SCRIPT IN PROVIDE WINE SERVICE

Bar attendant: Good morning Ma’am/Sir welcome to LNHS restaurant! Do you have any table
reservation?

Guest: Yes!

Bar attendant: Under what name Ma’am/Sir?

1. Presenting the food menu and wine list.

 Present menu to each guest, ladies first


 Present the menu on the right side of the guest
 Menu should be presented right side up that is apposition to be read without turning them
 Wine list should be presented to the host or the person who requested for it
 Only 1 wine list for 1 table

Bar attendant: Excuse me Ma’am/Sir this is our food menu and wine list for your selection.

Guest: thank you!

Bar attendant: my pleasure, I will take your order whenever you are ready!

Guest: Great!

2. Taking the order

 When the guest seems ready to order, stand near the table.
 Stand straight

Bar attendant: Excuse me Ma’am/Sir if you are ready, may I take your order now?

Guest: yes please! For my main course I want …..

Bar attendant: OK, to complement your food may I recommend …( mention the name of wine) best
complement for your main course which is ______ ( mention the main course)

Guest: Yes please, give me one bottle.

Bar attendant: Excuse me Ma’am/Sir I repeat your order. For your main course You order____( repeat
the order of the guest) and for you wine you order ____( repeat the order of the guest)

Did I get your order right Ma’am/Sir?

Guest: Yes!

Bar attendant: Excuse me Ma’am/Sir can I get the menu?

Ma’am/Sir your order will take a little bit longer to prepare would you mind waiting.

4. Preparing the wine order.


 Red wine= prepare the wine accessories such as wine basket, red wine glass, wine cloth,
wine opener small dish for cork and round tray
 White wine= make sure wine is chilled, wine bucket with stand( with cube ice and little
amount of water just enough to chilled the wine) white wine glass, wine cloth, small disht
for cork, wine opener and round tray.

5. Presenting the wine

 Position on the right side of the guest and hold the bottle wrapped with wine cloth in upright
with the label facing the guest.

Bar attendant: excuse me Ma’am/Sir may I present the wine which is __________ with________
with the vintage year of ______ made from______nbest complement to your main course which is

6. Open the bottle of wine.

7. Pour an ounce for sensory evaluation.

Bar attendant: May I pour an ounce for your evaluation?

 After pouring an ounce let he guest evaluate the wine

Bar Attendant: would you like me to pour again to complete your shot?

 Fill the wine glass ¾ full

Bar Attendant: Enjoy your wine Ma’am/Sir.

Guest: sure I will.

Presenting the Bill

 Review first before presenting with the correct amount of charges


 Present the bill to the guest. Place it in a bill folder.

Bar Attendant: Excuse me Ma’am/Sir here is your bill

Taking the payment

 If cash payment, mention the amount you receive

Bar Attendant: I Receive php ____ I’ll be back for your change and receipt

Presenting the change and receipt

Bar Attendant: Excuse me Ma’am/Sir here is your change and receipt

Guest: Thank you

Bar Attendant: My pleasure, we hope you had a wonderful dinning experience with us

BIDDING GOODBYE
 Pull the chair as the guest stand up.

Bar attendant: Thank you for coming, we hope to see you again.
