Performance Test

Specific Instruction for the Candidate

Qualification BREAD AND PASTRY PRODUCTION NC II

Unit of Competency PREPARE AND PRODUCE BAKERY PRODUCTS

General Instruction: Given the necessary ingredients, tools,


supplies/materials and equipment, you are required to bake a Soft Roll
(Dinner Roll) in accordance to the enterprise standards.

Time Duration: 1 hr.

Specific Instruction:

During the demonstration of skills, the candidate:


1. Wear appropriate Personal Protective Equipment (PPE).
2. Prepare/Clean the equipment/tools/utensils and materials used.
3. Preheat the oven to 150-200˚C for 15 minutes only.
4. While you are preheating the oven, measure the needed
ingredients.
5. Sift the flour first before you measure or weigh.
6. Add yeast into evaporated milk. Set aside.
7. In a large bowl cream sugar and butter until light and fluffy. Add
egg.
8. Combine flour and salt. Stir slightly.
9. Pour flour mixture into a flat surface table. And make a well at the
center.
10. Add butter mixture and milk mixture. Mix all the ingredients
until well blended. (if a dough cutter is available, use a dough cutter
in mixing the added ingredients)
11. Knead the dough until all ingredients are incorporated or until
it becomes smooth in texture.
12. Place on a bowl and rest for an hour for proofing or to double its
size.
13. Portioned dough for about 12 pieces and shaped to your desired
shapes. (you may add fillings like, cheese and hotdogs)
14. Place the dough into a lightly greased baking sheet and let it
proof for about an hour. Brushed egg wash or milk wash
15. Bake the dough for 15-20 minutes or until it’s done.
