Chicken Wings (Appetizer)

Chicken Wings

• 500 grams chicken wings


• Salt
• Black pepper
• 150 grams all-purpose flour (1 cup)
• 1 tbsp garlic powder
• 1 tbsp onion powder
• 1 tbsp cayenne pepper
• Oil, for frying

1. Rinse wings under cold water then pat dry with paper towels. Place wings on a baking
sheet lined with a cooling rack then season wings on both sides with salt and pepper.
Refrigerate for 1 hour.
2. In a shallow bowl, stir together flour and spices then season with salt and pepper.
Working one at a time, coat chicken in flour mixture.
3. In a large pot over medium heat, heat 2” oil until shimmering (about 350°) Working in
batches, fry chicken until deeply golden and cooked through, 8 minutes.
4. Drain on a paper towel lined plate.

Honey Garlic Coat

• 2 tbsp oil
• 4 cloves garlic, minced
• ½ cup honey
• 3 tbsp soy sauce
• 1 tsp black pepper

1. In a small saucepan over medium heat, heat the oil and garlic. Sauté to soften the garlic
but do not let it brown.
2. Add the honey, soy sauce, and 1 tsp black pepper.
3. Simmer together for 5-10 minutes, remove from heat and allow to cool thoroughly.
Cheese Sauce

• 64 g milk
• 1 tbsp butter
• 1 tsp Salt
• 1 tsp Black pepper
• 1 tbsp Cayenne pepper
• 100 g Cheese spread

1. In a pan, add all the ingredients and continuously stir until the milk and cheese spread
has combined.

Garlic Mayo (Garlic Aioli)

• 32 g mayonnaise (1/4 cup)


• 2 Cloves garlic, minced
• 1 tbsp Lemon juice
• ½ tsp Salt
• ½ tsp Ground black pepper

1. Mix mayonnaise, garlic, lemon juice, salt, and pepper in a bowl. Cover and refrigerate
for at least 30 minutes before serving.

Gravy

• 2 tbsp butter
• 3 tbsp all-purpose flour
• 1 piece beef cube
• 1 cup water

1. Heat a saucepan and put-in the butter. Let the butter melt under low heat.
2. Add 1 tablespoon of all-purpose flour and cook in low heat while continuously stirring
for 7 to 8 minutes or until the colour turns medium brown. There is a tendency that the
flour might burn when overcooked or if high heat is applied. Be extra cautious.
3. Add the remaining flour and continue stirring.
4. Gradually add water and chicken cube. Continuous stirring is needed to prevent lumps
from forming.
5. Put the heat to medium and bring the mixture to a boil. Cook for 5 minutes more while
stirring once in a while until the texture thickens.
