Ketoprak (Indonesian Food)

I have know this food since I was very little. This is one of Indonesian Traditional Street Food.
Ketoprak is actually vermicelli noodle mixed with fried tofu, bean sprouts covered in peanut sauce and
sweet soy sauce,
then garnish with fried shallots, and prawns crackers as the condiment.

 100 gr of soft vermicelli, soak in cold water

 1/2 package of bean spouts

 1 package of Japanese Firm Tofu "Morinaga" brand, cubed

 Plain flour, as needed


 Fried prawn crackers

 Rice Bran Oil

 Fried shallots

 Peanut sauce:

 3 heaps tbsp of creamy peanut butter

 1 tsp of garlic powder

 1/2 tsp of Tamarind paste

 1/2 tsp of salt

 Hot water, as needed

Notes
If you use normal/hard tofu, you don't need to cover them with flour before frying. You can lightly pan
fried them without flour coating.

how to make fresh salad with peanut sauce

Ingredients:

    * 1 fresh red or green semihot chili, cut into thin slices
    * 1 clove garlic, sliced
    * 1 teaspoon salt
    * 2 small slices kencur, soaked in water for thirty minutes (optional)
    * 3 tablespoons crunchy peanut butter
    * 1 teaspoon tamarind, dissolved in 1 tablespoon water
    * 2 teaspoons sugar
    * 1 cup thin-sliced cucumbers
    * 1 cup fresh bean sprouts
    * 1 cup lettuce, broken into bite-size pieces

Instructions:

    * Crush the chili, garlic, salt, kencur and peanut butter in a mortar so it’ll become the sauce of
the dish.
    * Add the tamarind liquid and sugar. Mix well.
    * Toss the sauce with the vegetables until well mixed. Serve chilled or at room temperature.

Makes 4 servings, with other dishes.
