PROFILE OF THE
PLACE
Pondicherry alias Puducherry, is one among the seven Union
Territories of India. Tracing back to Saint Agathya , the history of Pondicherry
speaks of Roman existence around 200 years ago. Various documents of Ott
akoothar and kamber in the 11th and 12th centuries, mention the city of
Pondicherry as puthuvai.

Pondicherry was amongst the first cities in India to come under the
rule of French colony. On 15th January 1742, Joseph Francois Dupleix became
the first Governor of the French territory in Pondicherry . The attempt to
annex Pondicherry from the French the British declared many attacks but had
to suffer defeat. It was only in the year 1793, when the British took advantage of
the inner conflicts among the French and conquered the land.

Pondicherry has played a pivot role in the movement of


independence since most of the freedom fighters began their struggle from here
. In the year 1954, the government of India and France came on a consensus and
Pondicherry was merged with Indian Union.

Today, the quaint town of Pondicherry retains its French history and most of the
houses and monuments still preserve the French influence.
Travel of the city
Pondicherry has a lot of options when it comes to inner city travel, and you can
decide on the mode of travel you want by coming to a decision on whether you
want to take the public transport or travel around on your own.

Air transport

Pondicherry Airport is an airport located at Lawspet in Pondicherry, a Union


territory of India. It is situated 8.1km from the international community of
Auroville. The airport has charter flights and operations of the local flying
trainings school. In 2007, the Pondicherry Government decided to expand the
airport to accommodate larger aircraft and commissioned a new terminal
building. The new terminal was inaugurated on 18 January 2013 with the arrival
of a spice jet flight from Bangalore. Since August 2017 there are direct daily
flights to Hyderabad with spice jet.
Railway transport

The Puducherry railway line is one of the oldest rail link in India and it was
constructed in the year 1879 by the Puducherry railway company during the
period of French and British rule in India. Puducherry is connected by a railway
line from the five-way junction at Viluppuram and Chennai. The railway line is
a broad gauge line. There are express trains from Chennai, Bangalore,
Viluppuram , Mumbai , Bhubaneswar, Howrah and other cities. It takes
approximately four hours to reach Puducherry from Chennai by train.
Road Transport

Puducherry is endowed with excellent infrastructural facilities on par with the


best available in the country. A network of all weather metalled roads
connecting every village exists in the territory. Puducherry has a road length of
2552 km (road length per 4.87km), the highest in the country.

Auroville
Auroville is a universal township in the making for a population of up to 50000
people from around the world.
The purpose of Auroville is to realize human unity –in diversity. Auroville is
located in south India, mostly in the state of Tamilnadu but some parts of
Pondicherry, approximately 150 kms far from Chennai. The concept of
Auroville is an ideal township devoted to an experiment in human unity- came
to the mother as early as the 1930s.

Sri Aurobindo Ashram

The Aurobindo ashram, established by Sri Aurobindo, is a popular landmark in


Pondicherry. The Ashram consists of a row of interconnected houses, including
the buildings where Sri Aurobindo and the mother lived and meditated. A white
marble shrine, their final resting place is a place of reverence for many who
follow their humble teachings. Sri Aurobindo ashram was a greatly respected
freedom fighter and philosopher who settled in Puducherry .
Botanical garden

The botanical garden is located south of the new bus stand. The gate leading to
the garden is reminiscent of French architecture and it stands out from its
immediate surroundings because it is in the middle of the old tamil town.the
botanical gardens were laid out in 1826 in the ornate French style, with pruned
trees, flower beds and gravel lined paths and fountains. Perrottet was largely
responsible for transforming the place into a botanical garden in 1831. The
French introduced many exotic plants from all over the world. The gardens also
have a musical fountain which is active over the weekends, with two shows in
the evening.
Barathi park

Bharathi park is situated close to the famous Promenade beach is another


place of interest. Surrounded by the picturesque governor building, Roman
Rolland library, and the government hospital. It also houses Aayi Mandap. It is
in the green centre of the French town and its lush trees provide ample relief
from the scorching sun on a hot summer day. This park is the most appreciated
public area in the town. Strolling under the cool trees is as dynamic as it gets
unless people resh to the spot when an occasional movie is being shot.

All the rooms are specious and furnished with exclusive designer fabrics
of modern styles. The room either have king size or double bed. The entire linen
to the room is changed daily and when the guest check out. A console is
provided on the bed size table through which the entire electrical operations
including the signage and AC temperature can be controlled with ease. Standard
and deluxe rooms are equipped with 26’’ LCD TV and suite rooms are
equipped with 32 LCD TV. The bathroom at Accord hotel are ultra modern in
design and equipped with best sanitary fittings and fixtures with round the clock
running hot and cold water. All the standard rooms are provided with shower
cubicle and studio romms with bath tub. The Accord suite has Jacuzzi facility
and most modern shower chambers .

BUSINESS CENTRE
There is a very professional ambience on the first floor. The board room on the
first floor is styled for a more business class environments with an executive
business centre attached to it.
LOBBY

The lobby is spacious and beautifully designed with Warm Asian Light fixtures
artic rafts and leaf motif mural abstract. The entire flooring of the lobby is laid
with granite. The main lobby is 2288 sq.ft and lobby created for the conventions
is 1830 square feet in dimension.

➢ The reception or information desk and travel desk operates round the
clock , on all days of the calendar year. The cash counter also exchanges all the
listed foreign currency and accepts all the major approved credit cards. Hotel
facilities and service include electronic safe.

SPA
Our massage therapies and de-stress programmed release the clogged up energy
centers. In short, a visit to the Spa awakens you to a tingling new
Sensation.
FITNESS CENTRE
With trainer led work outs, a strain drain Jacuzzi, the fitness zone at the
hotel is just perfect to unwind after a particularly hectic day! Their well

Opposite to the fitness centre is the salon which will be manned by

The swimming pool is beautifully designed with adequate under


water lighting. The hotel boasts of a fully-equipped contemporary fitness centre

swimming pool covered with a patio.

DEPARTMENTS I GOT TRAINED
First I reported to the Accord Hotel, Puducherry on
October 23, 2017. I met Mrs. KALAI VANI (Training
Manager). My induction period was held in training centre
for one day by Mr. SOMNATH ACHARIYA (Human
Resource Department).
My training period starts from 24 .10.2017 to
22.03.2018 in Food & Beverage production, Front office, Food
& Beverage Service.

FOOD PRODUCTION
After my induction period , at first I reported to Executive
chef( Mr. VINOD KUMAR) in Food production department
and I worked from 24.10.2017 to 30.11.2017 .

Works Done
I have worked in Bakery for 18 days. After that ,I worked in
Chinese cuisine for 20 days.
➢ I learnt how to make tulip ,caramel custard, breadroll
➢ I learnt how to clean the cold room.
➢ I peeled the onion, beans, potatos, carrots.
➢ I observed, what are the dish prepared for buffet.
➢ I learnt to cut the fruits and vegetables.
➢ I wiped the kitchen area.(for the hygienic purpose)

Mistakes done
➢ At the time of slicing the bread, I cut that from the
wrong side.
➢ While cutting the vegetable I cut down my hand.
➢ While frying the chicken oil has split to my hand.
➢ While I was frying the chicken, it got over fried and
color got changed.

Rectification
➢ My chef taught me how to cut the vegetables, fruits
chicken.
➢ My Chef taught me that how to fry the chicken. At
last, I rectify the mistake.
FRONT OFFICE
After my successful completion of Food Production
department, next I reported to Room Division Manager ( Mr.
RAJA PANDIYAN) in Front office department on
01.12.2017 and I worked till 21.02.2018.

Works Done
➢ The bell boy taught me to carry the luggage ,the I got
to learnt how to carry the guest luggage.
➢ I learnt about hotel rooms, types and tariffs.
➢ I learnt to attend the phone call.
➢ I learnt how to make registration card.
➢ I learnt how to make cold towel (face towel).
➢ I learnt how to scan the guest ID proof.

Mistakes done
➢ While carrying the guest luggage I did not hold it
properly so it fall down.
➢ While preparing the welcome drink, I forget to add
the sugar and guest have complained for that.
➢ While serving the welcome drink, forget to wipe the
droplets.
➢ I gave the face towel (Cold Towel) without checking
and guest complained that the towel was dirty.

Rectification
➢ My bell captain taught me how to carrying the guest
luggage in proper manner and taught me that how to
make a welcome drink and face towel.
➢ Associate taught me that how to do C form. At last, I
rectify the mistake.

FOOD & BEVERAGE SERVICE


After my successful completion of Front office department,
next I reported to Executive (Mr. GOPINATH
JAYARAMAN) in Food & Beverage department and I
worked from 23.02.2018 to 22.03.2018.

Works done
➢ I learn how to laying the cover.
➢ I learn how to wipe the cutlery, crockery and glasses.
➢ I learn how to clearance the sidestation.
➢ I learnt how to clean the table and how to set the
table.
➢ I learnt how to serving the bread ( naan, roti, phulka).
Mistake done
➢ I broke one glass at the time of wiping.
➢ I broke three plates at the time of carrying.
➢ At the time of setting the buffet cover I made a
mistake.

Rectification
➢ My senior steward taught me how to wipe the glass,
cutlery and crockery.
➢ My senior steward taught me that how to set the
buffet cover. At last I rectify my mistake.
CONCLUSION

CONCLUSION
This report based on operational aspects of an existing
Hotel, ACCORD HOTEL, PUDUCHERRY.
All the departments of the hotel have been categorized
under four major departments like Front Office,
Housekeeping, Food & Beverage Service and Food
& Beverage Production. I have successfully completed my
Training in three major departments ( Food Production,
Front Office and Food & Beverage Service ). Each
department has been studied properly and the report is made
with the following heading like ;
➢ Purpose of function of each departments.
➢ Procedures followed for various activities.
➢ Organizational structure of each departments.
➢ Photo gallery of each departments.

This report is not only important for the hotel industry but it
also brought in some changes through reading and observing
in training life which has made me a perfect hotelier. All the
information are collected by my self is true to my knowledge.
