SANTA MARIA’S CHICHARON

Dear Arendelle,

How are you? It has been awhile since I went there last vacation.

Do you still remember what I mentioned about the large industry of chicharon here in
Santa Maria, Bulacan?

Did you know that the beginnings or origins of the local chicharon industry of Santa
Maria can be traced back to Pacencia de la Torre-Tuazon? She is said to have started the
town’s chicharon industry as a backyard trade when she decided to make use of leftover
portions of a butchered pig instead of throwing it away. The portion is deep-fried and added
some spices. Santa Maria’s chicharon industry started from humble beginnings in the 1900s,
mostly from backyard piggeries and swine raisers.

This February, we will be celebrating the feast of our patron Immaculate Conception.
The whole month is full of happenings. I want you to witness the Chicharon Festival, it was
started on 2007,and it is held every 10 th of February annually. Chicharon is your favorite snack
right?I’m sure that you will enjoy the parade that shows different varieties of crunchy, tasty and
just sinfully good chicharon, from pork rinds to chicken skin, from the largest to bite size. The
makers of chicharon will be giving samples, Oh! I’m excited… I can already smell the spiced
vinegar that is best dip for chicharon.

Please tell Auntie Lina to come with you as well, there are other delicacies that she can
enjoy during her stay here as she is trying not to eat chicharon right? My mother tries not to eat
too because of its high sodium and calorie content.

Aside from the parade there will be cooking contest for college students who will come
up with several new recipes that made good use of chicharon, like last year, the winner’s menu
was Chicharon Steak. I guess our parents would love to watch the contest too.

I’m excited to see you and eatchicharon with you. See you next month Arendelle!

Your cousin,

Mary

which led to his untimely death.

Sajid died at the age of 12 and was declared later as a hero of the 1993 pagoda tragedy.
He received several awards including Gold Medal of Honor from the Boy Scouts of the
Philippines and Service Award from Ateneo de Manila University.

In honor of Sajid, a SajidBulig Presidential Award for Heroism was established through
Executive Order 393 to give official recognition to individuals who have demonstrated exemplary
courage in the service of humanity as what Sajid did.

A monument was constructed and dedicated for him at the edge of the Bocaue River in
Barangay Bambang, meters away from his home and it was also meters away where the ill-
