CURRIED RED LENTIL SALAD

Dressing:
2 1/4 c. canola oil
1 1/2 c. red wine vinegar
2 Tbsp sea salt
2 Tbsp black pepper
3 Tbsp cumin
3 Tbsp dry mustard
1 1/2 tsp tumeric
1 1/2 tsp mace
1 1/2 tsp coriander
1 1/2 tsp cardamon
1 1/2 tsp cayenne
3/4 tsp cinnamon

Salad:
3 # 's dry red lentils
3 c. currants or raisins
4 1/2 c. red onion, small dice
1C. Fresh parsley, chopped
Combine dressing ingredients, mix well, set aside.
Wash lentils in cold water. Boil a small kettle of water, add lentils cook for 5 to 6
minutes. Rinse and drain well, combine with dressing. Add currants, parsley and
onions.
