Haengjeok (Kimchijeok)
Hwanghae-do is granary area where the Yeonbaek Plain spreads out. It is famous for
the villagers� generosity and kindness. The cereals are particularly tasty.
Since there are many grains, livestock also has good feed. Their meat tastes good.
Especially, pork tastes good. People like to enjoy savory taste and simple food. They
rarely try to decorate food shape or look. The seasoning is medium, neither too salty
nor too bland. Haengjeok is a panfried dish with properly cooked cabbage Kimchi
and seasoned pork belly on a skewer. Haengjeok is Kimchijeok. Its main ingredient is
cabbage Kimchi. It is panfried by coating with flour and egg water in oil. Pork oil gets
soaked into the center of Kimchi, which makes savory and tasty.

Tools and 120g cabbage Kimchi, 1 tsp sesame salt, 1 tsp sesame oil, Pork (Samgyeopsal) 150g,

Ingredients
100g small green onion, 3 tablespoons flour, 2 eggs, 8 skewers, 4 tablespoons
cooking oil
* Pork Sauce
1 Tbsp Soy Sauce, ½ Tbsp Sugar, 1 tsp minced green onion, ½ tsp minced garlic,
1 tsp sesame salt, ½ tsp pepper powder, ½ teaspoon sesame oil
* Soy sauce mixed with vinegar
1 Tbsp soy sauce, 1 Tbsp vinegar, 1 Tbsp water

RECIPE
1 Shake off the heart of cabbage Kimchi, squeeze it tightly, and cut it into 8cm
long and 1.5cm wide. Season it with sesame salt and sesame oil.
2 Cut pork into 9cm long, 3cm wide, and 0.5cm thick. Season it in seasoning
sauce.
3 Trim, wash small green onion, and cut it into 8cm long. Beat up eggs.

4 Skewer seasoned Kimchi, small green onion, pork, small green onion, and
Kimchi in order, cover with flour, and cover egg water.
5 Heat a pan, put cooking oil around on it, put Kimchijeok, and fry it back and
forth over medium heat.
6 Serve with soy sauce mixed with vinegar.

Cooking TIP
1 When plating Kimchijeok in a bowl, remove the skewers and put it.

2 Ripen Kimchi can make good taste.

Gaeseong Pork Bulgogi
Gaeseong Pork Bulgogi is a pork dish seasoned with red pepper paste and salted shrimp.
It is grilled over fire. Gaeseong is famous for producing pork. The taste of its special
local food, pork has been so good so that they have cooked and enjoyed making
various dishes with pork such as steamed, stewed, and boiled pork. When making
Samgyetang, pork was added, too.
Port has been used quite a lot. In particular, Gaeseong Pork Bulgogi is a delicacy that is
thickly sliced from fatty pork belly seasoned with salted shrimp and then grilled over
charcoal.

Pork Bulgogi 400g pork (Samgyeopsal), 4 Tbsp Spicy Marinade Sauce, 1 Tbsp Salted Shrimp,

1 Tbsp Sesame Oil, ½ onion, 1 green onion, 1 green pepper, 1 red pepper,
1 tsp whole grain sesame

Ingredients * Spicy marinade sauce


1 cup red pepper paste, 1½ cup red pepper powder, 5 Tbsp sugar, 1 Tsp pepper powder,
1 Tbsp ginger juice, 3 Tbsp soy sauce, 3 Tbsp starch syrup, 3 Tbsp minced garlic,
3 Tbsp rice wine (white wine), 2 Tbsp cooking oil

RECIPE
1 Cut the pork belly into about 0.5cm thick and then cut in 6cm size.

2 After making the spicy marinade sauce, add the spicy marinade sauce, salted
shrimp, and sesame oil to the pork belly, mix and then marinate for about 30
minutes.
3 Cut onion into thin strips and slice green onion, green pepper, and red pepper
diagonally.
4 Add oil around on a heated pan. Add seasoned pork belly and cook. When it is
half cooked, add prepared vegetables and stir-fry.

Cooking TIP
1 Make and spare big amount of spicy marinade sauce in advance. It is good
to use for stir-fried chicken ribs, stir-fried pork ribs, stir-fried squid, stir-fried
octopus, etc.
2 Add or cut out red pepper powder and sugar according to your taste.

3 You may use white wine instead of sake.
