in the Nestlé group, they prioritized quality. There are over ten million people
throughout the world enjoying Nestlé’s products each and every day. Nestlé
conducts business on a global scale; everyone pays careful attention to the
cultural bias and personal tastes of each country, because each food culture is
based on the distinct characteristics of that particular region. However, it will
not go too far in the pursuit of food safety and quality management. Nestlé has
attained a world-class level by applying “Nestlé Quality Management System''
to all their products. Nestlé respects all relevant laws and regulations of each
country, but also implements their own independent high standards of total
quality management throughout every aspect of the manufacturing process,
from raw materials to end products, in order to consistently bring safe and
quality products to consumers around the globe.

Furthermore, they are continuously “improving” their products (KAIZEN) in


the global network, which the headquarters of the quality management
department in Switzerland, and through the performance of regular inspections
that ensure their quality management system is functioning at the highest level.

interest in the behavior, beliefs and actions of Nestlé behind brands in which
they place their trust.

Quality is everybody’s commitment

Demonstrates its commitment towards quality by practicing and living what


they reach. All Nestlé functions across their Value Chain are fully responsible
for observing mandatory principles, norms and instructions for maintaining
agreed Quality standards and for constantly improving them. Their quality
personnel at all levels are the guardians of Quality Food Safety and Regulatory
Compliance. They promote quality awareness, assess, performance, and
challenge the organization to sustain and improve quality standards. They
communicate their quality standards to their Business Partners who are expected
to share the same commitment to quality and to meet their requirements
consistently.

Quality is to strive for zero defects and no waste

They focus on facts and results and they strive for zero defect and excellence in
everything they do. They adopt a “no waste attitude” and they constantly look
for competitiveness and opportunities for continuous improvement of the
Quality Standards delivered to their customers and consumers. They provide
adequate resources equipment procedures and systems to ensure high quality
standards. They build the necessary competence and technical skills. They
develop training and teamwork that are crucial to the successful implementation
of these standards and to the achievement of excellence and competitiveness.

Quality is to guarantee food safety and full compliance

They enforce full compliance with the mandatory standards and principals of
their quality management system, which include Food Safety Regulatory and
quality requirements in every step of their Value Chain. They measure their
quality performance as well as the satisfaction of their customers and consumers
by listening to them. Shortcomings and mistakes are analyzed and trigger an
immediate action plan for correction and improvement. Their quality
management system is aligned with international standards and full
transparency is ensured through verification by independent external bodies.

The NQMS is composed of three main elements:

The Quality Standards capture the knowledge and expertise of Nestlé


professionals to ensure a consistent application of what we know. Quality
standards incorporating centrally established generic and product-specific
requirements are managed through locally defined operating quality manuals.
Country specific standards, based upon local regulatory requirements, are
incorporated at the local level.

A Continual Improvement Management Cycle to ensure an effective and


efficient management of Quality processes, to measure performance, and drive
the enhancement of our Quality culture.

A Process-Based Management System encompassing the whole value chain in


which all functions are responsible to define and manage the processes they
own which can impact on product safety, compliance and consumer delight.
Support Functions provide assistance, expertise and tools in order to meet the
NQMS requirements and to achieve the quality objectives.

From farm to fork . the Quality Management System starts on farms. They
have a long history of working together with farmers in rural communities to
help them improve the quality of their produce and adopt environmentally
sustainable farming practices. The Quality Management System not only
ensures our ongoing access to high quality raw materials.It also enables farmers
to protect or even increase their income.

Quality by design Quality is built in during product development according to


the requirements of the consumers and following all food safety and regulatory
requirements. Nestlé‟s R&D network applies in this “Quality by design” to all
of theproducts. Good Manufacturing Practices

Good Manufacturing Practices (GMP) to ensure quality and food safety.


GMP covers all aspects of manufacturing, including standard operating
procedures, people management and training, equipment maintenance, and
handling of materials.

Hazard Analysis and Critical Control Points

the internationally recognized HACCP (Hazard Analysis and Critical Control


Point) system to ensure food safety.This preventive and science based system
identifies, evaluates, and controls hazards that are significant for food safety. It
covers the entire food production process from raw materials to distribution and
consumption. The HACCP plans and systems are verified by external
certification bodies against the international ISO 22‟000:2005/ISO 22002-1
standards.

Consumer Users carry information to ensure that they are used safely with the
highest level of quality for the consumer. Consumer services . The worldwide
consumer services organization ensures that we can immediately respond to any
consumer inquiry, question or concern. The labels of all Nestlé products invite
our consumer to talk to Nestlé, and provide our address or telephone number.
The quality and safety of our products is our top priority.

Nestlé must incorporate the highest possible standards all along the supply chain
– from raw materials, to manufacturing, packaging and distribution, to the point
of consumption. Here are steps how Nestlé makes sure that the products you
enjoy are of the very best quality.

1. Raw Materials
Nestlé’s Quality Management System starts on farms. they have a long history
of working with farmers to help them improve the quality of their milk by
helping them introduce special quality controls, like cooling and automated
milking systems. Nestlé collects fresh milk from farmers at special Collection
Centres each day and tests the milk right on the spot to confirm its quality. The
higher the quality of the milk the more we pay the farmer!

2. Careful Transport
Nestlé’s 19,000 litre milk tankercollects milk from the Collection Centres and
transports it to the factory: the tanker is specially designed to ensure that milk is
kept in the best condition during transport!

3. The Nestlé Factory Laboratory


Every Nestlé factory, all around the world, has a special Laboratory.
Immediately on arrival at Nestlé’s Valsayn factory milk is subjected to several
tests by our Laboratory to ensure that it is of the highest quality, including an
alcohol test to determine levels of bacteria and a visual test to ensure
cleanliness. The Laboratory takes samples to determine fat content, bacterial
load and other important quality concerns. Only milk meeting Food and Drug
standards is accepted by Nestlé’s factory.

4. Sterile Manufacturing Environment


The milk has been accepted by the Laboratory it undergoes several processes to
ensure quality. It is Clarified to remove all foreign matter, then Pasteurised to
kill harmful bacteria. Milk then goes through the Separation Process and is
Standardised so it meets all the requirements for the composition of fresh milk.
Then comes UHT (Ultra High Temperature) Sterilisation, which kills bacteria
and other organisms while maintaining the nutritional value of the milk. Finally
the milk is Homogenised to ensure that it does not separate.

5. Juices and Drinks


The Orchard juices and drinks are made by reconstituting fresh fruit
concentrates made from only the highest quality fruit and contain added
vitamins to make them even more nutritious. These products are made under the
same stringent conditions as our milks and use the same sterile packaging.

6. The Nestlé Incubator


Once products come off the factory production line they are held in a special
storage facility called the Incubator. Milk is held for 10 days; juices and drinks
for three days. During this period the Nestlé Laboratory conducts additional
quality assurance checks on each batch. Nestle’s products are released for
distribution to shops and supermarkets only after they have passed these final
quality control tests
7. Safe Transport
Individual packs are automatically shrink-wrapped into sturdy cases and placed
on banded, secured and sealed pallets to ensure that the product leaves Nestlé’s
factory in good condition!

8. Nestlé Quality Management System


Nestlé applies internationally recognized Good Manufacturing Practices (GMP)
to ensure quality and food safety as well as the internationally recognized
HACCP (Hazard Analysis and Critical Control Point) system to ensure food
safety, verified by external certification bodies against the international ISO
22’000:2005/ISO 22002-1 standards.

Objectives

● Ensure that the broad competences and knowledge within Nestlé are fully
leveraged in India and the Region.
● Create scientific knowledge to enable the formulation of effective and
implementable risk reduction strategies.
● Engage with concerned stakeholders to share knowledge and information
on emerging food safety issues and support a science based policy
framework.
● Support knowledge dissemination and conduct training programs

2.2 The role of R&D in Nestle quality and safety

Nestle’s top priority for their consumers is quality and safety. Nestle R&D
organization has a Quality and Food Safety Network which has several different
elements such as:

● Early Warning Network, which helps to identify and avoid potential


safety issues.
● Microbiological Safety Network, which provides fast and reliable
microbiology safety assessments.
● Analytical Methods Network, which helps to develop and improve
analytical standards.
● Global Analytical Laboratories Network, where Nestle has 25 regional
testing labs that helps to provide analytical data and Quality Assurance
support to operations and Nestle R&D.
