known as the King of Chefs
and the Chef of Kings!
His contributions to the culinary world include:
creating the menu, codifying the five mother sauces,
promoting farm-to-table cuisine, developing the
kitchen brigade, and instituting sanitation standards.
His influence on cuisine is felt in kitchens across the
world nearly a century later!

Do you have the fundamental kitchen skills? How skilled are you at
interviewing for a job? How prepared are you to write your resume, display
a portfolio of your work, or reach out to potential employers? Do you have
a network of people already in the industry you could talk to? If you want to
open your own restaurant or another business someday, what are the steps
you would take?

If these details make you anxious, don’t worry...Escoffier’s Career Services has
your back! We begin working with you soon after enrolling. Our mission is
to understand your goals and help you build a plan to achieve them. It’s OK if
you don’t have it all figured out yet...just follow the process and you’ll get there.

Once you’re clear on your goals, we’ll assign a dedicated Career Services rep-
resentative to assist you in getting an industry externship that’s aligned with
what you want. We don’t get the job for you, but we offer plenty of help with
developing your portfolio and honing your networking and interviewing skills.

What’s the difference between a degree and a diploma? Diplomas offer a basic level of academic coursework and are
shorter in length. A degree requires additional academic courses and has longer externship requirements.

They’re called the culinary and pastry ARTS for a reason: we’re artists when we’re in the kitchen. Like painters, sculp-
tors, and musicians, we’re constantly creating and experimenting. A playful and open mind is critical to expanding our
creative gifts.

And the food business is exactly that: a BUSINESS. There are practical skills you need, like understanding costs and
margins, making purchasing decisions, and building menus and other marketing materials. If you open a restaurant
someday, how do you “pitch” the idea? That has a structure, too.

All academic plans balance training in the culinary and pastry arts with practical business skills. This combination of
artistry and business knowledge gives you exactly what you need to pursue your passion as your vocation — and sets
you apart from your peers.

That’s why Escoffier has a full team of Success Coaches for our online
students, and Advisors for our Austin and Boulder campus students. Our
mission is to help you get through any roadblocks to your success, to get you
to the finish line of graduating on time.

Culinary school is a commitment. You need to allocate time for studying,


cooking, delivering your work to Chef Instructors, and collaborating with
fellow students.
