Brief Introduction

An important part of this lesson is a market survey to be conducted by


the pupils to determine market trends and demands. Additionally, they will
get the chance to have their products rated by their parents.
When preparing food preserves, be guided by the following:

1. Select the right kind and quality of ingredients needed for the recipe.
For example, green saba is good for banana chips, while ripe saba is
good for saba in syrup.
2. Wash all ingredients properly. Cut off unwanted portions. Pare the
skin thinly to remove blemishes or bruises which may affect the flavor
of the product.
3. Prepare all ingredients in the correct amount and quantity prescribed
by the recipe. Remember to measure properly using standard
measuring cups and spoons or weighing scale.
4. Prepare equipment and tools for preparing and cooking. Wash
thoroughly to remove dirt and unpleasant odor.
5. Always maintain strict hygiene and sanitation, starting with the
surroundings, tools, equipment, and ingredients.
6. Wear your kitchen working outfit. Remove pieces of jewelry, especially
rings, watches, and bracelets. Then, wash your hands thoroughly
before starting to work.
7. Read and follow the instructions in the recipe carefully, from the exact
measurement of ingredients to the step-by-step procedure in cooking.
If possible, post a copy of the recipe in front of your working table to
remind you of what to do every step of the way.
8. Remember to sterilize your bottles and other containers before using
them. They should be free from bacteria that may spoil the food.

Selection of Good Quality Food for Preservation

The success of good food preservation starts with the proper selection
of ingredients. Ingredients should be as much as possible of the best quality
to ensure best quality products.

Preserved food like fruit jams, dried fish, ham, and other processed
meat are much in demand in the market. For this reason, it can be a viable
business for people looking for ways to augment the family income.

Checking Your Understanding

Let’s make your own home-made atsara!

Filipino relish is made normally with very fresh green papayas.


The following are the ingredients that you have to prepare:

4 cups grated fresh green papaya


¼ cup salt
1 carrot, peeled and sliced
1 red bell pepper, sliced into long strips
1 (2 inch) piece fresh ginger root, peeled and sliced
2 pieces green chili peppers, sliced into thin rings
1 ( 1.5 ounce) box raisins
1 cup white sugar
1 cup water
1 teaspoon salt
1 cup vinegar

Follow the steps below. Always remember safety first! You may ask
the help of your parents for the procedure.

STEP 1

Toss the grated papaya with 1/4 cup salt together in a large bowl;
allow to sit for 1 hour. Drain the liquid from the papaya and rinse
thoroughly. Place the papaya in the middle of a large piece of
cheesecloth and squeeze to drain as much liquid from the papaya as
possible.

STEP 2

Combine the papaya, carrot, red bell pepper, ginger, green chili
peppers, and raisins together in a clean large bowl; mix. Transfer the
mixture to clean, dry jars with lids.

STEP 3

Stir the vinegar, tap water, sugar and 1 teaspoon salt together in a
small saucepan; bring to a boil for 5 minutes. Pour the vinegar

mixture into the jars, making sure the vegetables are completely
submerged in liquid. Allow the vegetables to marinate in the liquid at
least 1 day before using. Keep inside the refrigerator between uses.

OPTION 2: Let’s make your own home-made Plantain Banana in Syrup
(Minatamis Na Saging)

A traditional Filipino dessert or snack, Minatamis na Saging directly


translates to sweetened bananas. It is really easy to prepare using plantain
bananas or locally known as Saba, a variety of plantain banana that can be
cooked, ripe or unripe. When ripe, can also be eaten raw. The following are
the ingredients that you have to prepare:
6 pieces plantain banana (Saging na Saba) - - each one cut into 3 parts
diagonally
1 cup brown sugar
1 1/2 cup water
1 teaspoon vanilla extract - (optional)
1/4 teaspoon salt - (optional)

Follow the steps below. Always remember safety first! You may ask
the help of your parents for the procedure.

STEP 1

In a saucepan, heat water until it boils. Add sugar and salt, stirring
continuously until completely dissolved.

STEP 2

Add vanilla extract. Bring to boil then lower heat to medium. Let it
simmer for 10 minutes.

STEP 3

Add the plantain bananas and cover. Continue cooking for another 10
minutes until bananas are tender and syrup has thickened. Let it cool
down to room temperature or chill before serving.
