chains or
pyoles. In addition, floor panels can be used for flooring, which can withstand light
traffic, but do not support the weight of a forklift.
• To solve the problem that can arise with the type of soil in a cooling chamber, it has to
take into account the size and temperature of the design, the latter being the most
important of the aspects, since, if the camera is going to work at temperatures that will
be below 0oC, the soil must be treated so that it is moisture free , this in order to avoid
freezing. In addition, there will be no problems with the structure of the place.
These are also called negative temperature cold rooms, and have an average
temperature range between 0o and -28o. They are designed with coatings that promote
atmospheric humidity and temperature conservation to freeze the products that are
placed there.
These types of cold rooms are very convenient for food storage and organic material
preservation among others.

These systems seek to rapidly reduce the temperature of preparations and elements to
reduce the risk of contamination and to be able to conserve them for some time without
losing their qualities. Of the different types of cold rooms, this is one of the most used in
hospitality businesses. This is because it can cool a newly cooked food quickly, which
will go from 90 to 3 degrees in less than 90 degrees.
Freezing tunnels are equipment that works with automatic displacement systems and
intense cold currents that help individually freeze each product as it moves inside the
chamber. They can provide temperatures that are below -30o, to promote the structural
preservation of the product.

How many times have we come across technical terms, which we cannot
easily identify?
The language used by technicians and maintenance personnel, can seem, sometimes,
a little complicated, we hear terms, such as, low pressure, decarche, liquid line, drip
time, among many others, that we cannot identify. The differences between the
Technical language, and the language used by the Technicians, leads us to find the
need to carry out research and adequacy of the terminology, for the use of it in a
manual of maintenance procedures; all this, focused on one of the main objectives of
the final work, which is the acceptance of this, by the technicians of the environment,
who are, in the end, directly benefited from this project. When we refer to basic
concepts, we mean not only the principles of operation of the different components of a
cooling system, we also mean the application of these concepts, their correct
interpretation, their usefulness, their benefits, and their raison d'etion within the cooling
system.
We could list a number of concepts in the development of a manual, for practical
purposes we mean those who lend themselves most to confusion and to whom in our
view they are the most influential in a system, given their meaning and interpretation.
These two characteristics can be defined, perhaps as the two essential properties in
cooling systems, since they all depend on or extend from them; there is also a very
direct relationship between these two, as any increase in temperature leads to an
increase in pressure and vice versa.
Temperature is understood as the scale used to measure heat intensity and pressure,
such as the force exerted on a substance (for this case) that determines in this case the
movement of the substance and its behavior. When pressure is measured from
absolute zero, it is called absolute pressure and when measured from atmospheric
pressure, it is called manometric pressure; pressure has the same heat properties as it
tends to balance between the sides of the system, unless this phenomenon is avoided
by some mechanical means.
2.3.3. Heat.
It is necessary to change the state of the matter in which the energy is transferred,
taking into account that it only applies to change the phase of matter, but not its
temperature.
It is the condition of temperature and pressure, in which liquid and steam exist
simultaneously.
2.3.5. Refrigeration

Low temperature preservation process where the phase of the elements from which
thermal energy is extracted according to the required process or function is kept
constant. It should be noted that in thermodynamics cold is not considered as a state of
energy but the absence of it.
It is very useful for storing products and its temperatures are close but above zero; its
limits range from 0.5oC to 6oC.
2.3.6. Freezing.
2.3.7. Humidity
It is defined as the amount of water that is present in the air, the higher the air
temperature, the greater the amount of water vapour that the air can contain, the so-
called saturated air is the one that contains the maximum amount of steam that
corresponds to it by its temperature. Absolute humidity is the amount of steam present
in unsaturated air and relative humidity, is the relationship between the amount of steam
contained and the maximum that it can contain.
By definition, a coolant is any fluid that circulates cyclically and acts as a cooling agent,
absorbing heat from a hotter focus.
Refrigerant substances are classified into primary and secondary refrigerants. Its
difference is that primary refrigerants are the ones that directly cool the control system,
while secondary refrigerants are the ones that act because the primary refrigerant
performs its function.
Primary Refrigerants: Chemicals characterized by being vaporized at low temperatures,
thanks to their low boiling point and easily condensed at room temperature. Within this
group we can find the following refrigerants:
Used in refrigerators, cold furniture, small ice cream chambers and generally
temperature-consing appliances.

Export only for developing countries. It's almost odorless, non-toxic or irritating.

Azeotropic mixture of R – 22 and R – 115, as this has different characteristics than its
components.
Its latent evaporation heat is not as high as that of R – 12 and R – 22
It is very satisfying for use in double-step systems and in applications for extra low
temperatures.

It is used in new refrigeration equipment at low and medium 19 temperatures.

Secondary refrigerants: These are those generally used in indirect cooling systems,
whose main feature is to have a low freezing point. Important properties include:
- Have a freezing point, slightly lower than the lowest temperature at which it will be
used to freeze products
- Low boiling point
- Non-toxic
- Low cost, among others.

The most common cooling system in our environment is compression.
In this type of machine the central part of the system is the compressor, this, receives
gas at low pressure and compresses it, considerably raising the pressure and
temperature of it, and then taking it to the condenser where the gas gives its heat to the
water or cold air that surrounds it; in this way its temperature drops to the point of
condensation, and becomes liquid, passes from the condenser to a receptacle and from
there flows through a duct or valve, or the reducing tube, decreases the pressure of the
liquid as it flows into the vaporizer to cool it. This vaporizer is in the space you want to
cool. The warm air in this enclosure transmits part of its heat to the vaporizer by contact,
and causes the liquid to evaporate. As you can see this new state change, from liquid to
steam, is made by increasing the temperature. It then sucks the compressor, through
the suction tube, the hot steam from the evaporator, and, after recompressing it, propels
it to the condenser, as explained above. This repeats the process in continuous cycles.
It is essential that the coolant fluid reaches the compressor at the exact temperature so
as not to damage the parts of the compressor, since a very high temperature leads to
higher pressure making the compressor work at a much higher pressure than was
actually designed, creating wear of its parts by excess effort. Also, because having a
higher temperature, the condensation of the refrigerant would be affected when passing
through the throttling valve, creating a cooling cycle that would have a much higher
operating temperature completely affecting the conditions of the system to be cooled.

2.5.2. Lubrication

surface, the temperature difference (between the outside and the evaporation

heat from the outside we will obtain overheated gas or overheating. Ideally, the
overheating should start at the compressor suction wrench, thus lowering the gas
discharge temperature and increasing the cooling capacity, but it is complicated as we
run the risk of liquid reaching the compressor. we're going to get it. The air when
touching the evaporator tube cools, as we pass through the second tube we cool it more
and so on to get the temperature in chamber.
The pressure in the evaporator is not kept constant due to load losses. To avoid these
losses is divided into sections, each part of the evaporator must be of equal length. The
relative humidity of the room depends directly on the product being stored, both so as
not to dehydrate it (Burn it) and not to saturate it. Humidity negatively affects evaporator
performance by cooling air from 2oC (70% relative humidity) to -30oC humidity
becomes 100% and we go from 10 g of water per m3 of air to 3 gr/m3. The remaining 7
gr/m3 remains in the frost-shaped evaporator. It is then in the evaporator, where all the
refrigerated effect occurs, is where heat transfer occurs with air, where we can control
the humidity, speed and air characteristics ideal for the preservation of products in
excellent condition.

them into two types, air and water condensers, this division is given by the type of
process they carry out for the transfer of heat between the refrigerant and the
environment for condensation of it at high temperature.
Commonly used in our environment, tube with fins, which dissipate heat to the
environment, usually by the force exerted by the forced air that passes through the
spaces between fins. Easy to install, cheap, and no danger of freezing, can be used in
any type of weather, after being sure to have a good airflow.

One of the advantages of this type of systems, is to have better control of the discharge
pressure and handle a lower condensation pressure, very compact equipment, thanks
to the excellent heat transfer characteristics that the water possesses.
The mission of the expansion elements is to control the coolant passage and separate
the discharge part with the low part, the different types of expansion elements are:
Capillary.
Thermostatic expansion valve.
Automatic expansion valve.
Manual valve.
Float valve in high pressure.
Float valve in low pressure.
Electronic valve.
Capillary tubes are commonly used as expansion elements in small installations for the
following reasons:
Ease of installation.
Low cost.
Reliability, no moving parts.
They allow the use of low starting torque compressors by good pressure balance.
When the liquid coolant enters the capillary tube a strangulation occurs, (increases the
speed and decreases the pressure) because this part of the liquid evaporates when
changing pressure.
To prevent all liquid from evaporating before entering the evaporator, it is usually
welded together with the suction line to prevent it from stealing heat from the outside.
When stopping the compressor all the refrigerant passes to the evaporator because
there is nothing to prevent it thanks to the difference in pressures, for this reason you
cannot use containers in capillary tube installations and you have to be careful when

sizing the filter as it could act as a container. As the pressures are equal, the engine
starts without much effort. The tube is calibrated, the cooling power is depending on the
diameter and length of the tube.
2.5.7. VALVULAS.
Thermostatic expansion valves are formed by: Bulb: It is an element loaded with the
same refrigerant that needs to be controlled.
The pressure exerted by this refrigerant depends on the temperature at the end of the
evaporator and acts on the calibrated hole of the valve.
Overheating screw, is factory adjusted with 4oC (relative to the low pressure), the
pressure we exert with the screw counteracts the bulb pressure.
At the same time, thermostatic expansion valves can be divided into:
- Internal Regulation
- External Regulation
Once the coolant enters the evaporator it steals heat from the medium to cool and
evaporates. Until the moment no liquid reaches the bulb and cools it the expansion
valve will not close. When we manage to cool the bulb and the overheating is 4oC we
start to close the valve. Once the valve is closed, the overheating increases and
therefore the bulb pressure reopens the valve. This type of valves are not
recommended for evaporators with large pressure losses. When load losses in the
evaporator are considerable, external compensation expansion valves are used. These
unlike the previous ones take the low pressure at the end of the evaporator just behind
the bulb, so even if there are load losses the low pressure is more accurate.

It is the function of this element, that the liquid coolant that comes from the condenser at
high pressure, is kept in this state and that when passing through it, its pressure
decreases, while regulating its passage to compensate for the amount of it that
evaporates in the evaporator.
As with the preventive, this maintenance is about pre-emptioning the breakdown. The
difference is that it is based on the application of techniques or tools to detect the
different measurement elements in anticipation of failures, such as wear. Its purpose is
to carry out the maintenance at the necessary time.

To be able to do this it is necessary to have technology based on indicators that are
able to measure the variables that mark intervention to the machine, in addition to
personnel specialized in interpreting the data obtained.
It lies in repairing the fault when it has occurred. Generally, when this maintenance type
is carried out the manufacturing process is stopped, therefore production is reduced and
costs increase. It is very erratic to know the repair time, in addition to the expense that
comes from the breakdown because it occurs unexpectedly causing disorders in the
line. Its application environment therefore corresponds to low-critical assets, whose
breakdowns do not actually pose a major economic or temporary problem. It is a
maintenance that has greater profitability in point equipment, in which other types of
maintenance would be more expensive.
Focusing on the design of a preventive maintenance plan for the development of the
manual, the following approach is taken close to the work that must be carried out for its
implementation in the industry. When you want to implement a maintenance plan based
on the above concepts, a certain group of tasks must be performed, before performing
any maintenance procedure or activity, then a list of some of them and their
corresponding explanation to implement them is presented.
It refers to the study of basic concepts close to the operation and behavior of the plant
as such, it then refers to:
- Manufacturing processes
- General characteristics of the machines involved in the process
- Average working times, both of the entire process and of each of the stages

Considering that basically this is the order in which maintenance procedures should be
performed, here are the tasks implicit in each of them.
It refers to all those activities that it aims to find possible failures, their causes and

place where it should be applied and the materials and inputs necessary to carry out

3.2.4. Cleaning.

Even if it seems the simplest and most insent activity of the entire maintenance process
as such, this is perhaps one of the most important and one of the most forgotten or in
some cases the shield of many technicians, this is where it is facilitated and ensured
that the application of maintenance procedures is truly effective. It refers to the cleaning
of coils, components and each of the elements installed in the system, in order to keep
them in optimal condition for their operation.
When finishing all the activities necessary for the proper functioning of the machines, it
is recommended to carry out an inspection for the calibration of each of the components
installed in the system, in order to ensure that the equipment is left working in the best
possible conditions with all its elements ready.

After understanding and analyzing each of the above points, it can be determined how
good and beneficial and effective it can be to carry out for an upcoming visit the
procedures and tasks performed, creating a knowledge cycle of how to put the theory
into the practice of maintenance.
Computer-aided maintenance is one that uses traditional theory and mixes it with the
versatility and speed of a computer.
Currently there are various types of support for the maintenance area, among them, we
can note the appearance of computational aids, or CAD for maintenance. The purpose
of these is to provide the company with a strategic plan, which allows to analyze all the
areas that need this type of activities, all this, through times, graphs and tables that
explain to all parts of the company, workers and administrators, speak the same
language, with which the productivity and quality of a company improves markedly and

does not make the response of its customers wait , who are at the end of the story the
most benefited from is the kind of advances, activities that allow an agile and
competitive service, atmosphere characteristic of our environment in recent times.
In the region there are currently a number of software distribution companies
specialized in maintenance, which are intended to facilitate work and optimize
maintenance plans, it is too bad that current awareness does not allow the application in
100% of these activities, decisions made for knowledge and fear of technological
innovation in companies.

In the development of this chapter we find those concepts of handling and structuring
the manual, with which it is highlighted as using it in a correct and efficient way, both as
support for the development of work skills in the area of maintenance of industrial
refrigeration systems, as well as a quick reference guide for common failures in this
type of equipment.
4.1 PEDAGOGICAL ASPECTS OF THE MANUAL
LABOR COMPETENCE". In addition, for its dissemination and control, the
TITULATIONS FOR THE CORRECT MAINTENANCE OF REFRIGERATION AND AIR
CONDITIONING SYSTEMS were organized and presented, these in turn aim to
establish the operational activities, both for the maintenance and installation of
refrigeration systems, through the standardization of standards, criteria and control
elements focused on the implementation, improvement and environmental management
of substances that these procedures entail.

Since that time, taking some experiences in training institutions, the initiative of public
bodies in promoting the development of policies, guidelines and strategies for the
training of human resources as well as the acquisition of equipment, with a view to the
implementation and development of these standards, has initiated a process of
awareness and training which has come a long way thanks to the understanding and
collaboration of large companies that have already begun to make this type of
normatividades.
Many people involved in the processes of refrigeration and cold chain, agree on the
need to establish a series of standards and procedures for the proper development of
maintenance work in refrigeration systems, these should be seen as a resource for the
solution of mishaps and standardization of industry processes involved with refrigeration
systems, placed at the disposal of technicians and owners of cold rooms. Among such
resources, are named labor competence standards, training techniques used by
different entities, more specifically the SENA, from the point of view of practicality and
manuals for good maintenance practices in refrigeration systems, which should become
the right hand of those responsible for the operation and maintenance of these units.
However, experience and the various studies conducted by the entities responsible for
technical training, reveal that monitoring and compliance with standardized processes
and regulations, as well as the use of manuals is very low being its percentage of use
much lower than society could expect.
It should be understood that no manual of maintenance procedures based on labor
standards of competence established by government agencies, is accepted and
automatically works as a trigger for a process of implementation of standards and
norms for maintenance activities in refrigeration systems. In other words, the success of
a manual for maintenance operations in promoting the implementation of these
standards depends on its integration into the language of technicians, the reality of the
curricula used for the training of human resources and the easy application of
operations and procedures recommended by this for maintenance work. If on the one
hand, the manuals for good maintenance practices distributed by the various
manufacturers or assemblers of refrigeration equipment have been criticized and little
used by technicians given the language used by them, the tool described here as
necessary and some recommended procedures, on the other hand, the lack of
integration of educational manuals with practical and teaching activities, have made
these are not used in any field. Some people have proposed that the evaluation of the
maintenance procedures manual should be done in defined contexts, which consider, in
addition to purely technical aspects, whether they are relevant to the qualifications
issued by government agencies, whether they are accessible to technicians and owners
of refrigeration systems and, finally, whether they address the issues of learning and
implementation of standards. All these dimensions are important, without emphasizing
one over the other. Therefore, the manual must satisfy the following premises:

- To put into practice the different standards and recommendations of the qualifications
through the application of coherent and accessible procedures to the maintenance work
performed by the technicians.
Those issues related to the environment, which become the protagonists of the various
criticisms of the maintenance processes currently used and which are born those laws
or regulations for the standardization of such operations and processes are the basis of
labor standards of competence for the care of the ozone layer, the reduction of
depleting substances and solid contaminants used in refrigeration. Some of them such
as the Montreal Protocol are benchmarks as in the case of the use and time established
for the use of refrigerants. This thematic versatility of the standards, included in its very
nature becomes a solid foundation for the application of such procedures as a working
tool and not as an obligation established by guidelines for technicians. On the other
hand, with regard to pedagogy, the development of critical thinking would be manifested
from the simple identification of environmental problems, through the discussion of the
various points of view established, to reach the solution of these problems through the
use or implementation of the recommendations, for example:

- Refrigerant pollution levels and ozone depletion or damage to the ozone layer.
In the long term then, the study and implementation of these issues through the manual
as a working tool, would be intended to awaken the notion that the use of standardized
procedures and established for the proper maintenance of refrigeration systems, not
only improves working conditions, but the environment in which all those involved in
such activities unfold. Then; the set of questions and postulates mentioned so far can
serve as parameters for the development and preparation of a "Manual of Maintenance
Procedures For Refrigeration Systems In Cold Rooms" which is a real contribution
through the application of useful concepts in the implementation of good maintenance
practices and evaluation of these for the development of the cold chain in the country;
based on the practical application of concepts established by laws, regulations and
recommendations of the entities involved in the area of refrigeration in our environment.
It is important that the requirements and content of the manual, are structured according
to the standard to be met, therefore the technical recommendations found therein,
should be based on an appropriate and adequate technical procedure for compliance
with labor standards of competence imposed by government agencies responsible for
ensuring good practices in the maintenance of industrial refrigeration systems.
The operations and procedures documented in the manual, should be part of the
documentation for the overall planning and management of maintenance activities;
these procedures should describe the responsibilities, its elements applicable to the
standard, equipment, instruments and tools needed, plus some suggestions for the
proper development and control of these activities.

implementation of quality systems that are not addressed in the standard, but are
necessary for the control of maintenance activities, should also be added or referenced.
This manual then, will present to technicians and owners of cold rooms a series of
concepts and technical recommendations for good practices in preventive maintenance
of industrial refrigeration systems, putting into practice and evidencing some notions
such as:
- The need to employ standardized procedures adapted to the needs of the national
industry for the proper control and implementation of new technologies in the field of
refrigeration, translating these needs into training solutions. carefully focused on the
development of the labor competencies of the personnel involved.
- In order to meet the objectives proposed in the qualifications for compliance with the
standards in labor competencies and the different laws of environmental care, this
manual bases its recommendations on the implementation and development of
preventive maintenance plans focused on environmental care and 100% productivity of
refrigeration equipment.

- As a result of these procedures, you can see new training needs that lead to seek
other alternatives or styles of activities for the training of technicians in the region.
- It is understood that it is only possible to attract and maintain the attention of technical
personnel, as soon as the language, the level of commitment, responsibility and results
are palpable from the moment this is adopted as a tool for daily work.
- This text is not, nor does it wish to be an answer to all those problems that arise in the
day to day industrial maintenance, nor, at any time, pretends to know more than the
technical staff who use it, but rather seeks to complement the activities and procedures
used by them for good habit in the development of maintenance plans for refrigeration
systems.
The development activities, drafting and transcription for the manual, are performed
during the preparation of this document substantiation, the use of references and
existing documents can significantly shorten this time, so it should and is expected to be
corrected and supplemented by highly qualified personnel for this task assigned
hopefully in good terms by the Technological University of Campeche.
Before the manual is issued, the document must be reviewed by responsible individuals
to ensure clarity, accuracy, adequacy and proper structure, the person responsible for
its implementation, and each copy of the manual must bear evidence of authorization.
The method of distribution of the manual should provide assurance that all users have
appropriate access to the document. Distribution can be facilitated by coding copies.

In order to introduce the user of the manual to the meaning, usefulness and advantages
of a structured maintenance plan, this chapter presents some recommendations for its

4. EVALUATION
To pass this requirement it is necessary to achieve a score equal or superior to 70% of
correct answers with respect to the number of questions. In this case, it is necessary
that the operating technician has had 25 questions with correct answers to pass the
exam.
5. TESTS
This test was given three times to an equal number of operating technicians of the
Technological University of Campeche (UTCam) in order to give a real reference of the
effectiveness of the training. See annexes A.1 to A.12.
6. RESULTS
We can highlight the high percentage of correct results, since 32 questions were asked,
of which 90% were answered correctly, thus validating the effectiveness of the exam.

CONCLUSIONS.
•It was possible to create a maintenance plan for industrial refrigeration systems and
cold rooms in such a way that it would be easy to perceive by the staff in charge of
operating these facilities in the different companies dedicated to this work.
•In addition, it was demonstrated that maintenance programs can be continued through
staff training for future corrective and preventive maintenance plans.
•Theoretically it is possible to reduce the operating costs of a cooling system or cold
rooms by preventing breakdowns and failures that may occur.
• This methodology covers all systems covered without regard to the size of the
installation, which is why it is essential to follow the maintenance manual to the letter.

RESUMEN ABSTRACTO.
• Elaborar un manual de refrigeración industrial que cubra los aspectos más 10 relevantes
de la refrigeración industrial desde sus conceptos, sistemas de refrigeración, equipos y
elementos de automatización, hasta cubrir los aspectos teóricos y normativos, destinado al
entrenamiento del personal que manipula y presta el servicio de mantenimiento y reparación
a los sistemas de refrigeración industrial que componen la cadena de frío, cuya finalidad es
promover el mejoramiento de la competitividad en el personal técnico, ayudarlos en su
certificación de competencias laborales y dar inicio a un programa de calidad en el servicio
de mantenimiento, lo que contribuiría al desarrollo del gremio en el país.

INTRODUCCION
El trabajo habla acerca del Análisis de la prevención y solución para el control de fugas u
otros daños comunes donde describiremos como pueden ser si las fugas son detectadas a
tiempo, si no pueden originarse un problema mucho más grave originándose: pérdidas de
alimentos, destrucción total de equipos, costos excesivos por recuperar el equipo.
Para llevar a cabo las operaciones se requieren datos de producción pueden dar y registrar
que deben correr si también en el congelador con el fin de determinar las posibles causas
que dan origen al problema para establecer un programa previo de intervención.
Las fugas de gas generado por algún problema de 0 mantenimiento constante es un tema
delicado a tratar representando un problema inmediato.
Los métodos de control de brote de gas de los cuales hablaremos son soluciones para
tomar acciones.

CAPÍTULO I. DATOS GENERALES DE LA EMPRESA.
El desarrollo del proyecto se inicio realizando una auditoria para la efectividad del
mantenimiento en el área especifico, obteniendo la identificación de los aspectos que
presenten falencias y así poder encaminar las mejoras e igualmente se realizó un inventario
y codificación que intervienen con la formación técnica de los aprendices de la respectiva
área de estudio, además de realizar un análisis de criticidad a la totalidad de maquinaria
perteneciente a dicha área para identificar los equipos críticos en el proceso.
Para finalizar se realizó un plan maestro en la elaboración de un manual con las actividades
de mantenimientos preventivo necesarios para esta metodología, todo lo previo es la base
fundamental en la implementación del sistema para la administración del mantenimiento
Esta empresa, cuyo negocio se encuentra ubicada en una zona muy transitada, por lo que
su ubicación es punto clave para las empresas, esta se encuentra en la Col. Lic. Benito
Juárez, calle 25 entre calle 13 y 15, la empresa es del sector de alimentos el cual su
operación es la refrigeración de los alimentos como los son carnes rojas, salchichoneria,
lácteos, frutas y verduras de una a gran escala por lo que es un negocio muy rentables para
las empresas más grandes como los son cadenas de supermercados y restaurantes que
para reducir la perdida de sus productos por lo que recurren a rentar estos servicios las
empresas que rentan estos servicios son muy reconocidos a nivel nacional pero no solo eso
también cuenta con otra sucursal en la Col. Porfirio Diaz en la calle Gustavo A. Madrazo
entre 34 y 36 esta le renta los servicios pequeñas y medianas empresas (PyMES), claro
empresas como los son pastelerías, carnicerías entre otras que los solicitan y puedan pagar
los costos. Esta empresa ha ido creciendo gracias a que los clientes aprueban la eficiencia
que esta da, por lo que recomiendan a otras empresas; la empresa por el momento cuenta

con dos sitios uno para las empresas de mayor tamaño como las grandes cadenas de
restaurantes y supermercados de la república mexicana y la otra para las pequeñas y
medianas empresas (PyMES) la primera de mayor tamaño cuenta con 12 cámaras
industriales y la segunda con 5 cámaras industriales todos bien organizados para la
separación de alimentos para conservar el olor y sabor original de si mismos y no tener
problemas con los clientes y poder llevarse una buena impresión de la empresa por eso
nuestro eslogan “ alimentos bien cuidados, clientes satisfechos”. La organización de esta
empresa está constituida personal altamente capacitada en lo que es su área estos son: el
jefe (dueño) jefe de todas las áreas quien supervisa todas las áreas que estén operando de
manera correcta todo, subjefe: quien se encarga de la logística y administración, personal
de la mercadotecnia: quienes se encargan de todo lo que es como son los anuncios
publicitarios físicos y por medio de internet, técnicos e ingenieros en la materia para la
conservación de vida de las cámaras y por su puesto el personal que se encarga de la
limpieza del lugar que se encuentran nuestros equipos de refrigeración y el interior de estas
por su puestos porque un equipo muy anti higiénico es desastre fatal para la empresa que
renta los servicios. La misión de esta empresa es llegar a ser una empresa nacional ya que
solo está dando sus servicios en un solo lugar ser más rentables en otras ciudades que
sean punto claves. La visión es que no solo las empresas que son restaurantes y
supermercados renten este negocio sino también empresas como lo es PEMEX renten
también el servicio para la conservación de sus alimentos por lo que podamos poner un
pequeño departamento en sus instalaciones.

Anteriormente se pensaba que una cámara de refrigeración enfriaba el espacio en el que
encontraba, sin embargo, no es esta su forma de operar, sino que se dedican a extraer la
energía en forma de calor, la cual muchas veces se contiene en el interior de estos lugares,
esto como se dijo anteriormente, se realiza por medio de un sistema frigorífico.
Para lograr este resultado, se deben tener ubicados varios evaporadores de líquido
refrigerante en el interior del espacio. Cada uno de estos evaporadores se dedican a
absorber la energía térmica, intercambiándola por refrigerante evaporado, así, mientras el
líquido se evapora a una temperatura muy baja, al interior del lugar se va absorbiendo la
energía térmica del aire que se encuentra en este espacio.
Esta cámara debe estar completamente aislada térmicamente, esto con el fin de minimizar
cualquier transferencia de calor a la estructura, esto es posible gracias a paneles frigoríficos
que se construyen con polímeros sintéticos, los cuales son de bajo coeficiente de
transferencia de calor.
2.1.1. Para poder definir completamente su diseño y construcción se tienen que tomar en cuenta
los materiales:
• Los paneles deben estar fabricados de polímeros sintéticos, lo cuales cuentan con un bajo
coeficiente para la transferencia de calor, esto es logrado por su poca conductividad térmica
de cada uno de sus materiales, pues de estos se logra minimizar la pérdida de conducción
y convección entre cada uno de los lados de la cámara, además, del grosor dependerá la
transferencia del calor, así que entre más grande sea el panel en su anchura, mayor será
la diferencia de calor entre exterior e interior.

• Para determinar la altura y el tipo de techo o piso que se usará para instalar cámaras de
refrigeración, se debe tomar en cuenta el tipo de operación que dará, ya que, para las
cámaras pequeñas que no tengan una gran absorción de temperatura, es posible usar los
paneles que se emplean en las paredes del mismo, a los cuales se les pueden dar acabados
especiales. Para las cámaras de mayor tamaño, los paneles deben ir colgados a la
estructura que contendrá la cámara, esto es logrado por medio de anclajes o elementos
que son especiales, como lo son las cadenas o piolas metálicas. Además, para los pisos se
pueden utilizar los paneles-pisos, los cuales pueden soportar un tráfico ligero, mas no
soportan el peso de un montacargas.
• Para solucionar la problemática que se puede presentar con el tipo de suelo en una cámara
de refrigeración, se tiene que tomar en cuenta el tamaño y temperatura del diseño, esta
última siendo el más importante de los aspectos, ya que, si la cámara va a trabajar a
temperaturas que estarán por debajo de los 0°C, el suelo debe estar tratado para que esté
libre de humedad, esto con el fin de poder evitar la congelación. Además, no se tendrán
problemas con la estructura del lugar.
También se les conoce como cámaras frigoríficas de temperatura positiva. Este tipo de
espacios cuentan con temperaturas entre los 0° y 10°, por lo que son utilizadas para
la conservación de alimentos frescos, como frutas y verduras, ayudando a mantener la
humedad necesaria en los mismos. Entre los tipos de cámaras frigoríficas, este puede
ofrecer grandes utilidades a diferentes negocios de hostelería almacenes de alimentos y
bebidas.

Estas también son llamadas cámaras frigoríficas de temperatura negativa, y cuentan con
un rango promedio de temperaturas entre los 0° y -28°. Son diseñadas con revestimientos
que favorecen la humedad atmosférica y la conservación de la temperatura para congelar
los productos que allí se coloquen.

de los más utilizados en negocios de hostelería. Esto debido a que puede enfriar de forma
acelerada un alimento recién cocinado, que pasará de 90° a 3° en menos de 90°.
Los túneles de congelación son equipos que funcionan con sistemas automáticos de
desplazamiento y corrientes de frío intenso que ayudan a congelar individualmente cada
producto mientras este se desplaza en el interior de la cámara. Pueden proveer
temperaturas que están por debajo de los -30°, para favorecer la conservación estructural
del producto.

refrigeración son el sistema de compresión y el sistema de absorción.
Estas dos características se pueden definir, tal vez como las dos propiedades esenciales
en los sistemas de refrigeración, ya que todas dependen o se extienden de ellas; existe
también, una relación muy directa entre estas dos, pues todo aumento de temperatura
conlleva a un aumento de presión y viceversa.
2.3.3. Calor.
Este se entiende como una forma de energía, creada por la transformación de otro tipo de
energía y que se transfiere siempre del elemento con mayor energía al elemento con menor
energía.
Se define como aquel que provoca un cambio de temperatura en una sustancia sin alterar
el estado de la materia sobre la cual actúa.

Es aquel necesario para cambiar el estado de la materia en la que se transfiere la energía,
teniendo en cuenta que solo se aplica para cambiar de fase la materia, pero no su
temperatura.
2.3.5. Refrigeración
Es muy útil para el almacenamiento de productos y sus temperaturas son próximas pero
superiores al cero; sus límites varían entre 0,5 °C y 6 °C.
2.3.6. Congelación.

Se define como la cantidad de agua que se encuentra presente en el aire, cuanto más
elevada la temperatura del aire, mayor es la cantidad de vapor de agua que el aire puede
contener, el llamado aire saturado es aquel que contiene la cantidad máxima de vapor que

por su temperatura le corresponde. Humedad absoluta es la cantidad de vapor presente en
el aire no saturado y humedad relativa, es la relación entre la cantidad de vapor contenida
y la máxima que puede contener.
Por definición, un refrigerante es cualquier fluido que circula cíclicamente y actúa como
agente de enfriamiento, absorbiendo calor de un foco más caliente.
Exportación solo para países en vías de desarrollo. Es casi inodoro, no es tóxico ni irritante.
2.3.8.3. R-502

En este tipo de máquinas la parte central del sistema es el compresor, este, recibe gas a
baja presión y lo comprime, elevando considerablemente la presión y la temperatura de
este, para luego llevarlo hasta el condensador donde el gas cede su calor al agua o aire frío
que lo rodea; en esta forma su temperatura desciende hasta el punto de condensación, y
se convierte en líquido, pasa del condensador hasta un receptáculo y de allí fluye por un
conducto o válvula, o el tubo reductor, disminuye la presión del líquido a medida que fluye
dentro del vaporizador para enfriarlo. Este vaporizador se haya en el espacio que desea
refrigerar. El aire tibio de este recinto le transmite, por contacto, al vaporizador parte de su
calor, y hace que el líquido se evapore. Como se ve este nuevo cambio de estado, de líquido
a vapor, se efectúa aumentando la temperatura. A continuación, aspira el compresor, por
el tubo de succión, el vapor caliente del evaporador, y, después de volverlo a comprimir, lo
impulsa al condensador, como se explicó anteriormente. Se repite así el proceso en ciclos
continuos.

2.5.2. Lubricación
El aceite además de lubricar las partes móviles, cierra espacios entre cilindro y pistón.

Comúnmente usado en nuestro medio, tubo con aletas, las cuales disipan el calor al
ambiente, normalmente por la fuerza ejercida por el aire forzado que pasa a través de los
espacios entre aletas. Fáciles de instalar, baratos, y no tienen peligro de congelación, puede
ser utilizado en cualquier tipo de clima, después de estar seguros de tener un buen flujo de
aire.

Unas de las ventajas de este tipo de sistemas, es tener un mejor control de la presión de
descarga y manejar una presión de condensación más baja, equipos muy compactos,
gracias a las excelentes características de transferencia de calor que posee el agua.

Permiten la utilización de compresores de bajo par de arranque por el buen equilibrio de presiones.
Cuando el refrigerante líquido entra dentro del tubo capilar se produce una estrangulación, (aumenta
la velocidad y disminuye la presión) debido a esto parte del líquido se evapora al cambiar de presión.

Para evitar que se evapore todo el líquido antes de entrar al evaporador se suele soldar junto con la
línea de aspiración para evitar que robe calor del exterior.
Al parar el compresor todo el refrigerante pasa al evaporador al no haber nada que lo impida gracias
a la diferencia de presiones, por esta razón no se puede utilizar recipientes en instalaciones con tubo
capilar y hay que tener cuidado al dimensionar el filtro ya que este podría hacer de recipiente. Al
estar las presiones igualadas el motor arranca sin muchos esfuerzos. El tubo está calibrado, la
potencia frigorífica está en función con el diámetro y la longitud del tubo.
2.5.7. VALVULAS.
Las válvulas de expansión termostáticas están formadas por: Bulbo: Es un elemento cargado con el
mismo refrigerante que hay que controlar.
La presión que ejerce este refrigerante depende de la temperatura al final del evaporador y actúa
sobre el orificio calibrado de la válvula.
Tornillo de recalentamiento, va ajustado de fábrica con 4ºC (respecto la presión de baja), la presión
que ejercemos con el tornillo contrarresta la presión del bulbo.

Una vez entra el refrigerante en el evaporador va robando calor del medio a enfriar y se va
evaporando. Hasta el momento que no llegue líquido al bulbo y lo enfríe la válvula de
expansión no cerrará. Cuando conseguimos enfriar el bulbo y el recalentamiento es de 4ºC
empezamos a cerrar la válvula. Una vez cerrara la válvula aumenta el recalentamiento y
por lo tanto la presión del bulbo vuelve abrir la válvula. Este tipo de válvulas no son
recomendables para evaporadores que existan grandes pérdidas de presión. Cuando las
pérdidas de carga en el evaporador son considerables se emplean válvulas de expansión
de compensación externa. Estas a diferencia de las anteriores toman la presión de baja al
final del evaporador justo detrás del bulbo, de esta manera aunque existan pérdidas de
carga la presión de baja es más exacta.
Es función de este elemento, que el refrigerante líquido que viene del condensador a alta
presión, se mantenga en este estado y que al pasar por este, disminuya su presión, al
tiempo que se regula su paso para compensar la cantidad del mismo que se va evaporando
en el evaporador.

2.6.1. Mantenimiento Preventivo
A diferencia del anterior, no hay que realizarlo en tiempo de producción y, por tanto, se
efectúa en los tiempos libres de fábrica.
Con respecto a los otros tipos de mantenimiento, éste es más exigente, puesto que requiere
de una disciplina rígida de supervisión y la elaboración de un plan de prevención a realizar
por personal especializado.
Asimismo, al estar formado por labores rutinarias, puede llevar a la falta de motivación por
parte del personal encargado y, si no se realiza correctamente, puede suponer un sobre-
coste sin que haya mejoras notables de productividad.
El sector industrial depende, y mucho, del mantenimiento preventivo y es por una sencilla
razón: las averías son muy caras. ¿Por qué?:

coste de la reparación incluye: personal, gastos en materiales, servicios subcontratados.

personal especializado en interpretar los datos obtenidos.

tareas, ante de realizar cualquier procedimiento o actividad de mantenimiento, a

para ponerlas en práctica.

Teniendo en cuenta que básicamente este es el orden en el cual se deben llevar a cabo los
procedimientos de mantenimiento, a continuación nos referimos a las tareas implícitas en
cada uno de ellos.
Se refiere a todas aquellas actividades que tiene por objeto, encontrar posibles fallas, sus
causas y causantes, al mismo tiempo que se examinan partes desgastadas que pueden ser
punto de falla en el corto plazo, todo esto a la espera de poder determinar, el tipo de
procedimiento a realizar para su corrección, el lugar donde se debe aplicar y los materiales
e insumos necesarios para su poder llevar a cabo esta operación. Se deben tener en cuenta
durante el desarrollo de esta actividad, conceptos de funcionamiento básico de los sistemas
de refrigeración, conceptos ambientales y las estadísticas que se tengan a la mano del
equipo en el que se está trabajando.

aquello que pueda afectar directa o indirectamente el buen funcionamiento del sistema
frigorífico. Se refriere también a las condiciones de ubicación y de trabajo de cada uno de
los componentes adicionales instalados en el sistema, verificación de posición, rangos de
trabajo y capacidad de trabajo.
3.2.3. Reparaciones.
Estos tienen como fin la reparación de fallas, cambio de piezas, ajustes, entre otros, al dar
por terminado los dos anteriores procedimientos, estos para proceder con a la puesta en
marcha bajo condiciones óptimas de trabajo del sistema para dar continuidad con las
actividades de la empresa.
3.2.4. Limpieza.
Aun cuando parezca la actividad más sencilla e insipiente de todo el proceso del
mantenimiento como tal, esta es tal vez una de las más importantes y una de las más
olvidadas o en algunos casos el escudo de muchos técnicos, es aquí donde se facilita y se
garantiza que la aplicación de los procedimientos de mantenimiento es verdaderamente
efectiva. Se refiere a la limpieza de los serpentines, los componentes y cada uno de los
elementos instalados en el sistema, con el fin de mantenerlos en óptimas condiciones para
su funcionamiento.

3.2.6. Control de Instrumentos
Al dar por terminado todas aquellas actividades necesarias para el buen funcionamiento de
las máquinas, se recomienda realizar una inspección para la calibración de cada uno de los
componentes instalados en el sistema, con el fin de garantizar que el equipo se deja
trabajando en las mejores condiciones posibles con todos sus elementos a punto.
- Herramientas utilizada
Después de entender y analizar cada uno de los anteriores puntos, se puede determinar
que tan bueno y beneficioso y efectivo puede resultar llevar acabo para una próxima visita
los procedimientos y las tareas realizadas, con lo cual se crea un ciclo de conocimiento de
cómo poner la teoría en la práctica del mantenimiento.
En la actualidad existen diversos tipos de ayuda para el área de mantenimiento, entre ellas,
podemos hacer notar la aparición de ayudas computacionales, o CAD para mantenimiento.
El fin de estos es proveer a la empresa de un plan estratégico, que permite analizar todas
las áreas que necesitan de este tipo de actividades, todo esto, a través de tiempos, gráficos
y tablas que explican a todas las partes de la empresa, trabajadores y administradores,
hablar un mismo idioma, con lo cual la productividad y calidad de un empresa mejora
notablemente y no se hace esperar la respuesta de sus clientes, quienes son al final del
cuento los más beneficiados con es te tipo de avances, actividades que permiten un servicio
ágil y competitivo, atmósfera característica de nuestro medio en los últimos tiempos.

En la región existen actualmente una serie de empresas distribuidoras de software
especializado en mantenimiento, que tienen como objeto facilitar el trabajo y optimiza los
planes de mantenimiento, lastima que la conciencia actual no permita la aplicación en un
100% de estas actividades, decisiones tomadas por desconocimiento y miedo a la
innovación tecnológica en las empresas.

4.1 ASPECTOS PEDAGÓGICOS DEL MANUAL

que la utilización de manuales es muy escasa siendo su porcentaje de utilización
muy inferior al que la sociedad podría esperar.

Así pues, que el manual debe satisfacer las siguientes premisas:

Aquellos temas relacionados al medio ambiente, los cuales se convierten en los
protagonistas de las diferentes críticas de los procesos de mantenimiento utilizados
actualmente y por los cuales nacen aquellas leyes o normatividades para la
estandarización de este tipo de operaciones y procesos son el fundamento de las
normas de competencia laboral para el cuidado de la capa de ozono, la disminución
de sustancias agotadoras y contaminantes sólidos utilizados en la refrigeración.
Algunas de ellas tales como el Protocolo de Montreal son puntos de referencia como
en el caso de la utilización y tiempo establecido para el uso de refrigerantes. Esta
versatilidad temática de las normas, incluida en su propia naturaleza se convierte
en un sólido fundamento, para la aplicación de este tipo de procedimientos como
una herramienta de trabajo y no como una obligación establecida por entes
directrices, para los técnicos. Por otro lado, en lo que se refiere a la pedagogía, el
desarrollo del pensamiento crítico se manifestaría desde la simple identificación de
los problemas ambientales, pasando por la discusión de los diversos puntos de vista
establecidos, hasta llegar a la solución de esos problemas mediante la utilización o
puesta en práctica de las recomendaciones, por ejemplo:

alto la organización o planeación de actividades que tengan como fin el
cumplimiento de estándares de calidad. También deben ser agregados o
referenciados, aquellos procedimientos relativos a la implementación de sistemas
de calidad que no sean tratados en la norma, pero que son necesarios para el
control de las actividades de mantenimiento.
Este manual entonces, presentará a los técnicos y propietarios de cuartos fríos una
serie de conceptos y recomendaciones técnicas para las buenas prácticas en el
mantenimiento preventivo de sistemas de refrigeración industrial, poniendo en
práctica y evidenciando algunas nociones tales como:

CONCLUSIONES.
•Se logró crear un plan de mantenimiento para sistemas de refrigeración industrial y cuartos
fríos de tal manera que fuera fácil de percibir por parte del personal encargado de operar
estas instalaciones en las diferentes empresas dedicadas a esta labor.
•Además, se pudo demostrar que es posible dar continuidad a los programas de
mantenimiento gracias a la capacitación del personal para futuros planes de mantenimiento
correctivo y preventivo.
•Teóricamente es posible reducir los costos de operación de un sistema de refrigeración o
cuartos fríos gracias a la prevención de averías y fallos que puedan presentarse.
• Esta metodología abarca todos los sistemas comprendidos sin tener en cuenta el tamaño
de la instalación, razón por la que es imprescindible seguir al pie de la letra el manual de
mantenimiento.
