V. YAKULT
1. Introduction
a. Corporation history
Dr. Minoru Shirota, the originator of Yakult, successfully produced a special strain
of bacteria (known as Lactobacillus casei strain Shirota, or LcS) that was robust
enough to withstand a person's digestive acids and reach the intestines alive,
delivering digestive health advantages in the process.
Yakult Vietnam Co., Ltd. was founded on June 26, 2006, with a total investment of
approximately 400 billion VND, with Yakult Honsha (80%) and France's Danone
Group contributing 80 percent and 20 percent, respectively (20%). Yakult Vietnam
is the 30th member of Yakult Honsha and oversees manufacturing Yakult yogurt
drinks for the Vietnamese market. Since August 2007, Yakult has been available in
Vietnam. Yakult Vietnam's goods may presently be found in most Vietnamese
markets.

Yakult's essential constituents are still water, skimmed milk, glucose, sugar, and,
of course, LcS, even though the original formula has evolved throughout time. The
drink's taste is a little more difficult to pin down. While the drink is fruity and
creamy, some people describe it as "yogurt-y," while others describe it as "sweet
and sour," with undertones of peach, lemon, and even apple. For what it's worth,
the flavor is characterized as "citrus and vanilla" on Yakult's UK website.
2. Observation
The Production of Yakult
The process of making Yakult Yogurt drink is depicted graphically in the image
below. Milk process operation, syrup process, mixing process, blending process,
bottle producing process, and bottling process are all obvious steps in the
technique.

In the seed tank, the live Lactobacillus casei Shirota strain is aseptically seeded
into the sterilized and cooled starter milk solution and allowed to ferment at a
regulated temperature.
To begin the production of the fermented milk base, sterilized and cooled prepared
milk is aseptically seeded with a starter combination of live Lactobacillus casei
Shirota strain at a regulated temperature in the culture tank.
The pre-cooled fermented milk foundation from the culture tank is proportionally
combined with either sugar syrup or syrup lite at the homogenizer, then flavoring
is added to make Yakult concentrate.
20
INTERNATIONAL UNIVERSITY
Operation of the bottling process: This is the final stop for the completed product.
The bottles are filled and sealed aseptically and are ready for consumption.
Using the filling machine, the printed bottles are individually filled with Yakult
cultured milk and sealed with an aluminum foil lid.
The filled Yakult bottles are examined and then sorted into five groups before
being shrink-wrapped in transparent or bar-coded packaging. Before being sent to
the cold storage room for further chilling, the packets are shrink-wrapped into
groups of ten.
Before being put onto a refrigerated truck or reefer van for transportation, the pre-
packed Yakult bottles are examined and counted one last time.
Yakult goods are sold through its multi-channel distribution to meet client demand
once they have been packaged and quality checked.

Machinery: The factory's machines are all imported from Japan and include
contemporary technology. The line's maximum capacity is 800,000 bottles of
Yakult per day, but the firm now operates at a capacity of 300,000 bottles per day,
which is just enough to fulfill market demand.
3. Analysis
The Yakult company's system is run in a very scientific manner, with great
manufacturing efficiency and a low quantity of faulty goods. Factory workers use
contemporary machinery and automated equipment, so they don't require as many
people. The plant's complete crew, including engineers, is only approximately 50
additional people, and the number of engineers operating the line ranges between 8
and 10 engineers. The phases of the treatment go off without a hitch, and there is
essentially little downtime. The plant's whole machinery is imported from Japan
and is equipped with cutting-edge technology, allowing it to produce up to 800,000
Yakult bottles per day. However, the plant's present capacity is just 300,000 bottles
per day, which is just enough to fulfill market demand. The infrastructure was
22
INTERNATIONAL UNIVERSITY
significantly created, and the facility was sprayed with industrial paint dust to
verify that it was in compliance with food manufacturing. Yakult follows the
correct method, the system of a safe working environment, and hygiene when it
comes to professional duties. Yakult has taught me a lot of good things after giving
me a tour of the facility.
VI. Conclusion
We would like to express our gratitude to the International University Department's
professors and affiliated businesses for their aid and support in completing this
internship.
We were able to improve effective talents for our future employment as a result of
this chance, as well as give ideas for their operation in certain components, thanks
to the guides and instructors' approach. Our knowledge of the supply chain and
production processes has greatly expanded as a result of this.
The Vietnamese logistics sector is predicted to have a lot of room for growth, but
companies in this area must also push the use of digitalization to boost operational
efficiency.
One of the service industries that connects, supports, and promotes socioeconomic
growth is logistics. When the need for freight rises in the new normal, many
enterprises in this area expand their investment and development to keep up with
market expansion.
