Storing Cakes

At the end of this lesson, you are


expected to:

• store cakes in accordance with


establishment’s standards and
procedures;
• identify storage methods in accordance
with product specifications and
established standards and procedures.
Cakes
• Cakes are rich desserts. It is baked, and it
contains ingredients such as sugar, eggs,
flour, and oil.
Factors which can affect the
appearance of your decorated
cake:
Sunlight and florescent light
• Sunlight or fluorescent light will cause some colors to
fade.
Humidity
• It can soften royal icing and gum paste
decorations.
Heat
• It can cause icing to melt and
decorations to collapse
How to Wrap and Store Cakes
Unfrosted Cake
• An unfrosted cake will store at room
temperature, wrapped in plastic wrap, for
24 hours. You can refrigerate it for up to 3
days.
Frosted Cakes
• Frosted cakes will store at room temperature
for up to 4-5 days when kept on a cake stand
with a cover.
Cut Cake, Frosted or Unfrosted
• When you cut a cake, moisture begins to escape and
cause the cake stale more quickly. To avoid moisture loss,
cover the sliced edges with more frosting or press a piece
of plastic wrap directly unto the sliced side and make sure
it sticks. Cut cake keeps for a little less time, about 3-4
days.
Cakes with filling
• Cakes with fruits toppings should be consumed
immediately, if not the cake will be soaked.
• Fresh fruit can also be added in between the
layers of the cake but this type of cake should only be
assembled within a few hours of eating it, the fruit will
ripen
• If the cake has a cooked fruit filling that does
not contain eggs, it can be stored at room
temperature for up to 2 days
• A cake with whipped cream filling should be
refrigerated and served the same day that it is made.
Keeping Cakes Fresh and Flavorful
Store when completely cooled.
• Cakes with frostings or fillings containing dairy products
should be refrigerated.
Store under cake cover or large bowl.
• If a cake has a fluffy cooked frosting, insert a knife handle
under an edge of the cake cover so it isn’t airtight.
Freeze unfrosted cakes.
• . For unfrosted butter cakes, cool completely, wrap in
heavy-duty foil and freeze. Foam cakes may be frozen in
the pan to prevent crushing. Cover tightly and freeze.
Unfrosted cakes may be stored in the freezer up to 6
months.
Freeze cakes with buttercream
frosting.
• Frosted cakes can be frozen in a tightly covered plastic
container. Or, place cake in freezer until frosting frozen.
Then wrap tightly in plastic wrap or foil and freeze up to 3
months.
Thaw cakes at room temperature.
• Thaw unfrosted cakes covered and frosted cakes loosely
covered for 2 to 3 hours at room temperature.
