Bistro Head Chef/ Trainer

Terms: Contract

Salary: 24k per annum

Responsible to: CEO

Responsible for: Student Placements, Staff, Volunteers and Customers

Location: National Star College

Hours: 5 days per week 5 days (Tues-Sat) working 42 hours per wk. A late start will
be required on Fridays and Saturdays to cater for an evening service

Overall Purpose of the Role:

To manage and deliver food and drink at the National Star Bistro, to the higest
quality and in line with financial requirements securing a sustainable business model.
This will also require the management of the realistic working environment for
students and volunteers at the Bistro

Key Responsibilities:

 Lead on all aspects required to deliver a quality food offer to customers at


National Star Bistro that is in line with financial requirements and offers a
sustainable business model for Wiggly Worm and its partners.
 Manage staff, volunteer and student placements and rotas
 Manage supplier relationships and ordering for the effective delivery of the
kitchen and food service areas.
 Engage and secure support from all stakeholders/partners to ensure quality
delivery

 Implement and monitor project initiatives to agreed budgets, specifications
and timescales
 Manage and mitigate risks specifically Health and Safety and Food Safety on
site as well as the protection of vulnerable young people and adults.
 Establish and maintain productive relationships with a wide range of partners
and stakeholders
 Advise and liase with CE, Front of House Manager and Head Office
accordingly to avoid and mitigate challenges that may occur.
 Communicate progress regularly and effectively – both to those within the
organisation and to stakeholders and partners.
 Contribute to the wider planning and delivery process with the organisation
 Provide support to the senior team of The Wiggly Worm as an when required
 To weekly input, manage and report food costs, budgets, takings
 Able to impart knowledge and promote learning

Other requirements:

This job will require an understanding that this is a new venture within a third sector
partnership working with a unique volunteer and student workforce. The post holder
should be supportive of the aims and values of the charity and be committed to the
safeguarding of vulnerable people.

Person Specification
1. Experience (previous roles, types and organisations)

Essential:

 Proven experience of managing a busy Kitchen to a minimum 2 AA Rosette


Standard

 Effective budget management

 Management of Food Safety Systems and Health and Safety Systems

 Satisfactory Enhanced CRB check

Desirable:

 An understanding or experience of all or any of the following:

 Adult Education, Community Projects, Cooking Clubs, Multi Agency Projects,


Food Sustainability, Local Food and Farming, Teaching, working with adults
with learning disabilities.

 Experience of engaging communities and education in previous employment


either directly or as part of media activity or corporate responsibility agendas

2. Special Attributes (specific job related skills)

Essential:

 Strong understanding of project and contract management including the ability


to identify risks and issues, mitigating or escalating these as appropriate

 Strong oral and written communication skills with the ability to suit the
audience

 Sound analytical skills and the ability to understand and identify key issues

 The ability to present complex information and data to a variety of audiences

 Able to work in a remote setting from HQ and work autonomously with little
