HOW TO MAKE FRIED RICE
Ingredients

 3 cups cooked white rice 

 2 sprays cooking spray  
 1 cups uncooked carrots, shredded
 1/2 cups frozen green peas, thawed 
 2 large eggs, lightly beaten 
 1 cups uncooked scallions, sliced, divided 
 1/4 cups low sodium soy sauce, or to taste

 Coat a large nonstick skillet with cooking spray; warm pan over medium-high heat. Add eggs; tilt pan so that eggs
