Explain the coagulation test:

The coagulation test of milk shows how the milk curdles in addition of acetic acid.
Adding acetic acid to milk and allowing to boil causes the milk to coagulate. This
is due to the presence of whey protein which is mainly composed of beta-

lactoglobulin.
