Chocolate & Baking class

1) Rose Almond Tile Blondies


Ingredients :-
150 gm All purpose flour
1 tsp Baking powder
25 gms Almond flour
100 gms milkmaid
2 tbsp water
30 gms castor sugar
1 tsp rose essence
100 gms butter (unsalted)
100 gms white chocolate
Ingredients :- For Decoration
Slicing of almonds
Rose Petals
White chocolate ganache
Tiles edible printed sheets

Ingredients :- white chocolate ganache


200 grams of white chocolate
100 grams of fresh cream
3 Drops gel color
METHOD :-
1) Melt chocolate by double boiler method and add butter.
2) Then add milkmaid, castor sugar, rose essence and water and prepare
the mixer.
3) Now, sieve all purpose flour, almond flour, baking powder.
4) Then slowly add the powdered mixer to the chocolate mixer and mix by
cut and fold technique.
5) Pre-heat the oven to 1800 and bake for 20 to 25 minutes.

2) Coffee Mocha Cheese Cake Jar

Ingredients :-
135 grams of chocolate digestive crumbles
50 gms Amul Butter (unsalted)
250 grams cream cheese
1/2 cup castor sugar
4 - 5 drops vanilla essence
3 tbsp Mocha coffee powder
3 tbsp melted white chocolate
Ingredients :- For Frosting
100 grams of whipped cream
50 grams of dark chocolate ganache
10 grams of cocoa powder

Ingredients :- for Decoration


20 gms dark chocolate (melted)
A little cold water
METHOD:-
1) Take chocolate digestive crumbles in a bowl. Add melted butter and
first layer this mixer into the jar as shown in the class.
2) In another bowl, add cream cheese, castor sugar and vanilla essence
and beat with a beater. Finally add mocha coffee and white chocolate and
mix.
3) Prepare jar dessert as shown in class.

3) Truffle Balls

Ingredients :-
200 grams heavy cream
400 grams dark chocolate (chopped)
1 tbsp butter (melted)
1 cup roasted dried fruit (cashew, almond, pistachio) (chopped)

METHOD:-
1) Take a pan. Add cream to it. And heat it until the cream bubbles. Then
add chopped dark chocolate and mix well. Finally add butter.
2) Now, set it in the fridge for 2 hours.
3) Now, make balls from the truffles made.
4) Coat the prepared balls with roasted dried fruits and serve in a paper
liner.

4) Chocolate bars

Ingredients :-
300 grams melted white chocolate
10 grams mix berries
5 Pieces Mini Oreo Biscuit
50 grams Candied Fruits (Orange or Kiwi)
20 gms of dried fruits (cashew nuts, almonds, pistachios)
METHOD:-
1) First cut the chocolate into small pieces.
2) Melt the chopped chocolate in the microwave for 30 to 40 seconds.
3) Now, take a bar mould. Fill this melted chocolate in the bar mould.
4) Garnish the bar with dried fruit, berries, candied fruit as shown in the
class.

5) Lunch Box Cake (Biscoff)

Ingredients :-
3 inch vanilla sponge cake
5 tbsp Biscoff Butter (Lotus)
3 Piece Biscoff Biscuits
2 tbsp sugar syrup
1/2 cup whipped cream
METHOD:-
1) Cut the vanilla sponge cake into 3 layers.
2) Now, take the first layer. Apply sugar syrup on it. Then apply whipped
cream, biscoff butter and biscoff biscuit crumbs on it.
3) Repeat this way 3 times and cover the cake.
4) Garnish the cake as shown in class.
