POTENTIALLY HAZARDOUS FOOD, COLD HOLDING
Observation: Sliced tomatoes, cheese slices, and shredded cheese noted between 57 F and 63 F with ineffective
temperature control for approximately 3 hours. Operator was attempting to use ice to keep food items cold but ice
bath setup was ineffective.
Corrective Action(s):Move noted TCS foods into refrigeration to rapidly cool to 41 F. Maintain cold potentially
hazardous foods at or below 41°F. If using ice as a means to cold hold TCS food, it must be able to maintain the
foods at 41 F or less.

READY-TO-EAT, POTENTIALLY HAZARDOUS FOOD, DATE-MARKING
Observation: A. Heavy cream, diced tomatoes, shredded lettuce, and cooked taco meat prepared the previous day
were not labeled with a date mark to control the shelf life and prevent unsafe growth of Listeria.
B. House made slaw and tartar sauce prepared on 8/6/21 were improperly date marked with discard dates of 8/13 and
8/14 allowing for an unsafe shelf life for the food products. Food items prepared on 8/6/21 should be used or
discarded by 8/12/21.
Corrective Action(s):Correctly date label all noted food items to indicate the correct shelf life for safety not exceeding 7
days (with open/prep date counted as day one). Adjust method or procedures so that all ready-to-eat potentially
hazardous foods are date marked with a date not to exceed 7-days.

Observation: A. Individually packaged cooked chicken breast are improperly thawing out on counter without
temperature control. Food was still frozen.
B. Bags of cooked, shredded corned beef are improperly thawing out on counter without temperature control. Food is
still frozen.
C. Bags of raw fish are improperly thawing in standing water in the food prep sink. Food is still frozen.
Corrective Action(s):Adjust procedures or methods to properly thaw foods. Foods may be thawed under refrigeration,
submerged in cool running water in the prep sink, as part of the cooking process, or in the microwave if cooked
immediately afterward.
Action(s) Taken: Employee moved all items into refrigeration to complete the cooling process. (Corrected on Site)
