PREFACE

The global mushroom industry has expanded very rapidly in the last two
decades by the addition of newer types of mushrooms for commercial
cultivation. However, mushroom as a vegetable is yet to find regular
place among the Indian consumers. Despite of favourable agro-climate,
abundance of agro wastes, relatively low-cost labour and a rich fungal
biodiversity, India has witnessed a lukewarm response in its growth. At
present, the total mushroom production in India is approximately 0.13
million tons. From 2010-2017, the mushroom industry in India has
registered an average growth rate of 4.3% per annum. Out of the total
mushroom produced, white button mushroom share is 73% followed by
oyster mushroom (16%), paddy straw mushroom (7%) and milky
mushroom (3%). Compared to other vegetables; per capita consumption
of mushrooms in India is meagre and data indicates it is less than 100
grams per year.

INTRODUCTION

PRODUCT SELECTION

Indian agriculture exits today has come a long way from its present image of being
non-commercial and traditional in its method of farming. The recent trends in
consumer behaviour surges the demand for high quality niche products thus
business and investment opportunities in this sector have suddenly jumped
manifold. In the present diet conscious era, mushrooms are increasingly considered
as a future vegetable owing to its medicinal and nutritional properties and the
consumer demand for mushrooms markedly expanded in the recent years.

Mushrooms are considered as a potential substitute of muscle protein on account


of their high digestibility. In addition to protein, mushroom is an excellent source
of vitamin-D which is not available in other food supplements. Mushrooms are low
in calories, fat free, cholesterol free, gluten free and very low in sodium. Minerals
such as potassium, iron, copper, zinc and manganese are high in fruit bodies.

Specific bioactive compounds in mushrooms are responsible for improving human


health in many ways. These bioactive compounds include lentinan in shiitake,
lovastatin in oyster, lectins in white button mushrooms, acidic polysaccharides in
wood ear and many more. All these compounds have immunomodulating
properties and promote the immune function of the human body against the cancer
risk and tumor growth.

Even as the mushroom production and consumption are on the rise in rest of the
world, India witnesses a lukewarm response in its growth. Mushroom industry in
India is overwhelmingly focused on white button mushroom which is a highly
sophisticated and capital-intensive activity.
The recent production data (official data of ICAR-DMR, SOLAN) showing that,
the share of button mushroom in India is maximum amounting to 73% followed
by oyster mushroom which contributes about 16%. There are two main types of
mushroom growers in India, those who are growing white button mushroom round
the year under controlled conditions and seasonal growers who are growing button
mushrooms during the winter seasons in north western part of India.

 INTRODUCTION OF THE PRODUCT

Truly mushroom presents one of the tastiest exotic range of mushroom chips that
will make you comeback for its irresistible fusion of authentic spices.
Truly mushroom flavoured chips are rich in bioactive such as, lectins which helps
you to improve & promote your immune system.
Moreover it is low in calories, gluten free, cholesterol & fat free as well as it has
rich sources on minerals such as zinc,copper,manganese,iron,potassium & also
contain vitamin D.
Truly Mushrooms chips are considered as a potential substitute of muscle protein

Truly mushroom offers mainly three types of flavoured mushroom chips these

MARKET ANALYSIS

There exit a very large market for chips & they can be sold at various retail outlets,
pan shops, bus stands, railway stations, etc. There also exits institutional market
consisting of clubs & other institutions, school & college canteens, bars & pubs,
railway & airline caterers, etc. Competition from organised sector is increasing but
local & small units have distinct advantages in terms of less overheads &
transportation costs, longer shelf life, quick access to market.

PROPOSED LOCATION JUSTIFICATION

 SITE LOCATION-we have selected the 1 arcade point kalawad road,


Rajkot, Gujarat (India) because from here we can get our raw materials
easily moreover through better transportation we can distribute & transport
our product to different locations quickly with less cost.
Moreover the infrastructure facility is excellent as well as 24 x 7 electricity & water
supply, which is the most important factor for producing our mushroom chips.
 LAND ACQUISITION-we have selected the Rented Property to start our
mushroom chips business just because it requires low maintenance costs.

INTRODUCTION

Production is a process of combining various material inputs and immaterial


inputs (plans, know-how) in order to make something for consumption (output). It
is the act of creating an output, a good or service which has value and contributes
to the utility of individuals. Production is the most important factor for producing
a product, thus it includes various steps in production from selecting the raw
material then converting it into the final finished good, after that it is packed &
stored in cool & dry palace from where it is sent to various location & areas for
consumption.

RAW MATERIALS

Raw material means the basic material from which a product is made. Hence
therefore truly mushroom also requires different types of raw material for the
production of its mushroom chips.

PRODUCTION PROCESS

 Selecting Best Quality Mushroom:-The first stage of making mushroom


chips starts with selecting the premium quality mushrooms that we purchase
from our supplier, after that when mushroom comes to our plant the quality
of mushroom is check by our quality control team.
 Washing of mushroom:-After quality check is done the mushroom are sent
to washing area where all the dirt, stone particle, is removed from the
mushroom before sending it to slicing machine area.
 Slicing of mushroom:-In this stage the mushroom are sliced into pieces by
mushroom slicing machine into thin slices between 1.7mm-1.85mm, in order
to get the perfect shape for our mushroom chips.
 Blanching of mushroom:-At this stage mushroom are blanch into the
blanching machine in order to stop growing of any enzymes in mushroom
chips.
 De-watering:-In this stage mushroom are send into de-watering machine in
order to remove the excess water from the mushroom chips.

 Frying:-At this stage the mushroom are transferred into frying machine in
order to make crunchy mushroom chips.
 De-oiling: In this stage the excess oil in mushroom chips are removed by the
help of the de-oiling machine.
 Flavoring of mushroom:-After de-oiling the mushroom are then transferred
into flavoring adding machine to put different types of flavor for our
mushroom chips that are salted& black pepper, garlic, chocolate.
 Vacuum packaging:-In this stage the mushroom are packed into 45g of
packets by the help of vacuum packaging machine. After that it is stored in
cool & dry store room for further distribution.

The marketing department in a company is generally responsible for identifying,


attracting and retaining customers.

The marketing department perform the research to identify target markets & how
to promote items to them. They also conducts competitive analysis to compare the
company’s solution to those of other providers.

Marketing department focuses on brand or product promotion of company,


moreover it develop advertising & public relations plans to achieve
communication goals, which may include increased brand awareness. These goals,
along with strategies & specific promotional tactics, are laid out in a plan.

Most importantly marketing department focuses on building customer retention,


which ultimately helps in systematic approach involving collecting data, analysing
it, targeting customers with specific messages, and coordinating sales and service
activities.

market and there is an idea in the market that chips are very harmful for the
health.so a lot conscious people do not take chips & many parents do not feel
comfort to give this to their children.

We want to launch mushroom chips with high quality& it will be harmless. The
product quality is higher comparative to the other competitors, because our main
ingredients is mushroom which is totally new flavour with delicious taste.

In the segmentation stage, we are supposed to divide the total market then we

made from the chosen high quality mushroom to assure the benefit it contains
for in body.

Quality: That we are first assure in our product. The product quality is very high,
Because our main ingredients is Mushroom which is good sources of nutrition and
Mushroom Chips has the highest level of Protein, Fat, Saturated fat, Carbohydrate,
Sugar, Energy, Cholesterol, Sodium and it is very much essential for specially kids
and young age people. Each and every process of the production is done by
automatic machine.
Features: The Mushroom chips is verified in two ways, first by the size 1- Kids.
2- Family and second by the taste of the product and second by the taste of the
product 1-classic, 2-sauteed garlic, 3-dark chocolate.

Design: We will keep the shape of Mushroom Chips like original Mushroom,
which will help the consumers to understand that this chips is made from 100%
natural Mushroom and it will satisfy them.

Product mix is the entire collection of product items that a particular company
offers for sale to the customer or buyers. OR in other words it is the total assortment
of product & services marketed by a company.

Branding is one of the most important aspects of any business, large or small, retail
or B2B. An effective brand strategy gives you a major edge in increasingly
competitive markets. For a new product to the market we believe the Branding
works like a boosting and more powerful weapon to compete with the current
competitor. Branding makes it possible to create a mental picture about a product
in consumer’s mind. Brand represents the consumer’s perceptions and feelings
about a product and its performance.
Brand Name: We have selected “Truly Mushroom Chips” as our brand name.so
when people think about their health, they remind the name of truly mushroom
chips.
As we aware that once the brand got famous many of duplicate brand will try to
come into the market with the same name if the name is not registered. So, to
protect the brand name first of all, we will register our brand name. We also select
a logo for our brand, and this is:-

Brand Strategy: Our product will be a new local brand product as we offer it with
a new category (Mushroom Chips) and a name (Truly mushroom chips).

Actually Labelling means delivers any product message to the customer. It


includes price level, manufacture date, expire date, which value added on that
product like vitamin, mineral & which element used to produce of the product as
well as Company address etc.

Truly mushroom uses the eco-friendly primary package for its product, thus
Primary packaging is the main package that holds the food that is being
processed. Moreover it also protects the product from getting spoil as well as it
helps to attract the customer towards one’s product & make easy for the customer
to differentiate between other products of same category that are available in the
market.
 TRANSPORTATION PACKAGE
Transport packaging is the most important factor for distribution of product from
the firm to its end customer. Moreover it protects the goods from getting tamper
or destroy while in transit, hence truly mushroom is stored & transported in
corrugated boxes containing 50 units of 45g of mushroom chips packets of all
three flavours..

MARKET TESTING

The Test marketing is a tool used by the companies to check the viability of their
new product or a marketing campaign before it is being launched in the market on
a large scale.
The market test is generally carried out to ascertain the probable market success in
terms of new product’s performance, the level of acceptance of the product,
customer satisfaction, and the efficiency of the marketing campaign.
This test is conducted to know the consumer behaviour in terms of:-

Trial: Whether a consumer will try a product, at least once.

Repeat: Whether the consumer will repurchase it after the trial.

Adoption: Whether the consumer accepts the product and will purchase it again.

Purchase Frequency: How often the consumer will buy the product.

To test the product in the market “Truly mushroom” will conduct the following
tests:-

 Controlled Test:-
Under this test, the truly mushroom select certain stores in different geographic
areas and ask them to keep its new product into their stores in return for a fee. The
truly mushroom controls the shelf position, displays, point of purchase promotions
and pricing.

 Test markets:-

human resources, Orienting , training, compensating, Providing and incentives,
appraising, retaining, Career, Quality of Work Life, Employee Discipline, black
out Sexual Harassments, human resource auditing, maintenance of industrial
relationship, looking after welfare of employees and safety issues , communicating
with all employees at all levels and maintaining awareness of and compliance with
local, state and federal labour laws.

There are mainly two methods of training:-
On the job training:-
When the employees are trained while they are performing the job then it is known
as on the job training. Under this method the employees learn by doing.
Hence truly mushroom will follows the below method for on the job training
Induction or orientation training:-
Induction or orientation is a process of receiving & welcoming an employee when
he first joins the company & giving him the basic information he needs to settle
down quickly & happily & start work. The purpose of this training program is to
make the new employee feel at home & develop a feeling of belongingness thus
proper orientation enables the new employee to develop cordial relationship
between the new comer & old employees as well as their superiors. Moreover it
also helps to build up the confidence of new employee.
Off the job training:-
Off the job training means training the employees by taking them away from their
work position which means employees are given a break from the job & sent for
training.
Vestibule school:-vestibule school means duplicate model of organisation.
Generally when the extensive & delicate machineries are involved. A dummy
model of machinery is prepared & instead of using original machinery employees
are trained on dummy model.
Simulation:-Simulation is any artificial environment exactly similar to the actual
situation. There are four basic simulation techniques used for imparting training:
management games, case study, role playing, and in-basket training.

WAGES AND COMPENSATION
Wages & salary administration is most important factor for the employees’ side
generally, there are two types of wage system they are:

Time wage system-This is the oldest method of wage payment. Under


this system, the wage are paid according to the time spent by workers
irrespective of his output of work done.

Piece wage system-Under the piece wage method the wages are paid on the
basis of the output. They are paid on the basis of the number of units
produced by them irrespective of time spent on the job.

 Our decision:-

Truly mushroom pays the following.

Wages to workers: - -₹ 5000 per month.

Salary for supervisor-₹ 10000 per month.

Salary for general manager-₹ 25000 per month.

Compensation

In case of any accident & injuries occurs during the time of working in the plant
then compensation will be provide according to the compensation act 1923.

EMPLOYEE WELFARE

Employee welfare means anything done for the comfort and (intellectual or social)
improvement of the employees, over and above the wages paid.
In simple words, it means “the efforts to make life worth living for workmen.” It
includes various services, facilities and amenities provided to employees for their
betterment. These facilities may be provided voluntarily by progressive
entrepreneurs, or statutory provisions may compel them to provide these amenities.

According to ILO, “Employee welfare should be understood as such service,


facilities and amenities which may be established in or in the vicinity of
undertakings to enable the persons employed in them to perform their work in
healthy and peaceful surroundings and to avail of facilities which improve their
health and bring high morale”.

Employee welfare can be divided into two categories, namely:


Statutory: - The government has passed a number of legislations in order to set
minimum standards of safety and welfare for the employees at their workplace.
Some of them are:
Prevention of sexual harassment at workplace (POSH)
It is an employee right to be protected against sexual harassment at workplace
according to the sexual harassment of women at workplace (prevention,
Prohibition and redressal) act 2013.For this purpose the organisation with 10 or
more employees should constitute internal complaints committee for helping the
victims of sexual harassment. Such victims are also protected under the section
354 of the Indian penal code, by punishing culprit with imprisonment.

Maternity leave
According to the section 5 of the Maternity benefit Act 1961, it is woman employee
right to claim for maternity leave for 26 weeks for 2. Such woman employee can
apply maternity leave just eight weeks before the date of are expected delivery. It
is the duty of employer to pay full salary for a woman employee during her
maternity leave for 26 weeks. In case of miscarriage or medical termination of
pregnancy, a woman is entitled to live with wage or salary for a period of six weeks
immediately following that they offer miscarriage or her medical termination of
pregnancy.

Moreover providing safe drinking water, first –aid, proper fire safety system etc.

Voluntary:-
The employers voluntarily have provided welfare amenities to the employees
besides the statutory facilities. Hence truly mushroom will provide the following
welfare facilities:-

as methods to be kept in mind while starting the mushroom chips business from
scratch.in this report we have mentioned the following details such as selecting &
procurement of the product, land, raw materials as wells the machineries to
produce mushroom chips. Also selecting an appropriate manpower, their training
& development, providing welfare facilities as well determining fair wages &
compensation policy.
Moreover we have discussed about the most important factors to be considered
that are marketing & finance department which also said to be heart of the project
report, in this we have mentioned different marketing & pricing strategies,
positioning of product, channel of distribution, product line, as well as various
sales promotion techniques.
Whereas in finance department we have mentioned the income statement, balance
sheet, total cost of project, break-even point statement etc.
Thus this product project report gives us detailed insight about how to select &
start the business with initial investment while keeping in mind the opportunities
& changing business environment with proper SWORT as well as PESTEL
