Apple Fritter Loaf

You will need:


2 eggs 1/3 cup brown sugar
1 tsp cinnamon 2/3 cup white sugar
1/2 cup butter, softened 1 & 1/2 tsp vanilla
1 & 1/2 cups flour 1 & 3/4 tsp baking powder
1/2 cup milk 2 apples; peeled and grated. Mixed with 2 tbsp sugar & 1
tsp cinnamon
Old fashioned glaze: 1/2 cup icing sugar, 1-3 tbsp milk or cream

Directions:
1. Preheat oven to 350 degrees & spray a loaf pan with cooking spray.
2. In a small bowl mix brown sugar and cinnamon together.
3. Beat sugar and butter until smooth/creamy. Beat in Eggs; one at a
time & add vanilla.
4. Add flour & baking powder. Mix in milk.
5. Pour half the batter into loaf pan. Add half the apple mixture and
half the sugar/cinnamon mixture.
6. Lightly pat apples into batter. Pour in remaining batter and top
with remaining apples & sugar mixtures.
7. Lightly pat apples into batter; swirl batter with knife.
8. Bake about 60-75 minutes. Let cool 25 - 30 minutes before pouring
glaze over top
