Coming week is an International Father's Day, on June 21st 2020, so we request all the Daddy's

to join or be around while we wish to make this week special for all the Dad's.
This week children let us make something special for Daddy with us in the kitchen.
We will make healthy (1) creamy spicy cold watermelon soup (2) schezwan cheesy panini
sandwich (3) Choco Avacado healthy bites

1. Creamy Spicy Cold Watermelon Soup

Ingredients:
> 4 cups of seedless watermelon cubes
> 1 large cucumber, diced, (preserve half dices for later)
> 3 medium-size tomatoes, diced (preserve 1 tomato dices for later)
> 1 red bell pepper, diced (preserve half dices for later)
> 1/2 cup chopped green onion (preserve half for later) [for Jain recipe can use lettuces leave]
> 1 medium-size clove of garlic or 1 medium (1/4) size ginger
> 6-7 leaves of fresh basil (if you do not have basil use mint)
> 1 avocado mashed
> 1 cup of full cream
> 3-4 tbsp red wine vinegar (if you do not have red wine vinegar can use apple cider vinegar or
normal vinegar)
> 3 - 4 tbsp of olive oil + take little more for drizzling during the serving
> 1 - 2 tsp of sea salt or regular salt
> 1/2 - 1tsp of freshly grounded pepper powder
> 1 - 2 slices of jalapeno (optional)
> Coriander leaves or mint leaves or basil leaves for garnishing

Method:

Take a jug of a mixture grinder, add seedless watermelon, tomatoes, cucumber, red bell peppers,
a garlic clove or ginger, spring onions or lettuce leaves, mashed avocado, 3 tbsp of red wine
vinegar or apple cider vinegar or normal vinegar, basil leaves or mint leaves (whichever is
available), 3 tbsp of olive oil and churn it well. Then add cream and slices of jalapeno and churn
it till it gets smooth nice texture. Once done, transfer in a bowl, then season with sea salt or
regular salt or pink salt, freshly grounded pepper powder and mix well. Keep in a fridge and
serve cold and garnish with a drizzle of olive oil and leaves of coriander or mint or basil.
(2) schezwan cheesy panini sandwich

Ingredients:
> 4 - 6 panini bread or baguette bread or ciabatta bread or focaccia bread or Hot dog bread (can
use any one type of bread)
> 1 medium size onions (sliced and tossed)
> 1-2 medium-size garlic (sliced and tossed)
> 1/4 size ginger (juliennes and tossed)
> 1/2 cup carrot (juliennes and toasted)
> 1/2 cup mixed color bell peppers (julienned and toasted)
> 1/2 cup cabbage (shredded and tossed)
> 2-3 tbsp of schezwan sauce
> 1-2 tbsp of tomato ketchup
> 1 tsp of soya sauce
> salt to taste
> 1 tsp freshly crushed pepper
> 1/2 cup fried noodles
> 1/2 cup grated cheese
> butter

Method:
Switch on the gas, and take a pan & add 1 tbsp of butter then add onions, garlic, ginger, and toss
for 1-2 seconds. Then add carrots, mixed bell peppers, cabbage, and toss for almost 3-4 minutes.
And switch off the gas and then let it come to room temperature. Now add 3 tbsp of schezwan
sauce, 1-2 tbsp of tomato ketchup, 1 tsp of soya sauce, freshly crushed pepper, and salt to taste
(be careful while using salt, as sauces that has been added already have salt). Mix all the
ingredients well and prepare the stuffing.
Now take any bread mentioned, cut from one side, and have the opening mouth. Using a butter
knife, apply butter in the inner side of the bread, then stuff the stuffing, use fried noodles and
grated cheese. Then apply butter on the outer side of the sandwich and grill it in a griller. Then
apply butter and serve it with tomato ketchup or dip.
(3)Choco Avocado healthy bites
Ingredients:
> 1/2 cup mashed avocado
> 1/2 cup mashed banana
> 1/2 cup cocoa powder
> 3/4 - 1 cup of roasted oats
> 1 tbsp of honey (if required)
> 1 tsp of vanilla essence or extract
> 1-2 tbsp of milk powder

Method:

Take one deep bowl, take half a cup of mashed avocado, and mashed banana. Add half cup of
choco powder then add honey as per your taste requirement and vanilla essence. Mix all the
ingredients well and then add 2 tbsp. of milk powder and roasted oats till all the moisture gets
soaked. Once, the mixture gets the consistency to form the shape. Grease your hand with butter
or ghee, take a small portion of the mixture and then give round or oval shape or any shape that
you wish too. And serve it. You can store this for 15 days in the fridge.
