1. Discuss what mise-en-place is.


Mise-en-place (French pronunciation: [meez en plas]) is a French culinary phrase which means "putting
in place" as in set up. In professional kitchens, it is used to refer to organizing and arranging the
ingredients like cuts of meat, relishes, sauces, par-cooked items, spices, freshly chopped vegetables, and
other components that a cook or chef will require for the menu items that he or she expects to prepare
during his/her shift. This practice is also effective at home for easy preparation of a particular recipe or
activity.

2. Explain in your own idea the importance of mise-en-place for future food professionals.
As a future food professional, mise-en-place is essential because it gives us an idea of all the ingredients
we have prepared for a meal. To ensure efficiency and consistency, chefs use a mise en place. Mise en
place allows you to easily mix together all of your ingredients for cooking or baking in a seamless
manner. By doing a little bit of prep work before you begin cooking, you can save yourself a lot of time
and seamlessly move through the steps of your recipe.

ACTIVITY #2 Familiarizing with Appetizer Recipes

2. Enlist three appetizers that you believe you would want to try preparing.

3. On a sheet of paper, write a description for each appetizer you have selected; and explain why you
have chosen them.

4. Submit them to your instructor.

Here’s the three appetizers that I believe I would want to try preparing:

 4 minute Spicy Garlic Shrimp


Recipe is originally from the Food Network courtesy of Rachael Ray, but I tweaked it to fit our
tastes. Very quick & easy shrimp recipe that's done on the stovetop. I chose this because I love
spicy foods and shrimps it is something I want to try on.

 Ham Salad for Sandwiches


Great summer sandwich spread. Ham is mixed with smaller amounts of chopped vegetables or
relishes for sandwiches. This will keep in the fridge for 3-4 days. I chose this because this one is
common and a community pick recipe.

 Honey Barbecue Chicken Wings


These wings get loads of flavor from the slightly sweet honey-barbecue sauce they’re tossed in.
They’re just the tiniest bit sticky. I chose this because I want something sweet and juicy chicken
wings. Iwant to try this editor’s pick recipe.

1. Discuss the tips on preparing appetizers.
The following are some tips to consider when preparing appetizers:

 When to serve appetizers, think about foods that will go well together, but vary in flavor and
taste appeal.

 Since appetizers are frequently served at large parties, try to keep foods to which people have
common allergies either easily recognizable or off the menu.

 When going to serve a shellfish appetizer, don't disguise it, and make sure the shellfish doesn't
come into contact with other appetizers you are serving.
 Consider to avoid common allergens like peanuts and be certain if you do serve this to keep it in
a separate bowl or serving dish.

 It would be better to serve both hot and cold appetizers, but perfectly fine to serve all cold or all
hot dishes.

 For those planning a long party, or instances that guests have a long time to wait before eating a
meal, do consider that hot food tends to be more satisfying and can stave off hunger pains.

 Know that there are virtually thousands of appetizers you can choose from.

Ways to present appetizer attractively :

 Use Skewers
Using skewers allows us to create a visually inviting setting without having to take up as much
table space as we would if placing everything in individual compartments. Skewers can hold
meats, but they can also present a beautiful display of fruit or veggies. Add olives, banana
peppers, sandwich meats and cheese together as a creative alternative to a sandwich.

 Introduce Color
Infuse color into your presentation with a surprise ingredient. Add pineapple or dragon fruit on
a beef kabob to liven up the color. Garnish plates with a slice of fresh fruit or drizzle them with a
provocative color glaze.Fresh basil or parsley is also a favorite option to add a bit of color to the
plate. Other produce options can add a zest of color, such as carrots, oranges, raspberries, bell
peppers and spinach. This trick is especially effective if you use white or neutral serving dishes
because the colors pop.

 Put It in a Cup
Using small cups or shot glasses as the base for the appetizer. Swirl purple onion, spinach and
peppers together at the bottom of a shot glass topped with a cracker or mini bite for an artistic
look. Use bamboo tasting cups as an eco-friendly alternative for this tip. Cups also work wonders
as holders for dips to accompany your other appetizers.

 Roll Them Up
Many food presentation ideas are actually quite simple. Give the appetizers an impressive flair
by rolling them up. This can take the shape of pin rolls, lettuce-wrapped appetizers, cut wraps or
cucumber feta rolls. Stick a decorative pick into the center of each roll-up to keep them in place.

The ways in plating appetizers are:

 Consider color combination - Color combination is very important. As the purpose of the food is
to boost one's appetite (thus termed as appetizer), the color should be inviting.

 Check for creativity - Creativity will follow when color combination is well considered. Creative
presentation will help one crave for that food.

 Consider its taste - The taste will serve as basis for one to crave for the next food item to be
served since appetizers are served first in a formal dining experience.

 Consider the size of the plate - Size of the plate should match to the cuts of the appetizer.

2. Enumerate the guidelines on presenting appetizers.

 Nibble-worthy appetizers such as gourmet olives, cocktail onions, cheese and sausage slices,
stuffed grape leaves, cherry tomatoes, banana peppers and bacon wrapped scallops should be
placed on individual small, square ceramic plates.

 Decorative plates featuring gently sloping rims to prevent food from slipping off should be
chosen.

 A small bowl inside a larger one should be set for holding chips and dip.

 Potato or tortilla chips should be placed in the larger bowl while the smaller bowl should be
filled with dip or salsa.
 A crystal set for an elegant affair, or ceramic set featuring patterns such as seashells or chili
peppers for a themed event should be chosen.

 A large tray or platter should be filled with cut-up vegetables.


Sweet, dessert-inspired appetizers should be served on a tiered stand for an appealing
presentation.

Activity # 4 Familiarizing with Proper Storage Methods of Appetizers

Research about other ways or methods to store salads and appetizers to keep their freshness and
quality.

The other ways or methods to store salads and appetizer to keep their freshness and quality whether
appetizers and salad in raw or cooked condition are when if it is raw then it needs to be kept separated
from cooked. Never let the 2 of them mix. All prepared foods must be kept chilled until you are ready to
serve.Raw food and cooked food should be stored separately in the fridge. Bacteria from raw food can
contaminate cold cooked food, and the bacteria can multiply to dangerous levels if the food is not
cooked thoroughly again. Always store raw food in sealed or covered containers at the bottom of the
fridge.Salsa, guacamole, hummus or other dips or spreads can be stored in the fridge overnight without
losing flavor and without oxidizing if you vacuum seal them properly.

In storing appetizers, keeping the freshness of food is a challenge. Here are the ways to store appetizers
to keep their freshness, quality and taste:

 Angel-food and sponge cakes - They tend to shrink a little in freezer storage. Angel-food
cakes can be made from frozen egg whites. Freezing egg whites can be more practical than
freezing the cake itself. Defrost them by holding them overnight in the refrigerator or at
room temperature for about five hours. Then, these can be used in the same way as fresh
egg whites.

 Fruit Cake - Fruit cakes can be best kept fresh by placing them in freezer storage and thaw
them afterwards.

 Cookies - Mostly, baked cookies can be stored through a freezer or a refrigerator.

 Quick breads - Quick breads can be kept by freezing.
