Introduction:
Dairy processing around the world is growing rapidly to meet milk and
dairy products for an ever growing population.Dairy processing is an
industry that involves harvesting for processing milk from milk producing
animals for human consumption.The structure of the dairy processing

developing countries, most of the milk is sold on whole sale basis. Milk is
an easily digestible and highly nutritive human food that is consumed

can only be achieved by stepping up milk production and stepping up

Curd;
Dahi or curd is a semi solid product, obtained from pasteurized or boiled
milk by souring, using harmless lactic acid or other bacterial cultures.
Dahi may contain additional cane sugar. It should have the same
minimum percentage of fat and solids-not-fat as the milk from which it is
prepared.
