Food and Beverages


The food and beverage industry includes restaurants, cafeterias, cafés,
fast-food joints, pubs, delis, food manufacturing operations, catering
businesses, food transportation services, and more. Work in this industry
can range from packaging to preparing, transporting, and serving food or
beverages. The basic needs of customers for food and beverages are met by the
foodservice industry, which has been associated with lodging ever since people
started traveling.

People who move out of their houses for various reasons, such as job, education,
business, leisure, medical treatment, sports, religion, and so on, depend completely
on the foodservice industry for their meals. The food and beverage industry in
India traces its roots to the traditional community feasts and the movement of
people on pilgrimage thousands of years ago. Most people were on the move
primarily for preaching religion and hunting.

During those days, people took shelter under trees when they were away from their
homes and depended on natural sources for their food.

The barter system of the transaction was slowly introduced and this system
motivated people to travel for trade, mainly of livestock, which later expanded to
food grains, clothing, tools, and other goods. The sectors of
foodservice continually change their style of operation to meet the changing needs
of the customers.

Food and beverage sector can broadly be classified into the following two groups

1. SECONDARY CATERING SECTORS


☆ Examples are food service outlets in the accommodation sector, various types of restaurants
and takeaways. The establishments in which the provision of food and beverages is not the main
activity but a secondary or support activity are called secondary catering sectors. The primary
activity of these units is not the provision of food and beverages to the clients but the activity for
which it is set up.

2. COMMERCIAL SECTORS
☆ Commercial sectors operate mainly to make a profit or to earn an adequate return on
investment through their products and services. Food and beverage facilities of hotels, resorts,
motels, clubs, stand-alone restaurants, popular restaurants, takeaway outlets, pubs and bars,
coffee shops, fast food outlets, transport catering, contract catering of industries, and so on, are
examples of commercial catering.

Pepsi one of the most popular carbonated soft drinks in the
world. PepsiCo Beverage Company is the proud
manufacturer of Pepsi in the food and beverage industry,
which was developed in 1893. Initially, it was introduced as
Brad’s Drink. Later, the name of one of the most famous soft
drinks – Pepsi-Cola was introduced in 1898 and in 1961, the
name was changed to Pepsi in 1961. Pepsi, other than all
other food and beverage companies in the food and beverage
industry, has been considered a rival to Coca-Cola. In 2012,
Pepsi became the third most popular carbonated drink
produced by the food and beverage companies in a food and
beverage industry in India having a 15% market share. India,
Saudi Arabia, Pakistan, Oman, Guatemala are some places
where Pepsi has been successfully outsold Coca-Cola. Pepsi
is produced by the amalgamation of carbonated water,
caramel colour, sugar as high fructose corn syrup, Phosphoric
acid, citric acid, caffeine and natural flavours. A 355 ml
Pepsi can contains 150 calories. PepsiCo, among all other
food and beverage companies is the proud producer of many
other popular soft drinks in the food and beverage industry,
among which the name of Mountain Dew and 7 Up should be
mentioned here.

For the fiscal year 2017, PepsiCo reported earnings of


US$4.857 billion, with an annual revenue of US$62.525
billion, an increase of 1.2% over the previous fiscal cycle.
PepsiCo's shares traded at over $109 per share, and its market
capitalization was valued at over US$155.9 billion in
September 2018 PepsiCo ranked No. 45 on the 2018 Fortune
500 list of the largest United States corporations by total
revenue.
PepsiCo entered India in 1989 and has grown to become one of the largest
MNC food and beverage businesses in India. PepsiCo India’s diverse portfolio
includes iconic brands like Pepsi, Lay’s, Kurkure, Tropicana 100%, Gatorade

PepsiCo India is focused on reducing its carbon footprint. In 2015, PepsiCo’s
India’s Food and Beverage manufacturing operations’ dependence on non-
renewable energy has reduced by 74% and 62% respectively from a baseline
of 2006. This reduction has been on two counts – improved operating
efficiency and technology intervention of plants and migration to renewable
sources of energy such as bio mass fuels (rice husk boilers) and wind turbines.
Initiatives such as reduction in use of chemicals, eco-friendly packaging
initiatives and efficient waste management help reduce load on the
environment. PepsiCo in partnership with the NGO Exnora and local
municipalities has also been working on a unique waste collection and
treatment model programme called ‘Waste-to-Wealth’. The award winning
programme has positively impacted more than 500,000 people. Following the
successful implementation of the Waste to Wealth model programme, PepsiCo
India has handed over four municipalities in Tamil Nadu (Chennai,
Nagapattinam, Tenkasi, Cuddalore) and one municipal corporation in
Haryana (Panipat), to the respective authority for sustained delivery.
