We chose the ¼ flour and ½ water ratio because it represents a moderately sized sourdough.

Additionally, we didn’t want a large amount of sourdough, so we believed that size was good

enough.

During the fermentation process, glucose is the initial reactant. Since flour has glucose in it,

increasing the flour resultingly leads to the bread’s elevation. This is due to the glucose

supporting the production of carbon dioxide. The initial process is glycolysis, which requires the

electron acceptor, 2NADH, to be reduced to 2NAD+. So, glucose would be broken down to

make the pyruvates. Likewise, the production of energy takes place from 2ADP to 2ATP.

Decarboxylation then takes place to produce CO2 and acetaldehyde. The CO2 that is being

created creates bubbles that result in the bread uprise. 2 NADH molecules are then converted to

2NAD+ which then are used to reduce acetaldehyde and produce ethanol. Meanwhile, the

process takes place, ethanol evaporates. With this, the regeneration of NADH can take place and

allow glycolysis to continue and make more ATP.

Ben was a young child who lived under a bridge. He had no parents; he had no family. He was

impoverished. Ben was infamous for looting items from families. One day, he decided to look

for scraps in the forest, and he found The Rock. They were both impoverished, scouting for food.

Subsequently, berries were found in the forest, but there was a minimal number of berries.

Without realizing it, The Rock jumped on Ben, hurting him with his large, muscular arms. Ben,

subsequently, died at age 10. He was, after not too long, reborn as bread. The Rock, too, died due

to hunger and was reborn as bread. Ben and The Rock met up, with me and Juliana owning him,

while Steven and Andrew own The Rock.
