1.Millet Flakes Idly
Ingredients:
Any one of the following Flakes are suitable for the Recipe:
• Ragi (Finger Millet) flakes, Pearl Millet (Sajjalu)flakes, Foxtail (Korralu)
flakes, Kodo (Arikalu)flakes, Proso Millet (Varigalu) flakes, Barnyard Millet
(Udalu) flakes, Brown top Millet (Andukorralu) flakes, Little Millet (Samalu)
flakes, Great Millet (Jonnalu) flakes, Barley (Barley) flakes
• Suitable Chutney
Procedure:
• Take a cup millet flakes, ¼ cup urad dal and 1/2tsp methi in a bowl.
Wash nicely and soak for about 4 hours. Just 30 mins before grinding,
wash and soak poha with rest of the ingredients.
• In a mixer / grinder, grind all the soaked ingredients adding very less water.
if you intend to use same batter to make idly grind medium smooth.
Transfer to a container, add salt and mix well. Set aside overnight / 6-10
hrs for fermentation.
• Morning the batter would have fermented well. Mix well before pouring
into greased idly moulds.
To make Idli :
• Heat water in a steamer.Grease idli molds with oil .Pour the batter into
idli stand.
• Steam for 10-12 mins on medium flame.Prick a tooth pick,if it comes
clean it means its done.Allow it to cool a bit and remove from molds
using a spoon or knife.
• That's it soft, spongy and healthy millet idlii's are ready to serve. Serve
with Chutney / Sambar / Chutney Powder.

Procedure :
○ Heat oil in a pan at low flame, add jeera, groundnuts, red chilli flakes,
chopped onion,curry leaves, green chillies, turmeric powder, salt.
○ Roast onions till golden brown; Take 2 cups of flakes in a bowl pour some
water and dip flakes and add into pan.
○ Mix well; Off the flame and garnish with lemon juice and coriander and
serve.

Millet (Udalu) flakes, Brown top Millet (Andukorralu) flakes, Little Millet
(Samalu) flakes, Barley (Barley) flakes
• Honey, banana, walnuts (or cashew or almonds)
Procedure :
• Take a cup of flakes into a bowl add 1 1/4 Cup of water and soak for 5-6
minutes.
• Take a mixer jar add soaked flakes, 1/2tsp salt,1 tsp honey and blend
them into a paste.
• Now take a kadai, add the flakes-paste and heat till it thickens.
• Now transfer the cooked-thick paste in a small bowl and dress up with
banana pices and walnuts and serve.

6. Millet Flakes Poha
Ingredients:
Any one of the following Flakes are suitable for the Recipe:
• Ragi (Finger Millet) flakes, Pearl Millet (Sajjalu)flakes, Foxtail (Korralu)
flakes, Kodo (Arikalu)flakes, Proso Millet (Varigalu) flakes, Barnyard
Millet (Udalu) flakes, Brown top Millet (Andukorralu) flakes, Little Millet
(Samalu) flakes, Great Millet (Jonnalu) flakes, Wheat (Godhumalu ) flakes,
Barley (Barley) flakes
• Wheat flakes, curryleaves, green chilli, onions, jeeracabbage, capsicum,
red chilli, turmeric powder, salt
Procedure:
• Take 2 cups of flakes, rinse with water, take a kadai and switch on the
flame, add 2 spoons oil, add 1 spoon jeera.
• Add curry leaves,1 green chilli, add handful of peanuts mix it thoroughly,
¼ cup of onions.
• Add some finely chopped cabbage and capsicum, add 1TSP red chilli
powder, pinch of turmeric powder.
• Add the wheat flakes to it, add ½ spoon salt.
• Now the millet flakes Poha is ready.

• Add 1 tsp coriander powder, 1tsp cumin powder, 1tsp Amchur powder,
1tsp red chili powder, 1/4tsp turmeric powder, salt to taste ,1tsp garam
masala powder, few coriander leaves, 2tsp lemon juice, 1/4cup boiled
green Peas.
• Mix them well and take small portions of the mixture and make it into
small ball shape. Then, flatten the ball into round shape.
• Heat the pan and grease with oil place the cutlets on the pan. Keep
flipping in between. Cook turns brown and serve it to plate with sauce.
• Heat a pan and roast the flakes for a minute on low heat. Switch off.
• Once cooled, crush them slightly with hands.
• Mix salt and add a few tablespoons of water. The flakes should be moist.
So, add very little water at a time.
• Steam the flakes for 5 minutes in a cooker. Let it cool down.
• Add palm sugar or jaggery, cardamom powder, ghee and coconut.
• Mix well and serve.
Ingredients:
Any one of the following Flakes are suitable for the Recipe:
• Ragi (Finger Millet) flakes, Great Millet (Jonnalu) flakes, Wheat
(Godhumalu ) flakes, Barley (Barley) flakes
• Green chilli, ginger, carrot, capsicum, curry leaves, ghee, salt.

Procedure:
• Take a bowl add 2 cups of flakes to it soak for 10 minutes, take a mixer
grind it once.
• Keep it in a bowl and let it ferment for 8 hours, take the batter into a bowl
add some amount of salt to it.
• Add 1 chopped green chilli, ½ cup of onion, 1 grated carrot,1 chopped
capsicum, add curry leaves.
• Add small piece of ginger, greasing the toaster with 1 spoon of ghee, pour
the batter into the toaster/ pan, I am using the toaster.
• Close the toaster keep it on the stove, after 30 sec flip it over.
• Then reduce the flame and cook it for 5-8 minutes, both the sides are
cooked well.
• Now the flakes toast is ready.

10. Millet flake Donut
Ingredients:
• Ragi (Finger Millet) flakes, Pearl Millet (Sajjalu)flakes, Foxtail (Korralu)
flakes, Kodo (Arikalu)flakes, Proso Millet (Varigalu) flakes, Barnyard
Millet (Udalu) flakes, Brown top Millet (Andukorralu) flakes, Little Millet
(Samalu) flakes, Great Millet (Jonnalu) flakes, Wheat (Godhumalu ) flakes,
Barley (Barley) flakes
• Milk, sugar, yeast, curd, soft butter, salt, tutty fruty, coco chips
Procedure:
• In a cup Take 1/2cup of boiled luce warm milk and add 1tsp sugar, 2tsp
yeast. Mix it well and sit it for 5min.
• Take 2 cups of flakes and dry roast them for 2-3mins.
• Cool them and blend it into fine and smooth powder. And take it into a
bowl.
• Now add 1/2cup maida, 3tbsp sugar ,2tbsp curd, 2tbsp soft butter ,1/2tsp
salt, finely add the activated yeast mixture.
• Mix it knead. After, kneading for 5 min dough will become less sticky.
• Grease with butter to the dough and rest it for 30min.
• Now give it a punch and spread it on the table,roll it with a rolling pin
.Do not roll it too thin nor too thick .
• Now after spreading use 2 circles (1 big sized circle, 1small sized circle)
for pressing into a Donut shape or also we can use Donut press.
• Heat oil in a kadai for frying, take a Donut and fry until it gets golden
brown colour.
• In a cup Take 2tbsp cocoa powder, 4tbsp sugar powder mix the powders
with 4-5tsp milk.
• Now dip one side of Donut in the chocolate and season with your
favourite toppings (tutty fruty, coco chips).

• Green chilli, ginger, salt, sugar, ghee, sesame seeds, mustard seeds, black
sesame seeds, cumin seeds, coriander leaves.
Procedure:
• Take any 2 types of millet flakes each 1cup. Blend it into a fine and
smooth powder add 2inch green chilli, 2small pieces ginger, salt to taste,
1tsp sugar again blend it.
• Take it into a bowl mix it with 1/2cup water to a thick batter.
• Transfer the batter to a ghee greased mould.
• Take a kadai add 2cups of water preheat it and place the mould on it close
with a lid and steam it for 15-20 mins.
• In meanwhile, heat 2tsp oil in a pan and add 1tsp white sesame seeds,
1tsp mustard seeds ,1tsp black sesame seeds, 1tsp cumin seeds, few
coriander leaves ,2grated green chillies. Then add 1cup water and stir it
for few mins. Off, the flame. And cool the mixture.
• Demould the Dhokla cake in a plate and cut it into square shapes now
with a laddle pour the liquid mixture on the Dhokla and serve.

• Pour some oil in a pan heat it. Fry, the balls till brown in color in low
flame. Take, them into plate.
Gravy Preparation
• Take 1tbsp mustard oil in a pan add 1tsp cumin seeds,1tsp ginger garlic
paste Fry them.
• Add 3 grinded tomatoes paste ,1/4tsp salt stir them until it left the oil in
pan.
• Now add 1grated capsicum, 3 long slides grated onions ,1/2cup tomato
ketchup and cook it for 2 min.
• Now add 1tbsp vinegar and cook for 2mins and then add cooked millet
veg balls. Mix them well and off the flame. And serve.

13. Millet flakes kheer
Ingredients:
• Any one of the following Flakes are suitable for the Recipe:
Pearl Millet (Sajjalu)flakes, Foxtail (Korralu) flakes, Kodo
(Arikalu)flakes, Proso Millet (Varigalu) flakes, Brown top Millet
(Andukorralu) flakes
• Cashews, ghee, raisins, elachi,
Procedure:
• Take 1tbsp of ghee in a kadai and heat with low low flame and add 25g
cashews ,25g raisins roast them and take it into a bowl.
• Now add 100g of flakes ,10g ghee and stir them for 5-6min.
• Take 500 ml of milk in a bowl and pour roasted flakes ,100g sugar and
stir them for 4-5min. Add 2 elachis, roasted cashews, raisins.
• Cook for 15min and stir it. It gets thick and serve into bowl after it gets
cooled.

Procedure:
○Take 2 ½ cup of millet flakes and roast them for 1min.
○ Take 1 cup of Jaggery with 4-5tbsp of water in a pan and heat it until it melts.
Make sure Jaggery is in the proper consistency to make balls.
○ Add roasted flakes in melted jaggery. Off the flame and prepare balls.
17. Millet flakes chikki
Ingredients:
Any one of the following Flakes are suitable for the Recipe:
• Ragi (Finger Millet) flakes, Pearl Millet (Sajjalu)flakes, Foxtail (Korralu)
flakes, Kodo (Arikalu)flakes, Proso Millet (Varigalu) flakes, Barnyard Millet
(Udalu) flakes, Brown top Millet (Andukorralu) flakes, Little Millet (Samalu)
flakes, Great Millet (Jonnalu) flakes, Wheat (Godhumalu ) flakes, Barley
(Barley) flakes
• Ghee, groundnuts, jaggery
Procedure:
• Take a pan add 2-3tbsp of ghee and a cup of jowar flakes and roast them for 4-
5min ;after transfer it into a bowl . Now roast groundnuts in a pan and take it
into a mixer jar ,grind them in coarse .
• Take half cup of Jaggery with 2-3 tbsp of water in a pan and heat Jaggery
until it comes to a consistency to make chikki .Off the stove .
•Pour roasted jowar flakes into pan and mix it well.
• Pour this consistency into a mould and leave it to dry ;after cut into small-
sized Rectangular or square shapes and serve.

Procedure:
• Take a pan; add flakes and roast them till they crisp. After transfer it into
a bowl.
• Add Jaggery in sufficient quantity.
• Add 6-7tbsp hot ghee with roasted cashews and sesame seeds in the bowl
• Now mix the consistency well.
• Make ladoos and serve.

19 Vegetable Millet Flake Soup
Ingredients:
Any one of the following Flakes are suitable for the Recipe:
• Ragi (Finger Millet) flakes, Pearl Millet (Sajjalu)flakes, Foxtail (Korralu)
flakes, Kodo (Arikalu)flakes, Proso Millet (Varigalu) flakes, Brown top
Millet (Andukorralu) flakes, Little Millet (Samalu) flakes, Great Millet
(Jonnalu) flakes, Wheat (Godhumalu ) flakes
• Ghee, carrot, capsicum, beans, green chillies, corn flour, salt, pepper,
onions, coriander
Procedure:
• Heat 1tbsp ghee or oil in a pan. And add 1tsp grated ginger and 1big
finely chopped onion. stir for few mins.
• Add 1 grated carrot ,1 grated capsicum, 1/4cup of grated beans, 2-3tsp
green chillies. Stir for 2-3 mins on low flame and cover with lid.
• Pour 4-5cups of water in it and bring it to boil.
• In meanwhile; add 2tbsp cornflour in a cup add 1/4cup water and mix it
well without formation of any lumps.
• Now add cornflour juice to the soup and mix it properly on low flame.
Now add 2 tbsp of millet flakes and season with salt, pepper powder and
spring onions or coriander. Serve hot soup in a bowl.

Procedure:
• Heat 1/2tbsp butter /ghee or 1tbsp oil in a pan.Add 1/2inch grated ginger
,3 garlic pieces,1 inch cinnamon, 3 cardomom, 1bay leaf, 2 cloves,1/2tsp
black pepper stir them for few mins .
• Now add 1tsp wheat flour and stir for few mins then add 3grated large
tomatoes, few coriander leaves with stems and stir it for 3 min.
• Add 1/2tsp chilli powder, 2 green chillies. Cook till they become soft and
mushy on low flame. Off the flame cool and Grind it and filter the pury .
• Now Pour the juice in a pan add 4-5Cups of water and add salt to taste
boil it covering with a lid .
• In mean while;add 2tbsp cornflour in a cup add 1/4cup water and mix it
well without formation of any lumps.
• Now add cornflour juice to the soup and mix it properly on low flame.
Now add 2tbsp of millet flakes and season with ,pepper powder.Serve
hot soup in a bowl.
21 Lemon Coriander millet flake Soup
Ingredients:
• Ragi (Finger Millet) flakes, Pearl Millet (Sajjalu)flakes, Foxtail (Korralu)
flakes, Kodo (Arikalu)flakes, Proso Millet (Varigalu) flakes, Brown top
Millet (Andukorralu) flakes, Little Millet (Samalu) flakes, Great Millet
(Jonnalu) flakes, Wheat (Godhumalu ) flakes
• Asafoetida powder, Pepper powder, corn flour, coriander leaves, lemon
Procedure:
• Take 400ml water in a pan and boil.
• Add 1tsp Asafoetida powder, 1tsp white pepper powder, 1tsp salt stir and
boil on high flame. (Black pepper powder is optional).
• In meanwhile; add 1bsp cornflour in a cup add water for slurry and mix it
well without formation of any lumps.
• Then add cornflour juice to the soup, few corianders leaves and 4tbsp
lemon juice mix it well and bring it to soup consistency and add 2tbsp of
millet flakes boil 1-2min and off the flame. Serve hot soup in a cup.

• In a cup add 1tbsp cornflour and mix it with 1/4cup water and mix it well
without formation of any lumps.
• Pour cornflour juice in soup and mix it to soup consistency. Add 2tsp
millet flakes and stir it well. Off the flame and season with few coriander
leaves and serve hot soup in a bowl.

• Steam ¼ cup carrot ,5tbsp green Peas, 5tbsp beans ,5-6tbsp potato ,1/4
cup green capsicum. steam for 5min.(vegetables should not be over
cooked ).
• In a pan take ¼ cup of millet flakes dry roast them on low flame for
5mins and add 3-4tsp white sesame seeds. Off the flame and cool it and
grind them coarsely.
• In the same mixer jar add 1/2tsp black pepper powder, 1/4cup curd
(remove water from it and add),1inch green chilli.
• And add 1tbsp honey, salt to taste and mix it well with a spoon.
• Take steamed vegetables in a bowl, dress with prepared flake cream. Mix
it well with a spoon. Season with some millet flakes (optional). Finally,
season with coriander leaves and serve.

26 Millet flake Milkshake
Ingredients:
Any one of the following Flakes are suitable for the Recipe:
• Ragi (Finger Millet) flakes, Pearl Millet (Sajjalu)flakes, Foxtail (Korralu)
flakes, Kodo (Arikalu)flakes, Proso Millet (Varigalu) flakes, Barnyard
Millet (Udalu) flakes, Brown top Millet (Andukorralu) flakes, Little Millet
(Samalu) flakes, Great Millet (Jonnalu) flakes, Wheat (Godhumalu ) flakes,
Barley (Barley) flakes.
• Honey, milk, pomegranates, almonds.
Procedure:
• Take 4-5tbsp millet flake grind it into a fine and smooth powder.
• Take a blender add 1tbsp wheat powder, 1tbsp millet flake powder, 2tsp
honey, 1cup or 1glass milk ,3-4tbsp pomegranates blend them into smooth
milkshake.
• Pour the milkshake into a glass season with some grated almond and serve.

28 Millet Flake Coconut milkshake
Ingredients:
Any one of the following Flakes are suitable for the Recipe:
• Ragi (Finger Millet) flakes, Pearl Millet (Sajjalu)flakes, Foxtail (Korralu)
flakes, Kodo (Arikalu)flakes, Proso Millet (Varigalu) flakes, Barnyard
Millet (Udalu) flakes, Brown top Millet (Andukorralu) flakes, Little Millet
(Samalu) flakes, Great Millet (Jonnalu) flakes, Barley (Barley) flakes.
• Coconut/ coconut milk, jaggery/dates, almonds, cashew
Procedure:
• Wash a cup of millet flakes with water.
• Add the washed flakes ,1/2cup grated coconut in blender.
• Strain it and take milk into a glass.
• Add Jaggery/dates to taste and season with some millet flakes, cashew or
almond before serving serve.

30 Banana Millet flake smoothie
Ingredients:
Any one of the following Flakes are suitable for the Recipe:
• Ragi (Finger Millet) flakes, Pearl Millet (Sajjalu)flakes, Foxtail (Korralu)
flakes, Kodo (Arikalu)flakes, Proso Millet (Varigalu) flakes, Barnyard
Millet (Udalu) flakes, Brown top Millet (Andukorralu) flakes, Little Millet
(Samalu) flakes, Great Millet (Jonnalu) flakes, Barley (Barley) flakes.
• Banana, dates, cashew, flax seeds, cinnamon.
Procedure:
• Take 5tbsp millet flake and dry roast them in a pan for 4-5min. Off the
flame and cool it down.
• In a blender jar add 1cup or 1glass of water, 1 ripe banana, 2-3dates
(remove seeds), 5-6 roasted cashews, 1tbsp flax seeds ,1/4tsp cinnamon
powder.
• Take glass add 2-3tsp of roasted flakes and pour the smoothie into the glass
and serve.

32 Millet flakes Almond mix
Ingredients:
Any one of the following Flakes are suitable for the Recipe:
• Ragi (Finger Millet) flakes, Pearl Millet (Sajjalu)flakes, Foxtail (Korralu)
flakes, Kodo (Arikalu)flakes, Proso Millet (Varigalu) flakes, Barnyard
Millet (Udalu) flakes, Brown top Millet (Andukorralu) flakes, Little Millet
(Samalu) flakes, Great Millet (Jonnalu) flakes
• Banana, almonds, jaggery, choco chips, resigns, toppings (cocho
chips,tootyfruity,etc..)
Procedure:
• Take a ripe banana and smash it with a spoon in a bowl.
• Soak almond seeds in water for 15 min and blend them with some water.
Almond milk is now prepared.
• Now Pour almond milk in above bowl warm milk for 4-5min. Add a
Tablespoon of Jaggery and mix a cup of flakes.
• Dress the Recipe with some toppings (cocho chips,tootyfruity,etc..)

33 Instant Millet Flakes Chaat
Ingredients:
Any one of the following Flakes are suitable for the Recipe:
• Ragi (Finger Millet) flakes, Pearl Millet (Sajjalu)flakes, Foxtail (Korralu)
flakes, Kodo (Arikalu)flakes, Proso Millet (Varigalu) flakes, Barnyard
Millet (Udalu) flakes, Brown top Millet (Andukorralu) flakes, Little Millet
(Samalu) flakes
• Onion, tomato, green chilli, red chilli, pepper powder, chat masala, salt,
coriander leaves, boiled chick peas, boiled kidney beans, curd, cucumber,
imli chutney.
Procedure:
• Take 1 cup of onion, 1 small tomato, 1 green chilli,1 spoon red chilli
powder, curd, boiled beans and imli chutney
• Add ½ pepper powder,1 spoon chat masala, ½ TSP salt.
• Add coriander leaves, 1 cup of flakes into it, mix it very thoroughly.
• Now the chaat is ready.
• Rice flakes, peanuts, roasted, amaranth & brown rice namkeen, chaat masala ,
black sesame, potatoes (diced) boiled, onions, tomatoes, lime juice, green
chillies, green chutney, fresh coriander, moringa leaves powder
Procedure :
• Take a bowl and add mix millets, ragi flakes and puffed rice flakes.
Furthermore, add roasted peanuts along with amaranth and brown rice
namkeen. Sprinkle some chat masala and black sesame on top of it.
• Add potatoes, tomatoes, onions, lime juice and green chillies into the
mixture. Mix all the ingredients well.

• Also, add some moringa powder and green chutney to take this recipe to
the next level. Mix all the ingredients well.
• Lastly, garnish with coriander leaves and serve. Enjoy the classic Bhel Puri
with a gourmet twist.

• Take a bread piece,cut sides of bread.Divide and cut the bread into 2
halves. And apply water to the bread piece and fold into cone shape
(samosa shape).
• Now insert the prepared millet stuff into the bread and close the openings
of the bread.
• Heat oil for deep fry, and roast all the bread samosa till golden brown
colour. Serve, them into a plate.

40 Millet Flakes Sweet Mixture
Ingredients:
• Ragi (Finger Millet) flakes, Pearl Millet (Sajjalu)flakes, Foxtail (Korralu)
flakes, Kodo (Arikalu)flakes, Proso Millet (Varigalu) flakes, Barnyard
Millet (Udalu) flakes, Brown top Millet (Andukorralu) flakes, Little Millet
(Samalu) flakes, Great Millet (Jonnalu) flakes
• Ghee, onions, groundnuts, jaggery, coconut
Procedure:
• Take a kadai, heat 3 TSP of ghee, add mustard and chana Dahal, add 3
chopped green chillies.
• Add 1 chopped onions, fry it well, add 1 spoon groundnuts, add curry
leaves
• Add washed millet flakes, add ½ Tsp salt.
• Add 2 TSP jaggery powder as your wish.
• Add 1 TSP coconut powder, mix it well for 2-3 minutes.
• Now mixture is ready.
41 Millet Flakes Jantikalu
Ingredients:
Any one of the following Flakes are suitable for the Recipe:
• Ragi (Finger Millet) flakes, Pearl Millet (Sajjalu)flakes, Foxtail (Korralu)
flakes, Kodo (Arikalu)flakes, Proso Millet (Varigalu) flakes, Barnyard
Millet (Udalu) flakes, Brown top Millet (Andukorralu) flakes, Little Millet
(Samalu) flakes, Great Millet (Jonnalu) flakes, Wheat (Godhumalu ) flakes
• Salt, turmeric powder, chilli powder, cumin seeds, oil.
Procedure:
• Take 1and ½ cup of flakes and blend them into fine powder and seive the
flour.
• Add ½ cup gram flour, salt,1/4tsp turmeric powder, 1tsp chilli powder,
1tsp cumin seeds ,1Tbsp hot oil.
• Add hot water in required quantity to batter and mix it slowly without
formation of any lumps. Batter should not be neither soft nor Hard.

• Now apply oil to walls of Jantikalu (sev) press and take some batter into
press.
• In a kadai heat some oil and press the batter. After well fried of the dish,
take it into a plate and serve.
42 Millet Flake Sev
Ingredients:
All type of millet flakes
Ajwain, besan flour, salt,
Procedure:
• In a cup Take 2tsp ajwain seeds and soak in lukewarm water for 5-10min.
• In another bowl take 1cup of millet flakes and grind them into fine
powder and seive the powder. And add 1cup besan flour, soaked ajwain
seeds, salt to taste and mix well with sufficient quantity of water like a
chapati dough.
• Grease ghee to the walls of sev press and by batches insert dough in press
and press in the heated oil. Flip both the sides properly and fry until
golden brown colour and remove it and serve in to plate.
43 Millet flake Kara Boondi
Ingredients:
All type of millet flakes
Procedure :
• Take 1cup millet flakes and grind them into fine powder.
• In a bowl add 1cup millet flake powder, 3/4th cup besan powder, salt to
taste, a pinch of baking soda, pinch of asafoetida.
• Mix it well with water to a bajji batter consistency.
• Now heat oil for frying. Take a perforated laddle by batches Pour a laddle
full batter into it and tap lightly. Cook in medium flame. Once Kara
boondi turns golden brown colour. Turn off the flame and take them into
a plate.
• Now take ¼ cup roasted peanuts ,1/4 cup roasted cashews, 2tbsp roasted
curry leaves in Kara Boondi and mix it with some red chilli powder
seasoning and serve.

44 Millet Flake Aloo Bajji
Ingredients:
All type of millet flakes
Procedure:
• Take 1 cup of millet flakes and grind them into fine powder.
• In a bowl Take 1cup seived bengal gram flour, seived 1cup of millet
flake powder. And add 1tbsp cumin seeds ,1tsp ajwain seeds, salt and red
chilli powder as per taste.
• Mix the flour with sufficient quantity of water like bajji batter
consistency.
• Now take a raw potato slice it in circular shapes.
• Now take a potato slice and dip in bajji batter and fry it in oil until it
comes to golden brown colour.
• Serve it in plates with tomato sauce.

46 Millet flakes Chekkalu
Ingredients:
Any one of the following Flakes are suitable for the Recipe:
• Ragi (Finger Millet) flakes, Pearl Millet (Sajjalu)flakes, Foxtail
(Korralu) flakes, Kodo (Arikalu)flakes, Proso Millet (Varigalu) flakes,
Barnyard Millet (Udalu) flakes, Brown top Millet (Andukorralu) flakes,
Little Millet (Samalu) flakes, Great Millet (Jonnalu) flakes
• Chilli, cumin seeds, sesame seeds, curry leaf, salt
Procedure:
• Take one cup of flakes and grind them into a fine powder.
• Take flakes powder, 1cup gram flour ,1cup rice flour, dry roast the
flours until they turn aromatic for about 4 to 6 minutes on medium heat.
Switch off the heat and cool it completely.
• Mix all the powders, chili flakes, cumin seeds, sesame seeds, curry leaves
and salt together. Pour a tablespoon of sizzling hot melted butter in the
mixture and mix thoroughly.
• Now add lukewarm water little by little and mix into a soft and pliable
dough. Make little balls and roll them flat into little discs, about 2 inches
in diameter.
• You can grease a plastic sheet as the surface, or use wax paper to pat
down the Chekkalu.
• Heat oil in a deep fry pan on medium-high. When the oil starts to smoke,
add a tiny ball of dough; if it sizzles and rises to the oil surface, the oil is
hot enough.
• Reduce the heat to medium and gently peel away the from the wax paper
and put them into the oil. They will sink, and foam at first, then come up
to the surface quickly.
• Flip them over to the other side and let them turn into golden brown
colour. Drain the savouries on a paper napkin or sieve over a bowl and
serve.

47 Wheat Flakes cookies
Ingredients:
• Wheat flakes
• Almonds, Pista, cashew, cardamom, brown sugar, eggs, baking powder
Procedure:
• Take a mixer add some almonds, pista cashew and cardamom powder,
make into a powder.
• Take a butter into a mixing bowl, add 200 gm brown sugar, cream it
together until fluffy.
• Add 2 eggs and blend it for 2 minutes, add nuts powder and 1spoon
baking powder to it and blend it once.
• Add 150 gm wheat flakes powder, mix it a dough, Pre heat the oven at
180oC.
• Line the baking tray with parchment paper, take the cookie dough, use 1
TSP to scoop out the dough each time.
• Make it into a flat round shape cookie, bake it for 15 minutes.
• Now the cookies are ready to eat.

• Add ¾ spoon baking powder, sweive it well,now mix the dry and wet
ingredients well
• Add little amount of milk to get consistency, add raisins and crushed walnuts.
• Grease the cake tin and line with butter paper, add crushed cashew and
almonds to it.
• Pre heat the oven for 10 minutes at 180 deg Celsius and bake it for above 40
minutes at the same temperature,
• Now off the oven, the steam millet cake is ready.

52 Barley Flake Curd rice
Ingredients:
• Barley flakes
• Curd, salt, cumin seeds, cashew, Bengal gram dal, curry leaves, green
chilles, red chillies, groundnuts
Procedure:
• Take a cup of flakes in a bowl, add a cup of curd, salt and mix well.
• In a pan take 1tsp oil, add 1tsp mustard, 1tsp cumin seeds; few
cashews, 1tsp bengalgram dal, few curry leaves ,2green chillies, 3 dry
chillies, groundnuts. Roast them and pour, into above bowl. (if
neccessary add some milk ).
• Mix them well and serve.
• Bajra flakes
• Carrot, Beans, Peas, Cauliflower, mustard seeds, oil, urad dal,
cumin seeds, onion, green chillies, curry leaves, asafoetida.
Procedure:
• Wash Bajra flakes well and soak it for 10 to 15 minutes till it becomes
soft. Drain, the excess water by squeezing the flakes with hand and keep
it aside.
• Chop all the vegetables (carrot, beans, Peas, Cauliflower) finely and boil
the vegetables in a pan with enough salt and water till it gets cooked.
Take, care that the vegetables should not get over cooked.
• Heat the oil in a pan, add mustard seeds, urad dal, cumin seeds allow it to
splutter. Then add groundnut fry for a min & add the chopped onion,
chopped green chillies, curry leaves and asafoetida and fry till the onion
becomes soft.
• Add the chopped tomato and fry till it gets cooked. Add the cooked
vegetables and fry for 5 minutes. Add the bajra flakes and enough salt
and fry for 5 minutes.
• Remove the pan from the burner & squeeze lemon juice & mix it well.
Serve hot with any chutney.

Footnotes: Here you can add any vegetables of your choice like capsicum,
potato. To make spicier can add red chili, garam masala also.

• In a pan add 1 tbsp oil.
• Add small cube sized Carrots ½ cup, small sized Beans ½ Cup, 1 cup
Corn ,1 Bay leaf, 3-4 green chiles, 2inch cinnamon, 2-3cloves. Cook
them until they are half cooked.
• Now add 2-3cups of millet flakes and sprinkle some water to it and add
salt to taste, cook for 2-3mins. And serve hot with raita.
