Jicama Coleslaw

Ingredients:

3c Cabbage, sliced thin on slicer, #12


1 1/2c Jicama, julienned
1 1/2c Apples, julienned
3/4c Red Onion, thinly sliced
1/2c Veganaise
2T Cider Vinegar
2T Pineapple Juice
1/4 c Cilantro
1/3t Cayenne
1t Salt

Makes 2#
Method:

Combine all condiments to make dressing. Mix dressing with all vegetables and
allow mixture to marinade for 3 hours prior to service. This product can be prepared a day in
advance.
