Ingredients

2 MEDIUM SIZED GREEN PAPAYA (SHREDDED)

2 MEDIUM CARROT (THINLY SLICED)

1 SMALL RED BELL PEPPER (THINLY SLICED)

4 HEAD GARLIC (SLICED)

4 THUMBS GINGER (SLICED)


Ingredients

3 CUPS VINEGAR

1 1/3 CUPS BROWN

5 TABLESPOON SALT

1 TEASPOON GROUND BLACK PEPPER

5 CUPS WATER
Materials

MIXING BOWLS

COOKING POT

LADLE

STERILIZED JAR

CHEESECLOTH OR ANY CLEAN CLOTH


Vineger, sugar, pepper, salt, bell Soaked papaya in 5 cups water
pepper, garlic, ginger, carrots and 4 tbsp salt
Instructions

1st step : Preparing the papaya

In a Mixing bowl, combine 5 cups water and 4 Tbsp


1 salt. Mix well.

Soak the shredded papaya. Cover and leave it


2 overnight inside the refrigerator.

After soaking the papaya, place it in a cheesecloth and


3 squeeze firmly to dispel all the liquid.

2nd step : mixing all the vegetables

1 In a mixing bowl, arrange the prepared papaya.

2 Add the carrots, bell pepper, garlic and ginger.

3 Mix well and set it aside.

3rd step : mAking the syrup

1 In a cooking pot, heat the vinegar until it boil.

Once it starts to boil, add the sugar, salt and ground


2 pepper.

3 Stir the mixture and let it cook for 2-3 minutes.


Instructions

Last step : putting the atchara in the jar

In a sterilized jar, put the papaya & vegetable


1 mixture. Remember to leave a space for the syrup.

Gently pour the hot syrup in the jar and close it


2 immediately to cook the papaya and vegetables.

Let it cool and refrigerate for 1 to 2 days to allow


3 flavors to develop before serving.
Serve and Enjoy!

Atchara or Pickled Papaya is a kind of food preservation
that uses the vinegar pickling technique. In this food
preservation, vinegar, salt, and sugar are heated and
added to the papaya and vegetables. This technique
creates a high acid environment that kills off microbes
and causes food to change in flavor and texture.
