Ingredients

• 180 g dark chocolate 85%


• 180 g of applesauce with no added sugar
• 6 egg whites
• 2 tablespoons of cornstarch or potato starch
• 1/2 teaspoon baking powder
Preperation

First, melt the 180 g of 85% dark chocolate with 2 tablespoons of


water . Then pour the melted chocolate into a container and add
the 180 g of applesauce without sugar.

Mix everything. Then, add the equivalent of 2 tablespoons of potato


starch (or corn starch) in the resulting mixture. Also pour in the half-
sachet of baking powder.

Leave this mixture aside and now start preparing the eggs . In a
separate bowl, whip the 6 egg whites until stiff . Gently fold the egg
whites into the chocolate mixture set aside.

Pour the mixture into the mold of your choice, previously greased to
prevent the cake from sticking when baked. Finish by placing
everything in the oven at 180 degrees . Leave to cook for 25-30
minutes . Before finishing the cooking, gently stick the tip of the knife
into the cake to check the doneness: take it out of the oven if and
only if the tip is barely dry.
