LAGER
Lagers and ales are the two families of beers. The German word Lager means, "to store," and for up to
three months these beers are cold-stored, settling them out, and granting a distinctly clean and
balanced palate. Lager yeast works at the bottom of fermentation vessels and at cold temperatures
(41º- 48º F).

PILSNER
Pilsners are very clean in taste with a mild malt body. Light straw to deep golden in color,
pilsners usually have a floral hop aroma and a dry, finishing bite.

These lagers have a heavier malt body than pilsners, and their hop aroma is generally more
complex. All around, lagers carry a stronger, richer taste than pilsners.

DARK LAGER
All lagers are not light. These beers are great showcases for rich malts, displaying roasted barley,
chocolate, and sweet tones.

PORTER AND STOUT


These beers are dark and rich, with flavors that can be dry, sweet, silky or burnt. Porters were the
original of these two styles, a favorite drink of porters in South London. Stouts were developed a
bit later, originally being only darker and heavier porters.

ALE
As the other family of beers, ales are brewed with yeast that ferments on top of the fermentation
vessels and at higher temperatures (59º - 77º F). By fermenting at a higher temperature, ales have a
distinct fruitiness.

PALE ALE
Pale ales have a solid malt body and are topped with fragrant hop aromas. British styles
emphasize their malt body, while American pale ales are more aggressively hopped.

LAMBIC
Lambics are the most unique beers. They are spontaneously fermented with airborne wild yeast
native to the Senne Valley in Belgium. After being aged for up to two years in oak wine casks, a
dose of fresh fruit is then added to reinvigorate the beer. This creates a sweet, tart, and fascinating
style of beer.

WHEAT BEER
Many styles of wheat beers exist, but they all are made with at least fifty- percent wheat malt.
