To escape, you have to find an exit door - but they are rare and have to be
unlocked first.
You can either try picking the lock, though this is unlikely to work on the first
try. Your other option is trying to find one of the staff keys - they sometimes
drop them on the floor.

Of course you have to be careful - the mutated staff members go crazy at night. You
can find and craft weapons, but you shouldn't underestimate the strength of them.

In the meantime you have to find food and watch your sanity - being around staff
members for a long time isn't good for you.
