United Mexican States

Mexico officially the United Mexican States is a country in the southern portion of North America.
Borderland
Mexico is the 10th-most-populous country.
Campeche and northern Baja California, are also vulnerable to serious hurricanes during the
summer and fall.
The United Mexican States are a federation whose government is representative, democratic
and republican based on a presidential system according to the 1917 Constitution.

Enchiladas

Enchiladas date back to Mayan times, when people in the Valley of Mexico would eat corn tortillas wrapped around
small fish. These days both corn and flour tortillas are used and are filled with meat, cheese, seafood, beans, vegetables
or all of the above. The stuffed tortillas are then covered in a chilli sauce, making for a perfect Mexican breakfast.

ingredients to make Mexican Chicken Enchiladas:


1 unit of small onion
500 grams of Chicken (1 boiled and shredded breast)
1 pinch of salt
2 chicken bouillon cubes
8 units of serrano peppers
200 cubic centimeters of cream
150 cubic centimeters of oil
5 units of Tomatoes
24 units of corn tortillas
150 grams of grated cheese
How to make Mexican Chicken Enchiladas:

We crush the tomatoes with the blender (if we have a blender it also works). Add the
chilies, the peeled and chopped onion and the poultry stock cubes and continue
blending.

Transfer the sauce to a clay pot and let it boil and simmer for about 15-20 minutes.
Meanwhile, grate the cheese. It is important to use a type of cheese that can be
melted well.

Separately, we prepare the corn tortillas. Heat a frying pan with plenty of oil and,
once hot, add the tortillas one by one. We cook them back and forth to prevent them
from getting hard, they should be soft. We are placing them on a plate with absorbent
paper to remove excess oil.

We submerge an enchilada with the tongs so as not to get dirty and submerge it in the
red sauce, place it on a plate and fill it with the previously boiled and shredded
chicken. We roll the enchilada like a taco or fold it like a quesadilla, whichever we
like best. Repeat this process with all the tortillas.

We take an oven tray or a refractory one and place the enchiladas one next to the
other. Then, spread the cream or sour cream evenly and sprinkle the grated cheese.
Now we just have to gratin the cheese in the oven and that's it!

We can accompany the Mexican chicken enchiladas with a lettuce salad or the
garnish that we like the most.
