LOW MICROBIAL DIET

DEFINITION

The Low Microbial diet includes foods



that have a lower risk of
causing foodborne illnesses.

INDICATIONS

The Low Microbial diet is ordered because of food safety concerns for
individuals with weakened immune systems (ex: after transplant, during
cancer treatments) and at high risk for foodborne illnesses.

FOODS TO AVOID:

• Unwashed or raw fruits and vegetables (lettuce, sliced tomato/onions,


fresh fruit cups, strawberries BUT washed whole fruit like bananas, apples,
& oranges ARE allowed)
• Uncooked or undercooked meat, poultry, fish, and eggs/egg substitutes
• Unpasteurized or raw milk, juice, eggs, cheese
• Deli meat unless reheated steaming hot
• Cold-brewed tea made with warm or cold water
• Unrefrigerated, cream-filled pastry products
• Sprouts

GASTROESOPHAGEAL REFLUX DISEASE (GERD)
DIET

DEFINITION

The Gastroesophageal Reflux Disease (GERD)


diet consists of foods that reduce the symptoms
of GERD (heartburn, nausea, vomiting, abdominal
pain).

INDICATIONS

The Gastroesophageal Reflux Disease (GERD) diet is prescribed


to limit the reflux of stomach acid and fluids into the esophagus.
The excluded foods can trigger reflux, therefore removing them
aims to reduce GERD symptoms.


AVOID:
FOODS TO

High-fat foods (ex: 2% milk, fatty meats, nuts, pastries)


Caffeine (coffee, regular tea, caffeinated sodas)
Acidic and spicy foods (pepper, peppermint)
Chocolate
Citrus foods (tomatoes)

DYSPHAGIA 1: PUREED DIET
DEFINITION
The Dysphagia 1: Pureed diet consists of foods that are pureed smooth,
free of lumps, and "pudding-like." Food should be one consistency (ex:
liquid should not separate from the pureed solid foods)

INDICATIONS

The Dysphagia 1: Pureed diet is recommended by speech therapists for


patients with moderate to severe dysphagia. Be aware of the liquid
consistency prescribed with the diet.

FOODS TO AVOID:

Food with lumps, chunks, seeds, pulp


Whole nuts and seeds, nut butters, dried fruit (raisins)
Foods with mixed consistencies (ex: cereal and milk)

FOODS TO INCLUDE:
Pureed meats, fruits, vegetables, cottage cheese
Pureed noodles and rice
Mashed potatoes without lumps
Slurried bread, pancakes, French Toast
Soft-cooked hot cereals (oatmeal, cream of wheat)
Yogurts, custards, puddings
Ice cream, gelatin (if allowed thin liquids)
Pureed Soups

DYSPHAGIA 2: MINCED & MOIST DIET
DEFINITION

The Dysphagia 2: Minced & Moist diet consists of soft foods that are
minced or ground. Food can be moistened with sauces and gravies. Food
should be one consistency (ex: drain juice from canned fruit). Minced
food pieces should fit between the prongs of a fork.

INDICATIONS
The Dysphagia 2: Minced & Moist diet is recommended by speech
therapists for patients with dysphagia. It is a transitional diet from the
pureed diet to the soft/bite sized diet. Be aware of the liquid
consistency prescribed with the diet.

FOODS TO AVOID:

Sandwiches
Whole nuts and seeds, nut butters, dried fruit (raisins)
Raw fruits and vegetables including lettuce
Foods with mixed consistencies (ex: cereal and milk)

FOODS TO INCLUDE:
Ground meat, fish, poultry
Minced fruits & vegetables (corn must be pureed and no lettuce/salad)
Slurried bread, pancakes, French Toast
Pureed noodles and rice
Soft-cooked hot cereals (oatmeal, cream of wheat)
Pureed Soups
Scrambled eggs
Tuna/Chicken Salad

DYSPHAGIA 3: SOFT & BITE-SIZED DIET
DEFINITION
The Dysphagia 3: Soft & Bite-Sized diet consists of soft foods that are
diced and "bite-sized." Avoid foods that are very hard, sticky, or crunchy.
Food can be moistened with sauces, as needed. Food particles should
be no wider or longer than a standard dinner fork.

INDICATIONS

The Dysphagia 3: Soft & Bite-Sized diet is recommended by speech


therapists for patients who have mild dysphagia. Be aware of the liquid
consistency prescribed with the diet.

FOODS TO AVOID:

Sticky, chewy, or crunchy foods


Hard to chew fruits and vegetables (apples, grapes, garden salad)
Whole nuts and seeds, chunky nut butters, dried fruit (raisins)
Waffles, Dinner Roll, Toasted Bread
Hamburger with Bun and Beef stroganoff with mushrooms

FOODS TO INCLUDE:

Diced fruits and vegetables (corn must be pureed)


Diced meat and poultry (fish is OK)
Tuna/Chicken Salad Sandwich (Quartered)
Pancakes and French Toast (Quartered)
French Fries, Macaroni Noodles, Rice, Bread
Soups (Tomato Basil Bisque, Garden vegetable, Chicken Noodle)

MECHANICAL SOFT DIET
DEFINITION
The Mechanical Soft Diet consists of mechanically altered foods that are
chopped to make it easier to chew. Food can be moistened with sauces
and gravies, as needed.

INDICATIONS

The Mechanical Soft Diet is NOT a dysphagia diet. It is prescribed for


patients who need food to be mechanically altered for chewing
difficulties related to poor dentition, mouth pain, or pain with chewing.

FOODS TO AVOID:
Sticky, chewy, or crunchy foods

Toasted bread and Raisin Bran


Raw fruits and vegetables
Whole nuts and seeds, nut butters, dried fruit (raisins)

FOODS TO INCLUDE:
Chopped meats and poultry (quartered hamburger w/bun)
Canned/cooked fruits and vegetables (chopped green beans)
Bread, Dinner Roll, Rice
Pancakes and Waffles (Quartered)
French Toast (Cut in half)
French fries, macaroni noodles, chopped herbed potatoes
Garden salad
Tuna/Chicken Salad Sandwich & Beef Stroganoff
Soups (Tomato Basil Bisque, Garden vegetable, Chicken Noodle)
