Cao or Cincau ( Hanzi : 仙草, pinyin : xiancao) is a gel that resembles jelly . [1] Cao is made from the
leaves of the cao plant . [1] The gel is formed because the leaves of the plant contain carbohydrates that
can bind to water molecules. [1]

The word cao comes from the Hokkian dialect sienchau ( Hanzi : 仙草, pinyin : xiancao) which is
commonly spoken by the Chinese in Southeast Asia . [1] Cao itself in its original language is actually the
name of the plant ( Mesona spp.) That is the ingredient for making this gel. [1]

Cao is most commonly used as an ingredient for making beverages such as cao ice cream or mixed ice .
[1] Cao also has a cooling and detoxifying effect . [1]
