SERVIETTE FOLDING. Fold 10 serviette folding style in 3 minutes.

CHANGING SOILED( DIRTY) LINEN INTO A FRESH ONE’S. Change the dirty table cloth
into a fresh linen properly.

Activity # 3
TAKE TABLE RESERVATION THROUGH TELEPHONE. Use the sample script below as
guide..

R:Good Morning/ Afternoon/Evening Joanne’s Restaurant, this is Peter Pan speaking how may I help you?
G: Yes Good morning/afternoon/ evening, I would like to have a table reservation please.
R: Yes sir/ma’am, may I know the name who will make the table reservation?
G: John White
R: Mr. John, when are you going to use your table reservation?
G: This coming Sunday, October 28, 2017
R: Sir John, on what time are we expecting you will arrive in our restaurant?
G: at exactly 6:00p.m in the evening
R: Mr.John, please hold for a moment, I will check the reservation book if that date and time is available (assume you are checking the reservation
logbook or the computer).....Thankyou for waiting Mr. John, this coming Sunday October 28,2016, 6:00 pm is absolutely available.How many are we
expecting in your reservation Mr. John?
G: two
R:Mr. John, do you have any special request for your table location sir? We have a nice table near the window and it is a smoking area, overlooking the
beautiful scenery of a mountain view or you can have the table near the entrance where you can see our butterfly garden dome which is a non-smoking
area?
G:a table near the butterfly garden dome please/ a table overlooking the mountain view
R: Sir John, do you have any special occasion that you are going to celebrate? So that we can prepare something that will surprise your honouree like
lighted scented candles perhaps or a fresh of bouquet of red roses as your centrepieces
G: thank you for asking that, we are celebrating our 5 th year anniversary of our wedding, a simple lighted candle and a musical accompaniment on our
dinner will make that evening romantic.
R: Mr John, our restaurant offers American ,Russian and French Service, I would like to suggest the French with wine service to make your evening
more romantic and a night to remember.
G: I love that
R: Anything you will add to your reservation sir John?
G: None....that would be all.
R: Mr. John, May I ask your number so that I can call you an hour before the time of your arrival to remind your table reservation
G: 411-5252
R: Mr. John, may I repeat the details of your table reservation for your confirmation?
G: Yes
R: Table for 2 is already reserved under your name, Mr. John White, this coming Sunday, October 28, 2016 at exactly 6:00 o’clock in the evening,
location of the table is near the butterfly garden dome with special request of lighted scented candles and musical accompaniment and it is a formal
dinner with wine service for your 5th wedding anniversary and your contact number is 411-5252. Mr.John, did I get all the information right?
G: Yes

WELCOMING AND GREETING THE GUEST AND ESCORTING AND SEATING THE GUEST
By receptionist

W: Good evening sir. Welcome to Joanne’s Restaurant! Are we holding a reservation for you sir?

IF THE GUEST HAS NO RESERVATION(FOLLOW THESE SCRIPT)


G: No
R: How many are you in the party sir?
G: 1
R:May I suggest a table for you sir?
G: Yes please.
R:(You may ask any of these question to the guest)
1.Where would you like to sit Sir, near at the window or at the centre?
2. Where would you like to sit, in a smoking area or a non smoking area?
G: near at the window.
R: This way please (outstretching your hand towards the suggested tables)
(after reaching the suggested table ask the guest)
R: Will these table right for you Sir.
G: Yes
R: Have a sit sir (Proper way of pushing guest’s chair is by using your right knee, do the ladies first and then gentlemen)
(but if the guest answered NO, I don’t like these table)
R: Do you have any table that you would like sir?
G: Yes
R: Where is it sir?
G: that table
R: this way sir!!!

IF the guest HAS A RESERVATION


G: Yes
R: table reservation under whose name sir?
G: John White

(Assuming you are checking the reservation book or the computer)

AFTER CHECKING THE RESERVATION book or the computer

R: Thank you for waiting Mr. John , You have a table reservation under your name,we already prepared a nice table for you, for sure you will like it.This
way please( with arm outstretching towards thereserved/assigned/prepared table)

R: Will these table right for you Sir.


G: Yes

WAITER’S INTRODUCTION, TAKING PRE-DINNER DRINKS, LAYING SERVIETTES,
SERVING WATER, PRESENTATION OF MENU AND SERVING APPERITIFS.. Use the sample
script below as guide.

WAITER’S INTRODUCTION
By: Waiter
W: (Bring order slip and pad and stand on the right side of the guest).Good Evening Sir John! I am Peter Pan your food attendant for this evening. May I
lay the serviette on your lap sir? (when the guest doesn’t have reservation do the laying the serviette before adjusting cover).Sir would you like to order
our refreshing aperitifs we have dry martini, with the ingredients of gin and dry vermouth, garnish of green olive or you can try our vodka martini with the
ingredients of vodka and dry vermouth, garnish with the green olive.
G: I love dry Martini.
W: alright sir 1 dry martini for your aperitifs, I will be right back to serve your cold water.
(Place the aperitif order to the bartender for the preparation of the aperitif, cashier for recording purposes and waiter’s copy for personal reference.

W: Excuse me sir, may I serve your ice cold water.


G: yes
W: (done filling up) Thank you sir.

Get the bread and butter


W: Excuse me sir may I serve our complimentary bread of the house, the fresh roll with butter ( serve on the left side using the fork and spoon as tong
as silver service)
G: Yes
W: (done serving the bread) Thank you sir.

Get the menu


W: excuse me Sir, May I present our menu.(present it with the cover facing the customer and then open if the menu is book type,present it on the right
side of the guests with eye to eye contact)
G: Yes
W: (done presenting the menu) Thank you sir

Get the ordered aperitif from the bar then serve to the customer who ordered it

W: Excuse me sir may I serve your appetizing and refreshing aperitif, the DRY MARTINI.
